To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. 放工後,到一間將古今中國現代藝術融為一體特色的北京菜館。打開菜單經已有過百種菜式,令人花多眼亂。姐第一次吃北京菜,沒有想像中的油膩,更是恰到好處。枱下面更有活的魚兒游來游去,很生動的一幅中國畫!葫蘆香鴿,鴿肉很嫩滑外層亦香肥,陣陣香料的味道樸鼻。胡同素鵝就是炸腐皮,望落去就像一條又一條的金磚,咬下去脆卜卜,味道帶甜。當晚更見識到師傅即席拉麵及刀功,其中一道菜色午門面青更是盡顯功架,將淮山以刀功片出像紙般薄再油泡後,口感變得不一樣。令蝴蝶結姐姐對中菜的煮法又多了一重認識。難怪古時有水準的廚師都匯聚於京城。京燒排骨架口感極好,醋汁的酸甜味恰到好處。而肉質非常腍,咬下去很鬆軟。大娘燒肉餅,配合肉碎吃剛剛好。肉碎的汁亦不算辣。姐覺得老家心靈美這道菜色的名字,據說心靈美這種蘿蔔就像人的心一樣是紅色的。香港不多地方可以找到這種蔬菜。賣相精緻,集合視覺、味覺的一道菜色。由蘿蔔絲、青瓜絲、芽菜、秘製醬料,攪拌麵條一齊吃,口感豐富,入口清爽,姐覺得夏天吃幾適合的。對這一頓晚餐是有驚喜的,口感並沒有想像中油膩,而且無論環境、食品也帶著中國藝術特色,氣氛瞬間生息不少啊。
