To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 最近鮨燐update咗新Menu,見到最premium嗰款真係好吸引, $1880有前菜、七種刺身、兩種和食、六種壽司、湯及甜品相當豐富,就同朋友決定食呢個套餐。前菜日本小松菜腐皮+手造胡麻豆腐+沖繩水雲白飯魚由左至右食,第一款鹹香爽口,第二款質感獨特,第三款滑滑的,小清新。刺身石鯛薄切,而鹽板上有青檸汁,鹹鹹酸酸提起魚清甜鮮味。北海道厚岸真蠔大大隻,表面舖上醋Jelly及綠色柚子皮,帶酸香,整體質感鮮甜creamy,不會有過分濃郁的海水味。沙甸魚配上黃蘿蔔、蔥、明河、令口感更加爽口,減少魚腥,感覺refresh。鰆魚也是加了明河及面豉醋,口味酸酸甜甜,燒香了,可自行加紫蘇花,魚脂十足有點入口即化的感覺。池魚加得比較多配料,薑、蔥、明河、芝麻,質感彈滑,散發清新的鮮味。中拖羅加上Wasabi,味道更香濃,以竹炭鹽代替豉油,口味有鹹香。燒帆立貝大大粒,鮮甜,刺身級帆立貝裏面不是全熟,特別鮮味。和食壺燒笠貝相當特別,平時生食多,今次除了熟食之外還有一個貝殼可以到出裏面的湯,除了笠貝也有很多菇及京蔥,味道豐富又鮮甜。九洲蒸煮赤鮑魚+ 鮑魚肝醬質感相當彈牙,大大隻,而且加上肝醬更令味道濃郁及新
