To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 禁晚市禁左咁耐,終於可以晚市堂食,即刻book台食好西🥳🥳不過呢間omakase相當難book, book左好耐先book到! 日本白素魚條活魚到口仲游緊,個感覺好得意,咬落口好脆身,類似八爪魚吸盤既口感,魚本身無突出既味道,是好得意既一個前菜。左邊:松葉蟹肉加自家醃制蕃茄 ,香甜既蟹肉味👍🏻而個蕃茄有少少驚喜,無草青味,帶少少甜既味道應該黎自自家制醬汁,令到唔食生蕃茄既我都覺得好食👍中間:炸香魚,未食都聞到香噴噴炸魚味,不過肚既位置有少少苦!右邊:紅菜頭漬物,好香麻油味但入口唔會覺得油份重,反而仲幾清爽。魚肝醬剝皮魚刺身鵝肝醬食得多,魚肝醬真係第一次食。剝皮魚刺身口感偏軟林混和魚肝醬既油份令到口感好軟滑,仲有淡淡既魚油香。土佐啫喱加小長井蠔土佐醋係日本涼拌食物常用既一種醋,師父用呢種醋黎整左個啫喱配上長崎小長井蠔,土佐醋酸味帶出蠔既鮮味,蠔身厚肉清爽,貝柱位好鮮甜。淡路島針魚刺身 呢款魚,油脂量極底,所以唔係食魚油香味,食個魚本身清淡鮮甜味,所以配上既醬汁相對簡單,醬油+蔥+薑蓉,師父叮囑點少少就夠。 我個人覺得,唔點都可以,因為本身個魚確係偏淡鮮甜,唔點醬油,更能夠食到針魚本身既鮮

火灸太刀魚
入口之後,先黎輕輕焦香,後勁既魚油香,又幾好食👍👍

火炙銀雪魚BB 配醋麵豉醬
呢個汁有少少驚喜,又醋又麵豉,食落口竟然帶甜味👍👍
平時食燒銀雪魚,燒起好重油香,有時食到尾仲會覺得膩。

關鯖魚配自家制白昆布
關鯖魚口肉質扎實富有彈性,魚味較濃,配上輕酸自制昆布,令鯖魚鮮味大大提升。
中間夾住少量大葉絲,味太重,有少少搶左魚鮮味。

中拖羅配岩鹽wasabi
拖羅都食得多,間中會食到有帶筋既,但師傅話日本人專簡有筋既部份黎食,話有筋先香🤣
呢件中拖羅食落有少少筋

燒大醬吞拿魚腩
剛食完件刺身,隨後再試1件火炙吞拿魚腩,經火燒一燒,魚油更出更香,紫菜有助減低油膩感,中間塊大葉雖然味重,但配上咁重油份既拖羅竟然意外咁夾😊👍

當造螢光魷魚醬油燒
當造果然唔同D,好飽滿既魚身,入面充滿住魷魚膏😱原來魷魚都有膏,口感軟滑,味道鮮甜,比起蝦膏蟹膏唔算濃味。
魷魚身經過火海輕燒,有輕輕焦香味。平時螢光魷魚多數係刺身醬油漬,今次做串燒,味道係屬驚喜之作👍

口岸蠔
肉厚肥美,唔會有熟蠔經常食到既金屬味👍👍貝柱位比較有咬口但又未去到咬唔爛,係愈咬愈鮮甜。🥰

北海道A級馬糞海膽,一隻海膽有5瓣肉,一件海膽壽司有6至7瓣肉,我1啖食左隻半海膽😱😱口感雪糕咁軟滑,勁鮮甜,零死角無瑕疵。

活赤貝壽司,師傅刀功令到赤貝好似好大片,明明平平無奇,經師父搓完再一下拍落刺身度,拍醒左件赤貝,立即立體左🤣🤣🤣最後加上即刨生柚皮,入口鮮甜之餘有輕淡柚子香。配合得好好👍👍

金線鯛,魚身有條閃令令既金線而得名,火炙處理過,熱度令魚油勁香。

深海大池魚,不過不失,預期中既鮮甜味美。

拖羅,已起筋,同樣入口即溶,口感極度細滑。

抹茶牛奶凍
抹茶味唔算重,奶凍入口即溶,好香牛奶味,但又唔會漿住口腔。就算飽都好有衝動食多杯🥰🥰🥰🥰👍

好滿足既晚餐😃
餐廳服務好好,全晚不停換熱茶,熱毛巾👍🏻師傅除左介紹食物外,都會好主動講下日本飲食文化。
