Introduction
“WA-KA-RAN (和華蘭)” : three characters that tell the story of the coming together of cultures. How these characters came to be started between the 17th to 19th century, when Nagasaki became Japan’s early cosmopolitan gateway to the world. Inspired by this melting pot of cultures, we see that everybody brings their own unique cross-cultural perspective to the table. After all, colloquially, the word “wakaran,” is simply an abbreviated form of “wakaranai” (I don’t understand) – so who are we to tell anybody what they should really know about food? Ingredients and techniques don’t need to be boxed in; everything is open to experimentation and play. In the end, everything is delicious, and enjoyment is our number one priority.

感謝各方好友生日月帶我去覓食,早有耳聞主打現代亞洲菜的船街爆紅餐廳 WAKARAN,融合和·華·蘭,意即日、中、西式飲食文化,意外地獲得近日最令人失望的用餐體驗 😐𓍯 4 Courses Brunch Menu|$298 p.p. (Available on Weekends & Public Holidays)菜單看似豐富,整體味道中規中矩,搭配及烹調手法缺乏驚喜。打頭陣的是最多人推的 Bread n Butter Milk Foam,金黃刈包新鮮炸起,蘸上打成細滑泡沫狀的煉奶,好吃但是跟想像中一樣的味道 前菜 Beef Tenderloin Tartare (+$38) 配黑椒米紙進食,芝士鹹香味道不俗Maki Taco 紫菜天婦羅變得濕軟一點也不脆,同款的話 Fukuro 大勝。部分食材明顯不夠新鮮,尤其是海鮮類,Daily Fresh Oysters (+$38 p.p.) 鋪上青蘋果沙冰,隨意堆成一碟擺盤極敷衍 🦪蠔本身尺寸中等,口感不夠飽滿爽脆,沙冰酸甜清新 🍏 可惜無法掩蓋後面的腥氣,朋友更不小心吃到一枚壞掉了的生蠔,大家都知道不新鮮的生蠔腥臭難耐,且容易導致腸胃不適,當下已經馬上吐出並向店員反映「The oyster has gone bad」,當下已特別聲明了我們吃了幾隻,不打算換一盤,也不是要賠償,提醒只是怕有其他食客中招,但店員態度冷漠消極,令人摸不著頭腦。呢段太嬲一定要用廣東話先夠到位 😀店員一句唔好意思都無,話聲稱問吓經理就轉身走,一個推一個但無人返過嚟處理,聽到啲店員喺隔籬討論「到底咩係 Gone bad?」「係咪即係隻蠔壞咗啊?」,DLLM 咁你一開始落單喺度扮唔識聽中文?!😅 後面嚟咗個疑似經理,聽到我哋話隻蠔壞咗,問:「其實即係咩意思?個蠔有咩問題?」,喂大佬瞓醒未?前面解釋咗幾次啦,我都轉返 Channel 直接話「隻蠔臭咗啊」,依·然·無·道·歉,勁 Odd 咁直接將隻碟收走咗 🤯 刷新我對餐廳認知嘅下限,生蠔臭咗隨時食壞人,少少歉意好撚基本吓嘛?唔係話對客要點樣恭敬,講緊做人基本禮貌咋 😖食晒主菜之後都無人 Follow up 過,我忍唔住搵返工作人員「Errrr 你哋所有同事 Sorry 都無句,收咗碟就當無事發生?」,對方「你講邊個?頭先收碟嗰個唔係我喎」,Ok 你贏我呆撚咗,當時表情係完全管理唔到嘅 😧🥵😫😭🫠 最最最後嚟咗個合理少少嘅人,但少不免要撐吓飯蓋嘅,論點有 3️⃣1. 生蠔由廚房即開,從來無出現過咁嘅情況(而家出現咗喎…咁點啊…… 😩)2. Busy hour 廚師成個晏晝都係將生蠔放喺室溫存放,可能夏天天氣太熱,導致隻蠔臭咗(🚨🚨🚨香港夏天有幾熱唔使我講,廚房常識呢 😖😖)3. Waive 咗生蠔嘅 Additional $38(講咗唔使但最後都係無收,不過彌補唔到我哋嘅精神損失 😭😭)雖然呢餐飯受氣已經受飽啦,但專業 Food blogger 係賞罰分明的 🙂↕️👇🏽主菜 Misoyaki Black Cod 聰明之處是以陳村粉吸收醬汁,鱈魚肉質細嫩,醬汁參考了雞油花雕蒸蟹,鹹中帶酒香美其名「和華蘭」,餐牌為什麼會出現Gimbap 🫨 顯然三種菜系還不夠廚師發揮,餡料也是最典型的煮牛肉毫無心思,無聊得來九唔搭八 🥱 Pistachio Affogato 濃濃開心果味,與 Baileys 及港式奶茶 Gelato 同吃很不錯是日甜品 Blue Cheesecake 芝士軟滑,臭味不算濃但未必人人能接受 🧀從食物品質到服務態度都未達預期,很明顯不會再訪,也不會推薦給任何人,每位 $298 的價格雖然不過分(但人好過分),如果想嘗試精緻早午餐,同等價格絕對有更好的選擇。

最近冒起既Fusion餐廳,睇介紹話係Pica Pica同Barbar集團,所以抱有一定期望🤭其實前菜同埋乳鴿都唔錯,但係呢個Menu既份量實在太少,我地兩個女仔食完好似無食過野咁,之後走左去食第二間餐廳再食過😅▪️Hong Kong Restaurant Week Spring 2025 Dinner (7/10)💲398 Per Person1️⃣ Starter (All for Sharing)▫️ Spicy Diced Salmon Maki Taco▫️ Beef Tartlet▫️ 🌟Amaebi Seaweed Tartlet▫️ 🌟Golden Prawn▫️ Truffle Sesame Doughnut薄脆既炸紫菜米紙,包裹住肥美既三文魚、牛油果、米飯,就好似平時既手卷咁,如果是拉差蛋黃醬再重手啲,相信會更惹味,另外仲想點下豉油同埋Wasabi添🫢一口Size既牛肉同甜蝦他他,鍾意後者既柚子香😍熱辣辣既蝦球口感彈牙,鋪滿沙沙地既鹹蛋黃醬🤤外皮係芝麻煎堆,加入松露同埋忌廉芝士,全部野都太過濃味,撞埋一齊有啲互搶2️⃣ Main Dish (Choose One)▫️ 🌟Ode to Pigeon▫️Twice M7 Wagyu +💲58煙燻乳鴿有啲瘦弱,睇相份量比起恆常Menu縮左一半🥺不過塊皮的確微脆,肉質好嫩身軟腍,配上炸雲吞嗰隻甜酸醬😛見人地啲和牛粉嫩既,我地呢日係全啡,食落好似比較硬身同鞋口既叉燒咁,配上個普通既糯米飯🫢侍應主動問我地個和牛如何,反映後佢話當晚好多台都有同感,應該係失準過左火位🫠佢Offer比多道主菜或者酒,但我地已經食完就婉拒左,最後免左$58,希望之後會有所改進🥺3️⃣ Dessert (Choose One)▫️ Moutai Tiramisu ▫️ 🌟Banana Yogurt "Slider" 前者入口略為流質,中間有少少乾脆身嘅手指餅,茅台味突出,咖啡同朱古力味就相對弱🍫後者外皮有啲似菠蘿包,裡面係有焦糖香蕉同乳酪,不過唔覺有威士忌味🍌▪️Apple Pie Spiced Mars Iwai Whiskey / 18 Herb & Spices / Japanese Apple(6.5/10)💲128一開始覺得幾香肉桂味,算係易入口,幾適合女仔飲,但係後尾冰溶左就好淡,只係得返陣酸氣🍎▪️Komasa Hojicha Japanese Craft Gin (6/10)💲128開頭有啲消毒藥水味,後尾先有少少茶香餘韻🤏🏻🔎 整體評分(7/10)
