To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 原定2月日本的溫泉之旅因為疫情泡湯了,所以特意訂了這家元朗有名的Omakase來補償心靈失落感。首先端來的是茶碗蒸,由金箔、黑松露、瑤柱烹調而成,松露濃郁但又不會完全蓋過鮮味。接著到了刺身的部分,第一款是來自佐賀的真蠔,真蠔冰凍爽口,鮮甜甘香,層次豐富。 石垣鱲魚表面灑上少許岩鹽和橘子汁,肉質飽滿,有淡淡的甘甜味。油甘魚表面塗抹上柚子汁,開胃清新。油甘魚魚腩魚油豐富,表面經過輕微火炙,將油香逼出,油香在口內迴盪良久;加上柚子胡椒,帶少許辛辣味,非常合拍。九州的白象拔蚌冰凍鮮甜,肉質爽脆,口感一絕。師傅在中拖羅表面輕塗上醬油漬,質感油潤軟腍,完全沒有筋,入口即溶。吞拿魚鮫充滿魚油脂肪,肉質嫩滑無筋,加上火炙燒過,魚油甘香,令人一試難忘。第一次嘗試鱈魚的白子,入口滑溜綿密,配上酸汁和香蔥,想不到居然沒有半點腥味。小小的池魚被炸得香脆可口, 配清酒一流之選。接著就是壽司的部分了。伊佐目口感軟身,味道甘香,屬於偏淡和鮮甜的類別。鯖魚肉質緊實飽滿,入口清甜,口感清爽且有回甘。白蝦感覺軟綿綿的,用上超過十數隻白蝦吧。色澤晶瑩剔透,蝦肉彈牙。赤身脂肪比例較少,質感較結實,魚味濃郁,完全不會被醬油漬味
