Deep-fried Matsuba Crab Claw is definitely my favourite dimsum🤩 The crab claw was wrapped inside a taro paste, and then almond flakes was added on top. It was then deep-fried to golden! The outermost shell was crispy, while the taro was light and fluffy😍

這個杏香荔茸松葉蟹鉗,外層非常香脆,裏面的芋泥軟滑,加上鮮味嘅蟹肉,真的是太好吃了😋

Marinated smoked foie gras was definitely my favourite dish at this place! 😍

The smoky taste made this dish unique. The foie gras was served in a pot filled with smoke. It was bit firmer than that you would have from a Western restaurant but it was still creamy.

🤓Tips: If you have the flour leave from the other dimsums (like Spicy deep-fried glutinous dumplings/ fried crab claw), you can eat it with the foie gras. I think the contrasting texture would make it taste even better 👅

Another dish that I loved was the fried rice with dried Sakura shrimp and mullet roe. The Sakura shrimp was fried to a crisp texture and the mullet roe was very flavourful! 😍

For the other dimsums, the presentation and the taste were both excellent. Also, the service was very nice. Unfortunately, I felt that it lacked a “wow” factor and the price was a bit steep. I was more impressed their smoked foie gras and fried rice with mullet roe!

St Regis開張不久就已經有三粒米芝連星星, 兩家星級餐廳, 當中L’Envol走當代法國菜的路線絕對中評審員口味, 而潤走的也是新派粵菜路線, 煮法和食材使用粵式和西式結合, 再加上主理人洪師傅從利苑, 國金軒以及文華廳等星級粵菜廳之經驗, 對奪星自然手到拿來.午市就以點心和小菜為主, 新派點心中龍蝦春卷最為吸引, 以窩夫作外皮, 炸得酥脆為常, 內裡的龍蝦鮮味十足而且口感舒爽, 簡單以炸蒜作伴能突出龍蝦鮮味. 和牛一口酥同樣炸得酥脆, 內裡的和牛以黑椒汁烹製, 口感軟糯, 油香和黑椒汁結合, 味道香濃. 以於箭豬包內裡其實是雞蓉, 而外表是炸饅頭狀的箭豬, 內地裡雞蓉味道偏淡口感也較乾, 相對就失色一點.傳統的點心如蝦餃, 燒賣及腸粉, 蒸的火喉和外皮的纖薄軟糯做得很不錯, 手工心機還住, 但是餡的味道並不深刻, 廠家例如是燒賣中鳥魚子的咸香並不明顯, 蝦餃裏的鮮蝦和腸粉裏的帶子味道也頗為淡然, 相比起之前的創新點心就有點無感.最後點的兩度小菜又再燃點對這餐廳的好感, 煙燻鵝肝的煙燻木香均勻地沾在鵝肝上, 中和了其油膩, 鵝肝本身口感粉嫩而沒有筋, 脂香滿載. 西班牙黑毛豬叉燒

青蘋果嘅造型,好可愛🍏下面仲墊住一片樹葉形狀嘅薯片,非常IG-able。咸水角炸得外皮脆脆,入面煙煙靱靱,帶有絲絲嘅甜味;餡料加入娘惹醬,微微嘅辣令味道更加豐富。呢個咸水角集合齊咸、甜、辣,三種味覺,比起一般嘅咸水角更有特色!

用嚟包住素菜材料嘅腐皮好薄,差唔多透明,可以睇到素菜鮮嫩嘅顏色。煙熏味恰到好處,小朋友都鍾意食。


➡️黑魚籽糯米蒸丸子($148)
我老公話糯米蒸丸子應該好食有限,本來叫我唔好order,但係我好想試吓,於是我照嗌。好彩有點到,結果我哋三個都覺得好好味。估唔到豬肉丸子香氣四溢,而且糯米軟糯適中,加上黑魚籽將鮮味提升。


➡️脆香腐皮牛肉球($98)
平時食開嘅山竹牛肉球用腐皮包住,然後再炸至金黃色,好似一個荷包咁,好精緻。牛肉球下面有萵筍絲墊底,清爽嘅萵筍絲可以中和炸牛肉球嘅油膩。


➡️鮮忌廉葡撻($88)
個撻皮稍為厚咗少少,不過個葡撻餡唔會過甜,蛋香滑溜。不過下次我唔用再order lu。


➡️酒香熊本縣肥腩叉燒($238)
叉燒燒得有光澤和燶邊,並且散發誘人香氣,令人一見到已經流口水。講明肥腩叉燒,當然肥瘦分佈平均,入口嫩滑多汁,同時有濃郁嘅味道。本來我覺得西苑嘅「大哥叉燒」已經好好食,點知真係一山還有一山高!我而家覺得潤嘅「酒香熊本縣肥腩叉燒」先係我嘅首選🥰


➡️秘製香油豉油雞($328半隻)
不得了!🤩我同老公都覺得潤嘅「秘製香油豉油雞」係我哋食過咁多年豉油雞中最好食嘅😋淨係為咗呢碟豉油雞,都可以令我哋再幫襯!豉油雞係乾身嘅,外表色澤金黃,雞皮香脆爽滑,咸甜恰到好處。雞肉非常滑嫩,配上灑喺面頭嘅粒粒嘅豬油渣,吃起來有十分有驚喜,一試難忘👍🏻


➡️肉絲桂花蟹肉炒米粉($288)
米粉炒得乾爽彈牙,肉絲同蟹肉份量都足夠。我嘅評語係「幾好食,不過冇乜驚喜。」如果想清清地,可以一試。


➡️乾炒頭抽和牛炒烏冬($268)
唔好意思,我忘記了影相,唯有用文字去表達。呢個炒烏冬好有鑊氣,唔會太油膩,頭抽香濃,略帶點甜,調味剛好;和牛鮮嫩入味,烏冬滑嘟嘟而且煙煙靭靭。我個仔鍾意食呢個烏冬多過個炒米粉(嘻嘻,我都係😊)


服務方面,喺五星級酒店當然好周到,侍應個個都好有禮貌。有兩個侍應負責我哋兩張枱,沖熱水同換碟都好迅速,不過有時斟茶要靠自己。


我老爺對潤嘅評價一般,可能老人家比較鍾意傳統口味,太新派嘅配搭佢食唔慣。如果同年紀比較大嘅長輩去的話,可能要留意一下。我、老公同個仔都對潤非常滿意,已經成為我哋口袋名單之一🥰

身邊有個奄尖的人,喜歡吃肥肥的义燒,這裡的腩义真合心水,可惜太少喇~~~真貴每款點心有三件,兩個人怎樣吃呢⁉️吃兩個又飽,吃一個後又想再吃~~~親密的可以share,如不太親密怎麼辦⋯⋯和牛酥好脆好好味,樣子趣緻,好似曲奇餅🍪‼️蝦餃,酒店的蝦餃一向都不會失望糯米卷造型有特色,而且不太油,幾好呀‼️外面的都很油膩的。青蘋果🍏是咸水角,外皮好煙韌,好可愛,好味甜品是南瓜🎃煎堆+黑糖奶凍,色香味俱全,但只有一隻小小的~~~另外加送了曲奇餅🍪和桂花糕所有點心除了可口,就是賣精緻,服務也是一流的。不過訂位的時候說在甜品上加上生日快樂,結果沒有啦‼️

鮮蝦揚州炒飯 - 無飯不歡嘅女朋友一定要有一碗米飯落肚, 就簡簡單單order左呢個! 佢看似簡單... 其實好唔簡單
米飯粒粒分明, 好有咬口, 油分量剛好, 令炒飯食落口唔會太乾爭爭, 鮮蝦嘅爽甜, 配埋其他切得細細粒嘅叉燒/菜粒, 一啖就有晒唔同嘅味道同埋口感!! 🤤👍🏼

總括黎講, 呢一餐絕對令2021嘅開始增色不少, 所有小食, 小菜, 海鮮去到炒飯都好好味!! 雖然今次點心蒸品只係試左一樣, 但係個人感覺上就略遜上星期試嘅東涌喜來登<采悅軒>💁🏼‍♂️
