西多士外皮金黃香脆,用咗薄方包同鹹香十足嘅流沙,比傳統煉奶花生醬食起嚟冇咁甜膩,更香口惹味。


估唔到飲茶都可以食到出色嘅西多,而且款款點心都即叫即人手製作,上枱熱辣辣👍🏻🥳🥳

朋友搬左黎朗屏,黎探下佢順便落街飲下茶傾下偈,到左佢屋苑附近的8號茶居,估唔到平日下午都咁多人,下午茶時段都滿座喎。開左壺香片,茶味ok,用呢款茶壺又幾好,店員見到水位低就自動加水。點心即叫即蒸制作需時,等左十幾分鐘先有點心上,先來的是8號蝦餃皇,蝦餃皮薄餡鮮味,幾爽口添。再來係咖哩蒸土魷,份量幾大碟,但咖喱味唔夠濃,較淡口。跟住係蟹籽燒賣皇,上面有一層墨魚膠,彈牙又鮮味,好食。唔少得香口野就叫左牛油果沙律春卷,即炸熱辣辣㗎。沙律甜美,入面有牛油果醬,雖然味道不突出,但當佢沙律卷咁食其實好好味。仲有鴛鴦鮮蝦網米腸,綠色有好濃嘅蔬菜味,橙色就唔係好食得出,估係紅蘿蔔?腸粉煙韌,入面脆口,加上蝦爽甜幾正。最後係川味黃鱔竹筒飯,麻辣口味勁惹味,黃鱔肥美彈牙,粒粒飯無爛㗎,好味喎。食物好味,價錢合理,仲有套餐叫㗎,有湯有糖水添喎,下次試下先。

點心選擇三十來款,都是大路款式。這反而更考廚師功力。許多點心均是兩件一籠,正好適合現時二人限聚令下的消費模式,可讓客人多嚐幾款點心。傳統老派點心師傅常言道,點心不需花巧,只要正宗便足以行走江湖,用心鑽研做好幾款常見點心,例如燒賣、牛肉、蝦餃、叉燒包、腸粉,便可去英美澳加日大展拳腳,覓到一份高薪工作;反之學弄什麼公仔點心,只要潮流一過,又落得孤芳自賞的田地。以往我聘請點心總廚例考之試菜餐單也以傳統為主,蒸點兩款蝦餃及牛肉球、炸點春卷、及齋腸粉一碟,便知應徵者能力。

題外話:曾幾年前聘用一位出身自國際酒店的香港籍點心總廚,他少時香港工作,然後被集團升職至日本旗下酒店工作十年。能操流利日語,離職回港因父母年長,他慨嘆日籍下屬沒有香港人那種巧手。還記得當時他所提交的日本工作證明信是非常特別的,以毛筆字書寫什麼什麼君,在日皇某年起擔任中華料理師長。

店家對器皿之選擇極有藝術美感,不知款式是特別訂造,還是直接外購?與其他酒樓點心店,只提供純白色的塑膠器皿與眾不同,別樹一格,甚有玩味。餐廳提供了一系列的中華古典青花纏枝圖騰杯碗碟匙套裝供客使用,繪功纏枝秀麗,牡丹璀璨綻放。雖是印制圖案,但氣質非凡,滲出陣陣古典氣息,正好配合這兒飲茶品茗風格。

蝦餃亦名點心之王,成本昂貴,師傅手門亦要熟練,才能成功制作出一粒高質的蝦餃。視乎酒樓檔次,有些選用鮮蝦、有些用急凍蝦仁,刀功亦有切粒與蝦膠之分。個人喜好使用急凍蝦仁制作,因為品質及供應較穩定,工藝技巧在於解凍作法分野。

這兒「八號茶居」兩粒蝦餃賣相大小有輕微差異,一粒餡料豐滿,賣相結實。但另一粒卻餃皮與餡肉之間出現空隙,師傅力度掌握似是稍欠拿捏。咬進時,肉質爽脆彈牙,帶有黏黏汁水,餡料緊扣,未有鬆散,吃出是現場制成蝦餃後即蒸制作,不似集團式酒樓再急凍運送貨色。

這是非常高質及考驗手門的出品。先用粘米粉溝成腸粉漿,然後盛一湯匙米漿倒進蒸腸粉蒸盤上掃平,再表面上輕輕放上一塊透明細孔通氣白布,蓋上不銹鋼蒸蓋約四十秒開蓋後,師傅需即時在水氣彌漫充斥的視綫下,憑自己多年的造詣,以陰力將腸粉捲成極幼的圓柱狀,再中間切開成兩等份。賣相腸粉沒有任何洞口穿透,粉漿也拉得很薄,可見廚師手們上乘。味道雖然加了花生醬及豉油,但仍能吃出腸粉的幼滑口感。

【鵪鶉蛋燒賣】
相當費時及難以保存的點心,許多連鎖酒樓已不再作此款點心了。鵪鶉蛋要先以沸水煮熟,以人手除殼。然後打蝦膠連同鵪鶉蛋,包入白色燒賣皮內,再蒸十二分鐘至蝦膠結實。由於鵪鶉蛋熟後不能再冷藏翻蒸,又不易存放。所以凡有此款點心供應的地方,必是即制及即蒸的新鮮點心食肆。

此點心大約廿分鐘最後才出場,外表平實不花巧,顏色白雪雪一片。燒賣皮三粒緊貼著,用筷子將它們夾開。先吃面上的鵪鶉蛋,新鮮口感,蛋黃仍是深黃色。蝦膠打得爽脆彈牙,人手包紥不規則形狀,吃落汁液飛射,非常出色。

總括而言,「八號茶居」出品精心制作,一絲不苟,連茶具器皿也甚有要求,值得再來光顧。

第一次來這裡,見開左開新式點心店,於是來吃個早茶。客人十分多,疫情下仍坐滿。有隔板分開每一張枱。點了招牌貨雪山叉燒包,蟹籽燒賣皇,牛柏葉,炸雲吞同香煎蘿蔔糕所以食物都熱辣辣咁上枱,而且吃完一碟緊接又上一碟,店員細心,而且食物味道相當不錯最推薦雪山叉燒包。想試試既有竹筒飯。值得下次再來品嚐。個人感覺評分:食物味道 - 8/10食物賣相 - 7.5/10餐廳環境 - 7.5/10店員服務 - 8/10性價比 - 7/10

The restaurant itself is not too big. Causal lunch is fine but shouldn’t put much expectations. The food quality is fairly standard or hv rooms for improvement. Overall is very so so, nothing makes me return n try again after today lunch. No harm to try but I will not rate high at this stage

因隔理西餐廳經常無位,無意中試左呢道的點心。已黎過幾次,次次都無失準。呢道點心吳太多但夠食,講真2個人跟本食吳到好多,所以最喜歡佢d 蝦餃燒賣係2粒一籠,可以叫多d 種類。呢道我食過的點心都好味,蝦餃燒賣叉燒包必食。菜苗餃排骨鴨腳紮糯米雞各款都好食,佢有1人set, 燉湯+竹桶飯,現還有下午茶set 都係吳洗$50@。茶錢$5/$10 位,佢個香片好飲,吳澀,所有staff 都好有禮貌又親切,好值得一再回頭幫襯。
