以前,可以輕易在燒臘店吃到價廉物美的化皮乳豬飯。現在,想搵一碗好吃的乳豬飯,不太易了﹗是日中午,到駱克道的喜喜,衝著化皮乳豬而來。大門口處的櫥窗,掛滿了各式教人垂涎三尺的燒味,除乳豬外,還有叉燒、燒鴨、燒鵝、燒排骨、豉油雞和滷水墨魚等。各式燒味飯,索價由$45至$93不等,可免費轉配河粉、米粉、瀨粉和麵,改撈麵或伊麵加$5,要雙併加$2。化皮乳豬瀨粉$52,乳豬和瀨粉分開奉上。不欲太飽,故預先請店員把瀨粉份量減半,以免造成浪費。瀨粉質感爽滑富嚼勁,湯底啖啖大地魚的香氣,鮮味無窮,且送上兩條鮮嫩菜芯。化皮乳豬甫見其色,暗淡無光,黯然失色也﹗乳豬皮雖則佈滿粒粒像芝麻的爆花花紋,然,咬下去不算十分鬆化酥脆也。幸而,乳豬入口夠鮮鹹甘香,其皮下的肉薄而脂肪極少,乳豬皮略脆且不油膩,肉質尚算鬆軟而不韌。
