1st star for the location/view & four season's brand name.
2nd star for the spacious interior & royalty seating.
3rd star for the food.

so what's the big secret on the food? use fancy/expensive ingredients! such as lobster, abalone, crab, instead of the lowly shrimp, pork or chicken. use baby meat instead of adult meat -- guaranteed to produce tender & juicy tastes! oh, easy on the sauce & seasoning too (no dark sauce) -- so people would think it is new style.

don't expect too much creative cooking or new invention either.

my most favorite dish is roasted goose, 'cause the skin is thin & the smoked meat is very tender (a baby bird no doubt).

most disappointed item is shanghai dumpling -- skin was dry & not enough juice inside (below hk average).

the servers were lacking in experience. one spilled the tea when pouring into my cup. another walked by without noticing our tea cups were empty. a third did not know we still have dessert coming. no one said goodbye to us when we left around 2:30 pm. i can sense minimum training, barely friendly and somewhat indifferent. imagine if they work hard to improve the staff, maybe next time they would get a 4th star (not from me, but from a tire company)?
