同朋友行完山每次出到東涌,都會感到異常肚餓,最後都要山長水遠出返市區食飯,有個朋友就話不如喺東涌食啦,仲介紹咗一間幾好食嘅潮州菜比我地,令我地諗都唔諗就舉腳贊成。 餐廳嘅環境好寬闊,每個人位置都好有空間,所以行完山嘅大家都坐得好舒服,因為大家都真係好肚餓餐牌都冇睇就叫咗個四人餐! 第一道菜係潮州餐廳一定會有嘅凍盤-鹽焗黃油烏魚,有一樣野真係要讚一讚依條魚就係上枱嘅時間條魚已經起晒骨,配上佢哋嘅醬汁可以釣起魚嘅鮮味,條魚可以睇到肉絲中間都會有黃油就證明呢條魚非常之肥美,我諗用鹽焗去處理黃油烏魚嘅原因一黎可以辟走魚嘅腥味,二來可以鎖緊嘅水份,仲可以令到魚有啱啱好既咸度。 之後就上咗個湯就係鹹菜胡椒豬肚湯,同平日潮州菜館嘅胡椒豬肚湯有少少唔同,湯底比較清甜可能因為餐廳係個湯度落咗好多瘦肉,同時鹹菜嘅比例都有做適當嘅配合,令到呢個湯今次係同出邊飲開嘅胡椒豬肚湯咁喊,相反篇甜嘅湯底同胡椒嘅辛辣味我覺得就好夾,有種係飲完一碗之後你會想即刻再飲到碗嘅感覺。 唔夠10分鐘左右就上咗一個小菜就係皇子乳鴿伴凱撒沙律,食落去乳鴿非常之鬆脆,裏面嘅肉

第一道菜係潮州餐廳一定會有嘅凍盤-鹽焗黃油烏魚,有一樣野真係要讚一讚依條魚就係上枱嘅時間條魚已經起晒骨,配上佢哋嘅醬汁可以釣起魚嘅鮮味,條魚可以睇到肉絲中間都會有黃油就證明呢條魚非常之肥美,我諗用鹽焗去處理黃油烏魚嘅原因一黎可以辟走魚嘅腥味,二來可以鎖緊嘅水份,仲可以令到魚有啱啱好既咸度。

唔夠10分鐘左右就上咗一個小菜就係皇子乳鴿伴凱撒沙律,食落去乳鴿非常之鬆脆,裏面嘅肉充滿肉汁,係一個比較重口味嘅菜式,所以餐廳都好貼心咁配合沙律,用清新嘅沙律去中和乳鴿嘅重口味。

之後主菜手打魚蛋津菜煲同埋黃金炸棗都一齊上咗台。講一講炸雙棗,總共係有兩個款式,有個共通點就係出面嘅炸皮非常之薄食落去亦都唔會油膩,食得出裏面有魚肉同埋同埋蘿蔔粒,口感都好彈牙,仲要粒粒都咁大粒,

而個手打魚蛋津菜煲就用清甜的魚湯做咗個湯底,潮州魚蛋每一粒都好彈牙同埋食得出有魚肉味,睇來呢個潮州魚蛋就真係手打完全冇花冇假,抵下面嘅津菜就索晒魚湯汁,食落去非常之鮮甜!

黎到最後作為中國人食晚飯點可以冇啲飯氣,欖菜肉醉炒飯真係你得啱啱好,成個炒飯都用好薄嘅蛋皮包住,我夠膽講出面層蛋皮絕對係成個炒飯嘅靈魂,我比較推薦食呢個飯最好打個十字分開四分,小心唔好整散個蛋皮包住成個飯嚟食,你會覺得成個口感會有意想不到嘅化學作用。

綜合來講我覺得呢間餐廳潮州菜嘅質素係唔錯嘅,如果係東涌嘅朋友不妨去試吓呢間「滿樂潮州」!
