To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 朋友喜歡吃Omakase,一早已預定了元朗這間人氣店「鮨文」,可惜我今天肚子不舒服,不敢吃太多生的,在這情況下,只好忍痛吃熟食,再偷吃一些朋友那份$1,500的廚師發辦! 店子不大,只有兩位師傅坐鎮,主廚阿信曾經到過日本學藝,學識淵博,加上友善的性格,這晚邊吃邊聽他講解食材、日食文化、學藝生涯等等,感覺有趣又獲益良多。 Beef Teriyaki Teshoku ($350) 先說肚痛人的晚餐,是照燒牛排飯。牛肉燒至半生熟,肉質鮮嫰,肥瘦適中,入口無渣,而且燒汁也美味,淋在日產米飯上吃,真的不錯。 雖然肚痛,但仍然饞嘴,以下是偷吃朋友的: 蓴菜蒸蛋 蓴菜質感有點像木耳,脆脆的;雞蛋蒸得很滑,但不會水汪汪,恰到好處,最重要是裡面有不少小粒元貝,非常鮮味。 毛蟹+毛蟹羔 因為毛蟹是上等貨,所以蟹肉都是一絲一絲的,無論蟹肉抑或蟹羔都很鮮味,點著土佐醋來吃,更有提鮮作用。 海膽杯 從來未試過吃海膽吃得這麼豪氣!杯的面頭都鋪滿了北海道馬糞海膽,鮮甜而且大塊,有after taste,伴著底下的壽司飯來吃,人間極品! 魚湯 看似很普通,甚至連魚肉也沒有見到一塊,但喝一口,馬上見真章,湯

威士忌蜜瓜

完熟的日本蜜瓜,本來已經甜美好吃,店員更會在面頭噴上一層威士忌,淡淡的酒味,又是另一個層次,特別又難忘。
