對於唔好西餐的我,但朋友極力推介我Raymond kitchen , 地點是有點偏僻。。。但其實都是很容易搵到,這裡環境是十分寧靜,而且會感受到到侍應的安排,不會把人迫迫的坐在一起,這是十分欣賞的。蜜糖乳鴨,是超出預期的好食,我可以說是我一生人食過最好味的,乳鴨皮是十分香脆,而且蜜糖的味配合.完全是想再叫的。我們還有叫了一個好像是白酒煮花甲而且很歡這個味道,有陣陣香料味,我很喜歡其實還叫了生蠔和Ham都是侍應推介的,全部都好喜歡食因為太急關係,另外大蝦意粉忘了拍照。我一定會再來的Read More

從前認為,港式西餐即是鼓油西餐,例如波士頓餐廳的鐡板扒,自小偏愛西洋口味的我並不太欣賞!但近年發現,也許因為時代在進步,現在以港式西餐為叫口的店子,亦有非常合我心意的,因為他們並不只靠鼓油,而是中西調味料之混合,味道平衡中有變化,既創新亦懷舊。其實啟發我認識"港式西餐"這個名稱的人,是Chef Stage by Eddy Chu 的 Eddy,他擅長把世界各地之各款香料調味品混合,稍為改變,令菜式保持傳統味道之餘亦被大大昇華,例如招牌bb乳鴿,真是百吃不厭!但今晚的主角並不是他,因為做得出色的另有其人,就是 Raymond’z  Kitchen的 Raymond,同樣是港產西廚,手藝更加忠於傳統,沒有妖邪怪配,儘量保持原來造型及味道,只作略為改良及變化,烹調出來的味道老少咸宜,非常適合香港人的胃口。這晚碰巧有朋友在此包場搞生日派對,我高興得不得了,因為可以重温 Raymond’z Kitchen 的三款首本名菜,就是蜜糖松露燒乳鴿、地中海式焗豬扒意大利飯及香煎法國鵝肝配蝦子麵,皆是我的必吃之選,真心推薦!詳述如下: 位於西九後花園的渡船角,實屬住宅舊區,未來過的人會有些難找路,懂得找,最近是從柯士甸地鐵站出,走行人天橋可直到,此外,從九龍站出亦走亦不遠。位於橫街內,晚上附近街道燈火不明亮,舖面亦被泊在路邊的車擋著,過路客不多,相信主要靠口碑。走到門前,萬綠叢中一點紅,招牌紅底白字,燈箱紅底黑字,寬闊玻璃廚窗,展示有趣西餐廳擺設小物及紅酒,一看便知是做西菜,跟周圍的鄰居毫不相似!門外貼上餐牌,方便客人考慮。店內並無特別裝潢,面積不大,長形間格尚算實用,我們廿多人包場,桌椅排列密麻。左方是酒吧,早已放置各式酒杯。這晚主人家自備香檳及紅白酒,因為有兄長姐夫支持,酒錢可省。酒吧的另一角儲了各款新鮮生蠔,即點即開,確保新鮮,是日精選,來自南非及法國。唯一裝飾,就是大門口一個紅色陶瓷巨人,向著大門躹躬的姿勢,應該是歡迎客人大駕光顧的意思。人多好辦事,這晚我們品嚐了6款刺身冷盤、一款沙律、3道熱盤前菜、3道主菜及甜點拼盤+生日蛋糕。餐前小點簡單是美,新鮮香脆的麵包條,本身富淡淡鹹香,淨吃美味,佐酒匹配。備以自製忌廉醬汁,黏稠微酸,愈吃愈滋味開胃!美味指數:3.5/5刺身拼盤刺身拼盤先到,食材來自世界各地之精選,體積皆是巨型。並配備日本芥末甜鼓油及酸甜雞尾酒汁作蘸醬。南非 Saldanha 生蠔肥美幼滑,一下子已在口內溶化,鮮甜豐膄,只是蠔味薄一點。挪威野生三文魚肉厚肥美,潤滑柔軟,口感好不滿足;北海道帶子,L級貨式,非常鮮甜,回甘悠久,我不喜歡與青瓜同吃,還是事後才吃以作清洗味蕾之用,潮流興配片青瓜,我真不明解!阿根廷天使紅蝦肥美有蝦膏,肉有彈力,但鮮回甘之能力,始終不及西班牙的!加拿大翡翠螺相比之下不及其他鮮甜,但肉質結實,而且蘸了雞尾酒汁昇華不少,不同享受。美味指數:3.5/5Gillardeau 生蠔本來以為刺身拼盆已經代表了全部頭盤生吃,怎料又送上生蠔,貴為法國蠔后,值得獨立出場。細味 Gillardeau 鮮甜滑嫩,蠔味果然比剛才南非的濃郁,鹹水味並不特別豐富,不知道有否用水沖過!吃之前,我用剛學會不久的少少技巧測試新鮮度,即是吱少許檸檬汁在近蠔殻之邊位,如果新鮮,蠔的肌肉會有收縮現象,可惜未見有此現象,可能是我技術不好,亦可能真的不是極度新鮮,一次過開廿五只,然後擺盤送上,時間打了折扣!美味指數:3.5/5吞拿魚尼高斯沙律生菜及菜苗嫩綠爽口,調味酸甜合道,可喜之處是加了蜜糖調味;除了吞拿魚,亦有熟蛋及香茄,我一向不太喜歡罐頭呑拿魚,雖然添加了油肉不算嚡,不過不失。美味指數:3/5西班牙  Jamon Iberico 黑毛豬火腿48個月風乾,鹹香肉香濃郁,配杏脯吃,鹹甜對比分明,味蕾受寵!薄切工夫了得,看這一片多通透,而且清晰見到脂肪瘦肉之紋理,誘惑非常。美味指數:3.5/5蜜糖松露燒乳鴿賣相如回到從前,是到了沙田龍華吃乳鴿麼?尤其配上了現在少做的雙色蝦片。我認為此道是這晚最精彩的菜式之一,小小的乳鴿,一分為四,每件皆烤至皮脆肉嫩,黑松露香撲鼻,而富蜜糖甜之醃味極度討好,吃得我津津有味,連骨亦要吮出汁來方能滿足,執筆時想起,已經回味無窮!美味指數:4.5/5香煎法國鵝肝配蝦子麵外型出衆,別樹一格,以鵝肝配炸麵應該是獨有。捲起的幼麵條,炸至香脆,一咬即碎,香口不膩,憑口感及樣子皆知道是蝦子麵,塗上酸甜黏稠黑醋汁,有助解鵝肝之膩。鵝肝煎至外脆內嫩,恰到好處,同樣塗上了黑醋汁。豐膄幼滑的鵝肝配上硬朗香脆的蝦子麵,對比明顯,口感有變化,成功的新口味。美味指數:4/5燒德國鹹豬手我們廿五人共做了三份,每份原只豬手,份量十足。外皮焗至酥脆至極,既薄亦脆如蝦片,味道濃郁有層次。皮脆肉卻嫩滑,難得不過火,連皮帶脂肪,配沙律菜及黒醋汁吃匹配得很。美味指數:4/5扒30安士美國安格斯斧頭扒巨大足30安士的斧頭扒,燒焗至焦黃帶黑的香惹顏色,看似有些過火,其實恰到好處,刻意以高溫鎖著水份,亦只是表層薄薄的一層發黑,內裡之肉質依然粉嫩紅潤有肉汁。我選了近皮肥美的一片,鬆軟細緻,之後再選瘦的一片,同樣嫩滑得很。若嫌不夠惹味,黑椒醬汁隨時侍候。美味指數:4/5地中海式焗豬扒意大利飯我認為,焗豬扒飯是這晚最精彩之菜式,用上黑毛豬排及意大利米作飯,這個西方組合配上中式西餐做法竟然無得輸!芝士、番茄、青椒、洋蔥、磨菇的份量拿得盡,不知道如何調得如此美味,是有層次的滋味。黑毛豬排肉質鬆軟綿密,香嫩得至難以形容,比剛才的牛扒更要令人一試難忘。意大利米軟硬度適中,富蛋香,配合豬扒及醬汁同吃,天作之合!美味指數:5/5生日蛋糕其他朋友帶來的生日蛋糕,漂亮有特色,其中金銀滿載的特別好意頭。招牌甜點拼盤高唱生日歌後,大家興緻最高揚,爭相與壽星仔拍照及比酒,招牌甜點變得不受注目,雪葩、蛋糕、布士、慕絲及水果,其實有些難分享,各淺嘗了少許,但印象不深。14款菜式中有3款令我難忘,實在精彩!離開中心貴租之地,把成本放在食品上,客人有福;取價看似不便宜,吃過方知物有所值,環境服務合理,絕對有回頭的誘因。八月真是一個好月份,除了自己生日外,亦有兩位朋友各自包場搞生日會,因為碰巧皆是齊頭歲數,打算開開心心迎接來臨的新一個十年,今晚到了 Raymond's Kitchen,過兩天就是 Doppio Zero. Read More

一日收工早左, 曾經有客介紹過呢間既豬手, 所以就暮名而來朋友話過間野好似好細,如果無BOOK檯既情形下, 最好打一打電話問下有無位鋪頭位置係內街, 成條街都好多食店, 但可能市道吾好, 經過每一間食店都吾多人....而呢間野個位置大概到街尾, 感覺更加寧靜同朋友揀左一個頭盤, 兩個大盤 -第一個 : 鵝肝蝦子麵鵝肝煎得岩岩好, 外脆內軟, 因為有D餐廳會煎得太熟, 會令鵝肝既油脂已經煎到乾哂....ANYWAY~但呢個頭盤就無啦~而個蝦子麵應該略為炸過或者BURN過外圍, 一樣做到外脆內軟既效果最後用舊有既做法, 用左黑醋上面, 食落吾錯, 蝦子麵索到鵝肝既油, 雖然吾算太多但再加上黑醋既甜酸味, 感覺岩岩好, 不過覺得好似自己屋企都煮到BTW, 蝦子麵食得出吾算係貴價既麵, 不過不失好彩價錢吾係貴, 中意食鵝肝既人都值得一試吾知係咪留左單, 出左個豬手比我先, 一見到就覺得好大份! 感覺早知叫一個大盤就算....我對豬手無特別既廦好, 不過呢個豬手的而且確燒得好好食....個外皮燒得好脆口好香, (絕對值得一讚!) 中間有小量既肥膏先再到肉, 分佈得好平均~ 燒得咁香口既同時肉質依然好嫩好JUICY~而且, 有一樣都值得讚既係食落口都仲係熱辣辣出哂煙~ 呢點吾係間間都做得到同做得好食~最後尼既係大蝦PASTA, 咩麵吾係記得好清楚啦....  因為食完個豬手已經飽到上心口....相對呢個PASTA感覺無咩特別, 吾會覺得特別好食或吾好食, 同埋蝦肉比較硬左小小, 不被推介既一個菜式Read More

Finding this restaurant wasnt hard. It was located 5mins from Austin Station, but the shops around the area were already closed for the day when we arrived in the area, so it looked like a dingy backstreet alley. However, they had a little red illuminated sign and the first impression was that the restaurant had an intimate set-up. We were greeted by friendly staff and were shown to our table which was well presented like a Western restaurant and the chairs were comfortable. The cheese dip with the breadsticks were not too salty. The waiter explained that they had made their own dips, which incorporated cucumbers instead of pickles, which i assumed didn't mask the flavour of the cheese.We ordered the half dozen oysters for starters and were presented with 3 different types of oysters, from various countries which varied and taste and consistancy. The Irish Oysters were the best in my opinion as they were the most creamy and sweetest. Next we had the sashimi platter to share. The platter consisted of salmon, prawns and scallops and were all fresh. The salmon cuts were thicker than what I've previously been served at other joints. We ordered a sweeter sake to go with the seafood. A must try dish if you are into sashimi.We tried the Foie Gras (Goose?) with shirmp noodles to share. The fried noodles complemented the pate beautifully. This was probably my favour dish of the night.With the mains, I chose the Angus beef. This cut was a better cut than what I could get at the stores. This was cooked medium-rare and was very tender and not burnt on the outside, despite its thickness. This was served with roasted vegetables and gravy. The gravy is worth a mention also as this was prepared in-house and had a fusion of Asian and Western flavours. (I can't remember what they said they had done to prepare the gravy). We also had a red wine recommended by the bar staff.For dessert, I order the apple pie and the souffle. The apple pie was of course home-made. We were happy that it was not overly sweet or mushy and that that the apple chunks were still crunchy.Overall, we had an excellent dining experience. It is probably on the pricey side, but I believe that the quality of cuts and freshness was worth what we paid. I think this would be an excellent location to take your VIP guests as the location is quite and the sound doesn't echo off the walls too much, so it wasn't too noisy. 之前有位複姓老友生日, 趁時間未開始太忙, 不如早些約他來個晚飯, 免得拖到年尾還未吃. 三個老朋友, 六個人, 一頓飯, 百多個話題, 講極都講唔完. 班牙Iberico Ham 24個月 -- 近年的大熱食品, 餐廳並非用一份份切好回來的Iberico Ham, 而是用上原隻的腿. 以新店來講, 算是冒險之舉. 不過在保存火腿上, 相信他們還要多花功夫, 因為發覺火腿油份流失, 開始乾Cesare Insalata -- 是朋友的選擇. 一個凱撒沙律, 沒有太大的挑剔吧! 感覺可以. 如以沙律, 我個人比較喜愛上面的麵包粒, 有些還會用上蒜蓉包粒呢!Beef Carppaccio -- 薄片肉軟, 理論上生牛肉更能反映牛肉本身的質數, 不過這個肉味就相對不足. 配料是酸汁沙律及芝士片, 少了一些東西. 我較愛有洋蔥及Pickle小黃瓜.6個人, 本來湯汁並不是他們的喜好. 不過我卻又想試試, 4個湯全部叫齊. 第一個是白汁忌廉湯, 沒太大感覺.第二是法式洋蔥湯 -- 又是加入紅蔥做色.第三是龍蝦湯 -- 算是可以, 不過我喜歡酒味濃一點.第四個是黑松露磨菇湯 -- 黑松露精油近年常被濫用. 蒸蟹, 炒粉麵飯, 腸粉, 多士, 炒蛋.... 有點膩.... 最重要還真要做一個好好地的磨菇湯. 除磨菇香氣, 還得有嚼口的磨菇感覺. 在我遇過的湯中, 這個不算高班.Steak au pivore -- 但沒有堂前料理, 就只以黑椒醬汁為牛肉加味, 牛肉質質是其次, 最重要看這汁醬. 這個牛肉味濃, 大家都挺喜愛.這裡主打德國豬手. 事實上你看豬手質感, 的確唔錯! 外皮脆而內側脂肪酥黏, 肉亦香而滑. 趁熱食, 肉質嫩些, 亦無太膩感覺. 不過凍後就不好, 所以適合一班朋友分食, 小吃滋味. 與同期的Berliner息國酒吧對比, 我較喜歡這個.接著這個白汁野菌Risotto (還未習慣叫這個做磨菇飯)真是一般水準. 湯汁匯入不夠, 飯粒未飽滿但已漿口, 不算合格.食店Market手法經常提到"隱世小店", 我認為做小店不應隱世, 隱世就不要做生意了! 不過見這個本來就多宵夜的地方, 無端開了一些格調餐廳, 還給我吃了一次檸檬 (有次想Walk-in,但已Fully booked). 於是就抱著跟朋友試試吃的心態去搗蛋一番! 吃的及服務還可以, 菜式有好有壞, 不過始終小店的成本比較高, 來貨較貴吧.Read More

The other week,  we booked here to celebrate my father for his best 60's , 25 person, starting at 7pm,  everything was so well prepared , we had a lot of signature dishes n they were so yum:) thanks Rico n Raymond to arrange such a great night for us

My friend and I have ordered 2 starters (mussels + quail legs) and 2 main courses (Pork chop + Paella, i.e. Spanish fried rice).  4 dishes only.  No wine nor dessert was ordered.In terms of "look", the dishes I ordered were all fine, very fancy.  It was very fusion cuisine.  Look pretty! And you could find quite a lot of choices on the menu.However, in terms of taste, frankly, it was just "average".  I got no surprise from it.  The taste of our starters were fairly ok.  But we were very disappointed with the Paella, which was far different from those I had in other Spanish restaurants in HK or Spain.   It was more like a "HK-type fried rice with seafood toppings".Given the bill was HK$900 in total, I had kind of expectation to the restaurant.  With that price, you can have loads of choices.  Bear in mind...it is located at a dark, gloomy street at Tai Kok Tsui...  Judging from the price they charge, we had higher expectation on it.Read More
