新年快到,又係出Bonus的時候,當然要帶家人食餐好,預祝豐收的一年。<柞木炭家>環境舒適,坐在空間十足的卡位,看著窗外的空中花園,格調優雅。點了極上新年套餐($892),準備品嚐韓牛盛宴。九節板是韓式宮廷前菜,有牛肉、蛋絲、菠菜、紅蘿蔔絲、香菇絲等,是韓國人認為吉祥的五色食材,把材料拌勻蛋黃醬,放在脆卜卜的紫菜揚物上,入口油香四溢,加上清爽的蔬菜絲點綴,清新而惹味。醬油八爪魚先剪碎再慢慢品嚐,咀嚼當中,散發鮮甜醬油味,口感比一般的八爪魚較柔軟。韓牛全盒食過前菜後,終於到誘人的極尚韓牛,餐廳沿用韓產柞木炭燒韓牛,耐燒而且火力猛。食材十分高質,選用來自全羅南道的韓牛,以自由放牧方式飼養,而且大部份只限內銷,所以特別矝貴。韓牛全盒有震撼視覺效果,底部有乾冰座住,以保持肉質新鮮,而盒內有:牛梅花肉、牛胸腹肉、牛肩肉、牛小排、肉眼上蓋及牛舌等各2切。每塊牛肉色澤豔紅,雲石紋均勻滿佈,厚切的肉身,十分吸引。油花細膩,牛梅花肉最為肥美,肥油令爐火更旺盛,入口油脂豐腴,牛味濃郁。牛舌表面已𠝹成網紋,燒至肉身微微彎曲,柔軟而又帶嚼勁的口感,滋味過人。牛小排輕輕烤至兩邊金黃,咬下時質感嫩

食過套餐後,我們額外追加韓牛。牛肋骨以韓國豐水梨醃製過,所以色澤呈微褐色,除了肉汁帶果香之餘,還可以降熱氣。牛肋骨份量大,燒好後剪至一口size,邊沿焦香,肉質綿彈、多汁,香甜美味的感覺像蜜汁叉燒般吸引。比起燒汁,豐水梨的天然果香的確更勝一籌!

月見牛肉來自貴妃韓牛,特別在於牠是從未懷孕的母牛,所以肉質特別細嫩。牛肉燒至5-7成熟,沾上蛋黃、蛋白泡沫及烤肉汁混合的甜醬,牛肉表面掛滿泡沫,質感像梳乎厘,香甜的味道令牛香加倍提昇。西冷輕嚼幾口便溶化,油香美味。
