有睇開我出po,就知我好鍾意食叻沙,叻沙係國民美食,就好似香港既雲吞麵咁。香港嘅叻沙我都食得七七八八,今次介紹嘅係一間隱世小店,其實就係喺小娘惹同一條街。迷湯肉骨茶專門店係一間係2013年開店既新加坡菜餐廳,已經開業九年,一開始係由一對夫婦經營,呢個店主係六年前頂讓,夫婦將秘方傳授,店主再改良。店鋪瑟縮係隱蔽的巷仔,店舖得店主自己製作,所以店舖淨係主攻肉骨茶、喇沙同怡保雞,每個套餐每日賣90份。喺馬來西亞嘅店舖,只會獨孤一味賣喇沙或者肉骨茶。但喺香港可能貴租嘅原因,買喇沙嘅舖頭通常都會賣埋肉骨茶。而呢度肉骨茶用上高級食材、配以二十幾種高級藥材同香料精心餚製,材料講究,絕對不含味精。每碗經幾個鐘文火製作,有養顏、補氣補血、提高血液循環既作用。肉骨茶有分星加波既海南派,馬來西亞既福建派同廣東派,店主話佢唔屬於任何一派,只係採集各派精華,去蕪存菁,經多番改進而成今日呢款口味。店舖夠哂隱世,因為佢唔係大街,而係喺巷同巷之間。餐廳星期六日都休息,平時淨係做午市,只係得星期四會做埋晚市,始終一個人運作,規模比較細,由準備食材、買食材、製作、門面、清潔都係得一個人做。其實店舖喺疫情之後有成年冇開店,係前排好耐先開返,題外話佢係最早一批響應612罷工嘅黃店。店舖比較細,最多只可以容納8人,環境上有啲侷促,晏晝時間差唔多係坐滿。餐牌好簡單,第一頁就係兩款嘅肉骨茶套餐,第二頁就係兩款嘅叻沙。-1️⃣ 叻沙 💰70(👅: 8/10)叻沙湯頭呈啡黃色,上面會見到有喇沙葉,同埋見到有唔小紅油,顏色上好靚,睇落好濃,聞落去幾香,飲落去味道係偏淡,椰奶味道偏淡,偏輕盈,蝦香味會出啲,入口算順喉不膩,質地唔係稠身個種。辣味悠長不嗆,辣度唔算好辣,唔食得辣嘅人都應該食到,因為有用椰漿去調教辣度,用椰香味同埋辣度去做一個平衡。整體係帶少小椰奶味既蝦湯底,唔算太鹹。麵條方面係摻摻,有油麵米粉,油麵咬落幾滑,米粉咬落幾爽,兩者都掛汁唔見腍。配料好豐富,有螄蚶、虎蝦、豆卜、鷄蛋、芽菜同魚片。有兩隻大大隻連頭大蝦,大蝦因為去咗殼,方便食,咬落去厚肉結實,食落去豐富蝦味,仲可以啜到蝦頭香濃嘅蝦膏。配料算正宗,因為有螄蚶,獅蚶係全熟,而唔係半山熟、紅噹噹嗰種,咬落去爽口,食落去算鮮甜無腥味。至於魚片咬落去算爽口彈牙,豆卜食落去入味有豆香,而雞蛋蛋白入口嫩滑,蛋黃食落夠粉香。-2️⃣ 招牌肉骨茶套餐 💰70(👅: 8/10)套餐分別有排骨、肉骨茶、飯、黑醬油同油條。因為嗰日冇大骨所以就叫左正常既排骨。肉骨茶茶香色濃,聞到陣陣嘅藥材味,飲落藥材味濃,入口偏苦,有啲太濃,不過肉骨茶香充斥係口腔入面,因為依度冇落味精同鹽,只有多種藥材烹調而成,所以飲完都唔會覺得唔渴。排骨夠新鮮,咬落肉質鬆軟腍身,入口即化,岩岩好離骨,帶小小肥肉,令到口感更加豐富,又唔會覺得油膩。油炸鬼比較腍身,如果更脆會更好,黑醬油比較普通少少,飯就冇咩特別。-🌟食物方面,我覺得喇沙會比起肉骨茶略勝一籌,不過以同區來比較,我最鍾意當然係已經結業嘅小娘惹,另外蝦麵店同埋馬來亞春色綠野景緻艷雅我覺得個湯都會比呢間濃,如果鍾意食冇咁濃味既,咁啲間都係唔錯嘅選擇。見到店主堅持一人主理,唔諗住開分店,每日親自揀新鮮豬肉,而價錢又非常平民,係值得支持嘅小店。星馬菜排行榜 (順序)Bibi Baba🥇Rempah Noodles🥈小娘惹 (已結業) 🥉星洲總廚馬來亞春色綠野景緻耀眼蝦麵店迷湯肉骨茶專門店蘇山雞飯蘇媽.蘇媽馬來西亞茶餐室叻沙排行榜 (順序)小娘惹 (已結業)🥇Bibi Baba🥈蝦麵店 🥉馬來亞春色綠野景緻耀眼Rempah Noodles迷湯肉骨茶專門店星洲總廚蘇山雞飯蘇媽.蘇媽馬來西亞茶餐室拿督星馬大飯店-👅味道: 8/10🍴環境: 7/10💰消費: $70 (服務費: NA) continue reading

今日lunch time同同事去食肉骨茶。舖頭面積雖然不大,引流超多。一看就知超受歡迎!我們三位同事都分別order肉骨茶。配料也很多。湯帶甜、藥材味,但恰到好處。如果喜歡食辣可以加少許辣椒片。推薦這個食法未到更有層次。 continue reading

這家在鰂魚涌的肉骨茶專門店很特別, 除了只在午市開門, 在兩年前疫情開始時, 它就暫停營業, 還以為只是停業個多星期, 怎知一停就停了年多, 還以為它結業了. 見到其再次營業相當高興, 還是老闆one man band處理選材, 烹調及待應的工作, 菜式還是獨沽三味, 就是肉骨茶, 喇沙和怡保雞.肉骨茶是馬拉風味, 深色而充滿藥材香味, 相比星加坡的胡椒風味更合我心. 湯頭甘而不苦, 沒有其他雜味, 如蒜頭及鼓油味, 喝起來身體暖暖的, 當然不會是”習爺爺的溫暖一下子傳遞到全身”吧! 這自然得多就是.這裡的原塊軟骨夠大塊, 和湯分開上碟的做法可以吃到肉的原香, 以及浸過湯汁的味道, 雖然如此大塊, 但肉質依然夠稔, 沒有一卻分是韌而柴口. 黑豉油加配辣椒辣勁比一般的強, 除了用來點肉塊外, 用來拌飯也相當不錯.The Soupaholic is famous for her Malay style Bak Kut Teh. The Bak Kut Teh is the Chinese herbal soup with pork ribs. Singapore style is with pepper and garlic while Malay style is mainly with Chinese herbal and soy sauce. The soup here is aromatic and not bitter at all while the ribs are soft in texture. During the pandemic it has temporary closed for more than years and it has just re-opened recently.
