天氣凍,最想食熱辣辣的食物,之前見過介紹是正宗四川師傅製作 ,決定一試!鐘水餃,餃有別於平常食到的!配上四川地道source 甜甜辣辣的很特別因為友人已經食過水煮魚,今次點了酸菜魚,湯夠熱,魚片夠滑,湯香濃加上酸菜,味道很夾很好!👍香蘇肉,炸得很好. 肉很嫩滑!炒土豆絲⋯⋯有點失望,一點也不辣!再點了麻辣口水鷄,估計鷄及麻辣汁是上碟才合併,因為頭幾件一點麻辣也沒有,去到底的鷄件才有點點麻辣!

再點了麻辣口水鷄,估計鷄及麻辣汁是上碟才合併,因為頭幾件一點麻辣也沒有,去到底的鷄件才有點點麻辣!

So Sichuan Cuisine was started by a man from Chengdu who wanted to make his favourite food for other people.  I am pleased that he did.  I remember eating non-stop in Chengdu when I visited a few years ago.  The noodles there really blew my mind and when my bowl of dan dan arrived at my table here, I was very happy.

They use flat noodles here, which is more in line with tradition.  There is no peanut sauce, just a strong kick of ma la flavour and a thick sticky texture.  The hua jiao is used very liberally here, which was not to my wife's taste, but I loved it.  The craft that went into the dish was plain to see.  Excellent bowlful.

We also had some dumplings which were decent, but eclipsed by the noodles.

If you want to try real dan dan mian, then this is the place to come.  I will return for more.

These bean noodles (Liangfen) were slightly off-white in colour, translucent and thick made with mung bean starch which have a jelly like texture.
They were in quite a lot of spicy hot chili hot oil which had vinegar in it to make it more appetizing.
Unfortunately, I found them too spicy but they were as good as the ones I had at the Mandarin Oriental.

The noodles were flat and white which are better than those soft round ones.

I was told to mix the noodles and sauce quickly.
The dan dan sauce was different because there were no peanuts in the sauce but there were some black bits which were quite salty and gave it a nice flavour but again too spicy.

The noodles had an interesting bean taste which reminded me of Wei Lih jah jan mien instant noodles that have a sachet of chili and black bean paste found in UK's Oriental supermarkets in UK.

之前聽到友人介紹,說廣華街蜀香出品不錯,加上自己在大陸工作,亦習慣了吃辣,所以馬上和家人到了此店試試。那天三點半左右才去到蜀香,是午市套餐時間,每客約五十元左右。除我們外就是兩檯客人。餐牌上的口水雞和酸辣粉都是我的至愛,馬上便點了這個搭配試試看。友人介紹,青瓜豆漿解辣一流,跟套餐加二十元,有點貴。但既然未曾試過,便點一杯試試吧!菜上來了,口水雞看上去味道不錯,嚐了一下,果然對辦,雞肉也很嫩滑。好吃!酸辣粉味道可以,我就是嫌它不像我平常在大陸吃的那麼有嚼勁。吃了兩口,辣度十足。試試友人介紹的青瓜豆漿,一喝下去,口腔的辣感麻痹感頓時消失了,好神奇! 最適合我這種又喜歡吃辣又怕辣的矛盾人士。伴着青瓜味的豆漿,味道挺好。家人點了擔擔麵,這裡的擔擔麵是拌的,試了一下,麵質煙韌,很不錯,伴匀麵條底下的辣醬來吃,青瓜豆漿馬上報銷了。老闆是四川人。看了看餐牌,還有甜水麵,冷鍋等地道四川菜,下次一定要試一下蜀香的小菜。去了兩次,老闆都在盯看電視看我是歌手,是名忠粉呢!

酸辣粉味道可以,我就是嫌它不像我平常在大陸吃的那麼有嚼勁。吃了兩口,辣度十足。試試友人介紹的青瓜豆漿,一喝下去,口腔的辣感麻痹感頓時消失了,好神奇! 最適合我這種又喜歡吃辣又怕辣的矛盾人士。伴着青瓜味的豆漿,味道挺好。

家人點了擔擔麵,這裡的擔擔麵是拌的,試了一下,麵質煙韌,很不錯,伴匀麵條底下的辣醬來吃,青瓜豆漿馬上報銷了。

老闆是四川人。看了看餐牌,還有甜水麵,冷鍋等地道四川菜,下次一定要試一下蜀香的小菜。去了兩次,老闆都在盯看電視看我是歌手,是名忠粉呢!

話說青蛙許久沒有吃川菜喇~

心癢難耐, 趁復活節長假期,

但友人說待會吃辣就會發覺剛好!

不久店員就奉上熱茶及餐牌。

因為受某位嚐辣友人的影響,

這裡的夫妻肺片, 青蛙覺得一般,

青蛙吃了第一口雞, 第一時間在想,

是否味蕾被夫妻肺片的辣影響了呢?

怎麼會沒有味道?!

於是喝一口茶再試試看,

並向友人確認, 的確沒有味道..... = =''

神奇在於它的賣相跟色澤,

明明就告訴你它是辣、是咸的,

為何可以完全沒有味道的呢?

幸好雞肉夠嫩滑,

青蛙跟友人最終都把雞,

沾上其他食物的辣汁來吃。

3. 蜀香特色冷鍋 (小) - $128
貴為招牌菜色, 當然要試試啦~ 

青蛙跟友人吃辣的資歷尚淺, 所以均是第一次吃冷鍋。

餐牌上列出冷鍋的特點是: 麻、辣、香、純、鮮。

青蛙的味蕾倒吃不出以上五款的精髓,

不過 ''辣'' 跟 ''香'' 的確無容置疑。

起初, 青蛙以為冷鍋就是涼物,

誰不知食材入口帶暖,

在咀嚼期間, 口腔會散發獨有的香味,

辣味則是後來居上。

小小的鍋內, 食材挺豐富,

有雞、豬腸、金菇、蓮藕、木耳、鴨腎等,

最重要是全部都非常入味,

令人想一吃再吃,

是青蛙極度推介之物!!

4. 一品鱔魚麵 $58
又是另一款青蛙推介之食物。

鱔魚麵一上桌,

青蛙第一時間就想會否吃不完呢?

因為它的份量挺多,

亦想不到不會將價就貨,

而只提供少量鱔魚。

青蛙先嚐一口湯,

湯頭非常的香,

但與''蜀香特色冷鍋''的香是不同,

這個香是較為濃烈,

而且會越吃越辣,

實在過隱 ^^

不過這個麵上桌後最好盡快吃,

因為麵質易腍,

與濃湯閒置太久會變稠。

吃川菜, 青蛙常點加多寶 (即:王老吉),

但此食店不提供,

唯有叫罐可樂降降溫吧!!

青蛙跟友人開懷大吃兩小時,

非常滿足地離場呀!!!

下次一定要帶豬大人來試喔!! ^^
Other Info. : 值得一提的是, 《蜀香》的食物辣度頗勁, 但同時沒有提供大、中、小辣給食客選擇, 如自問不是能吃辣之人, 下單時最好跟店員提出微辣好了。

店員建議將麪與秘製醬汁(在麪之底下)撈起來,這會好吃得多。這時我將麪團翻起,發現醬汁呈紅色,有點似辣椒油,亦有極多像肉碎及碎配菜等之材料,這便是秘製醬汁了;但我怕此醬太辣,故暫不將之撈混,只用筷子夾了一點醬汁配料品嚐,結論是都屬頗辣,味帶少鹹,但不算過辣,故可以「撈得過」。

至於口水雞又如何?賣相實屬一流,雞汁亦似辣椒油,而且還發現一隻紅辣椒!用匙淺嚐一口,麻辣味足,卻不過火位。口水雞是凍食,雞上有少許配菜如花生及葱粒,這亦配合得很好。雞肉味佳、骨少,雞皮薄油,應屬優質之白切雞,這果夠正宗!

麪吃到最後汁會較濃,故味漸覺鹹了一點;麻辣味當然亦會愈吃愈強,吃至全身發汗,但這種正宗川辣味道我卻給予極高評價。

結帳時我稱讚菜式做得很好,店員都十分歡喜。

過去幾年一直在大陸居住,自從懷孕以後我就搬返香港,畢竟有屋企人照顧,不過就極之懷念在大陸的川菜。幾個月前去過四姐,但有點失望,覺得為了迎合香港人的口味,味道已經不太正宗。一個多月前,有次坐地鐵,我無意中看到坐我隔離的乘客手中的一本飲食雜誌介紹這家川菜館,離我屋企好近,所以就馬上過來試試。第一次來我叫擔擔麵+口水雞的午市套餐。擔擔麵上有碎肉和四川的芽菜,我很驚訝居然能在香港食到四川芽菜這個東西。侍應提醒要趁熱將麵同底下的汁撈好。跟廣東/台灣的擔擔麵不一樣,四川正宗的擔擔麵的汁不多 (請不要擅自加上湯或口水雞的醬), 比較乾身。這個擔擔麵的花椒味很重,夠辣夠麻 (不能吃辣的可以叫小辣或走辣,我第三次來叫了小辣,但還是覺得原味的好食)。我最心欣賞就是那個麵,比較硬身 al dente,口感一流。  口水雞也做得很不錯,好香,一d都不鹹,而且分量很多,裡面有 6-7 塊雞。隔了一日,又過來試新菜。侍應見我又來,問我大肚可以吃咁多辣野嗎? 散叫了四川涼麵和炒土豆絲,這次收斂了,涼麵叫小辣。這裡的涼麵比四姐的好食好多。又辣又酸,比較開胃,上面有花生碎。炒土豆絲的花椒味很重,比在大陸一般吃到的土豆絲
