上一次到訪阿一是在午間時分,就是特地來吃點心和飲茶,已吃得相當稱心,當然能飽覽維港景色已是一大賣點,這次是大佬相約大家在這裏跟他吃生日飯,又看看晚間的阿一又會是甚麼景貌,做出甚麼水準吧,畢竟是米芝蓮二星店,也是令人滿有期待的。蜜 汁叉燒併越式春卷: 前菜是中菜中的表表者--叉燒,其實想起來叉燒這款廣東美食也是挺奇妙的,既可是很廉價,又可以是走貴價的路線。阿一的叉燒做得不錯,也算是夠腍身,而且 蜜汁于過甜,配越式春卷是有趣的組合。後來意猶未盡,大家也再多點了一碟叉燒。可能是剛好部位的關係,就感覺第二碟比第一碟的做得要好。鮑魚生菜崧x 波蘭鵝掌扣澳洲鮑魚 x 玉簪鮑魚卷:來阿一鮑魚,總要吃鮑魚才有感覺吧。這次的晚餐可一次吃到三款鮑魚,也真令人感動。鮑魚生菜崧是前菜,正好享受可一口吃到整隻鮑魚的滿足感, 生菜能中和鮑魚有機會帶來的膩口感。扣鮑魚是鮑魚最典型的吃法,鮑魚汁確是很強,跟上次在富臨吃到的是不相伯仲,鵝掌跟鮑魚總是完滿的組合,鮑魚也炆得軟 腍而不失咬口;玉簪鮑魚卷的做法則是把鮑魚包住一跟似是竹筍/蘆薈的蔬菜,也是湛新而甚為好吃的做法。  芝香焗珍寶老虎蝦x 豉油王老虎蝦: 這次吃到了

芝香焗珍寶老虎蝦x 豉油王老虎蝦: 這次吃到了兩款的蝦肉,兩款也是原隻上的,論賣相是後者比較討好,比較立體,氣勢很強;芝士那隻則是比較平坦的,上面鋪了一塊頗為厚身的芝士。兩者皆爽勁 很足,而且輕易便能挖出原條的龍蝦肉,真開心。其實比較喜歡豉油王的做法, 鹹香的,也真來得不錯。

火焰花甲: 與其說這是一道菜,倒不如說是一個表演,有廚師即席表演煮花甲。率先做的就是加酒再點火,再花點時間拌拌那些花甲,藍藍紅紅的火光也真好看。再加入熱湯中 煮至花甲殼打開。最後,以砂鍋加上各種調味料炒香花甲,這些都是功夫吧,光看表演已令人期待。花甲的殼是比平常的要厚身一點,肉質實在是太精彩,有淡淡的 酒香,縱然我沒有特別喜歡在餸菜中加入酒,但這個肉質也真是難逢的。

招牌焗釀蟹蓋: 這個蟹蓋做得相當出色,釀滿一藏絲絲軟柔的蟹肉,輕輕便看見根根蟹肉絲,經焗過後更顯得香噴噴的,沒有雪的味道是預料之內的事情,而蟹肉的味道確是鮮,加 上調味得宜,確是好吃的出品。說起蟹肉,也實在令人懷念Chesa的頂級出品--蟹肉餅,做得出色的還有Ruth & Chris的,是各顯風采的。

蓮蓉西米焗布甸: 這絕對是我的心水推薦,向來蓮蓉西米焗布甸已是我很愛的甜點,這個做得相當出色,熱辣辣的,在中間部分的蓮蓉黏性頗強,配粒粒焗得腍身的西米,確是好吃。 在如此大魚大肉後,還能鯨吞整碗的布甸,便足以看到其魅力了。食友還說這是全港做得最好的蓮蓉西米布甸,其實我也相信的。

總的而言, 這晚吃的菜式不少,說得上是十分豐富,在醉人的美景下用餐,也真是動人,我們所點的是一個一人鮑魚的套餐,再加上其他零點的,吃得相當飽足,明明是大佬的 生日,但最後每人也只要我們付$500,相信定必不止這個價錢吧,實在太客氣了,吃得愉快,也有幸認識了一位鮑魚達人,在此也再次祝老大生日快樂。
