To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 上環蘇杭街閒日人煙稀少,平平無奇,但呢間『鮨燐』就如漆黑中的瑩火蟲,不少食客還專程到訪,薄有名氣。《廚師發辦》有三選項:$1180 / $1380 / $1580,詳情自衞參閱餐牌。大吟釀無花果,芝麻醬 - 經大吟釀煮製既無花果非常香甜,麻醬唔會太膩,味道幾夾。汁煮白梅貝 - 白梅貝其實同一般既翡翠螺有啲相似,以日式醬煮,非常入味,腍得黎亦都留有少少口感。深海池魚 (左上)、赤貝 (右上)、右口魚 (左下)、石垣貝 (右下):深海池魚以爽滑鮮甜見稱,唔少高級壽司店都會推介;赤貝同石垣貝都同樣超級爽口彈牙,赤貝本身味淡,所以加左青檸及黃柚子汁,酸酸甜甜又爽滑,而石垣貝本身就帶有貝殼類既味道,有少少北寄貝Feel牡丹蝦 (左上)、扇貝 (右上)、池魚 (左下)、小肌 (右下):牡丹蝦爽滑鮮甜;扇貝新鮮,肉質呈一絲絲質感,非常細緻,味道鮮甜;池魚嘅魚味相對濃郁到位。鰹魚 (左上)、中拖羅 (右上)、三文魚籽 (左下)、馬糞海膽 (右下):鰹魚邊位既一層魚皮經燒香,散發陣陣魚油香,加上濃郁既魚味,幾有特色;中拖羅有濃郁吞拿魚味,大量魚油十分突出;三文魚籽同坊間既不同,師傅自己醃製過,粒粒三文魚
