要食老字號滷味, 兩個月前大埔好像沒有很多選擇。 不過自從西環老字號勝記進註之後, 食過一次簡直返唔到轉頭, 而且每一日都見佢門口前面人流勁多, 思思念念成日都想晚餐加餸, 於是的起心肝,去排隊買多盒。 勝記滷味,味道不會死鹹,而且滷汁精瑩通透,有種越嚼越香的感覺, 最重要係鹵水和酸汁會另外分開上, 不會濺得整個外賣盒都是鹵水汁。 今日每樣都執咗少少: 乳鴿,豬大腸, 鴨舌, 鴨腎, 豬耳 乳鴿 滷水乳鴿色相亮麗, 而且比一般的乳鴿大隻。 師父可以將乳鴿一開六件, 每件也可以啖啖肉, 而且乳鴿味也濃郁, 滷香的厚度和層次會慢慢湧現。豬大腸 豬大腸切得均勻一致紋理細緻, 肉質一點都不粗鞋, 而且十分爽口。 這豬大腸滷得入味, 豬香滿溢, 吃罷齒頰留香 鴨舌鴨舌香滑彈牙, 一口一條, 絕對是佐酒佳品。 鴨腎 爽口入味, 而且片片切得均勻, 師傅刀功一流。 豬耳朵 鹵水豬耳大大片, 每一 條豬耳也切得大小適中, 豬耳爽脆軟淋的口感讓人忘不了,而且更 吃得出淺淺的滷水香呢。
