Had a lunch with family on last weekend.The service was great! For starter, tuna tartare and meatballs were very delicious. Chef's cold cuts is a good choice as you can have cheese and parma ham with nice portion. 唔知大家有沒有收看過多年前一齣叫「意麵情迷 “Pasta” 」的韓劇?套劇講述以出色料理師為理想的女主角的愛情和成功故事。大家不用費解,我不是在Openrice 寫劇評,而是想寫今晚去了一間手工意粉餐廳,情迷了Pasta。開放式的門口,睇落很寬闊。近門設有一個酒吧枱,邊吹風邊暢飲,好舒服啊!甫進內裏,柔和的燈光加上輕鬆的音樂,很寫意。裝潢具代表性,木牆身掛上多幅品嚐着意粉的相片,他們都吃很好滋味,相信我今晚也一樣。一邊設有一排長沙發座配二至四人枱,另一邊是闊落的四人卡座,很舒適!最到尾端就是廚房重地,大家可透過窗子欣賞大廚製作手工意粉。大家忙過不停,好投入呀!餐牌簡單清晰,食品只有三大類,包括有Starters、Dessert,當然不少得主打的Pasta,而飲品就有七大類。細看一下,發現有Tasting Menu ($280/位),需兩位起,可自選2客Starters、3客Pasta和2份Dessert,相當優惠,正好岩我倆。******************************點好菜便隨即送上一袋麵包,以舊式的油紙袋載着,有趣!拿上手熱烘烘,外皮脆內軟熟,簡簡單單蘸上意大利醋橄欖油已不錯!******************************在七款Starters中,友人第一時間就揀了牛肉他他 Beef Tartar,雖不太合我心意,但他喜歡也不緊要,我淺嚐一下。牛肉他他上舖滿爽口的蘑菇mushroom、鹹香的芝士片 和清爽的櫻桃蘿蔔red radish。撥一撥就看到色澤艷紅的牛肉他他,肉質軟柔,夾雜有少許肉筋,拌入油醋汁,滿有醋酸香。另一道是吞拿魚醬小牛肉Vitello Tonnato,賣相相當特別,小牛肉Veal 完全被吞拿魚蛋黃醬tuna mayonnaise 覆蓋,中間放了三粒西西里酸豆 Sicilian Capers 。薄切的小牛肉 色澤帶點粉紅,肉嫩得來也有咬口,配上鹹鹹地的吞拿魚蛋黃醬,都幾有特色!******************************Pasta 出場啦!但先考考大家,你數到幾多種Pasta? 我只數到意大利粉、扁意粉、天使麵和意大利雲吞。但細看餐牌,我就認識了八款,而今晚就心大心細下揀了當中三款。先上細扁麵 Tagliolini ,嘩!扁麵 上舖滿鮮刨黑松露片 shaved black truffle,好矜貴,仲陣陣松露香,好誘人!品嚐前再把扁麵 跟白松露醬 white truffle paste 和松露片 拌勻,令其充分吸收松露香。吃時啖啖充滿松露的幽香,份量合宜,不會太濃而蓋過扁麵 的蛋香,加上扁身的麵條口感煙煙韌韌,挺有嚼勁,又拌了些紅蔥頭Shallot,不論味道和口感也教人回味。******************************再來是貓耳朵麵 Orecchiette ,麵形的確好似貓仔的耳朵,每隻大小有少許不同,皆因人手製作,得意!成品有意大利香腸 Italian sausage、辣豬肉腸 Spicy N’duja 和車厘茄 Cherry tomato,而“耳朵”就沾滿醬汁,味道既香辣又酸咪咪,好醒胃惹味,好吃!這款貓耳朵麵比細扁麵厚身,口感更煙韌,好有咬口。******************************登登登登....最後一款是意大利戒指麵 Lorighittas,首次品嚐,究竟是咩樣子?是扭紋形戒指,但size 就似手鐲多過戒指,哈!它比前兩者更厚身,更有嚼勁,樣子和口感特別!配上蝦Prawns、蜆Clams 和青口mussels 三類海鮮炮製,“戒指”掛上蕃醬 和蒜粒,酸酸咪咪,越食越開胃。****************************甜品有兩款選擇,分別是意大利芝士蛋糕 Tiramisu 和意式奶凍紅莓醬 Panna Cotta with Raspberry Coulis,我倆都揀了前者。嘩!大大杯,好有份量。面頭舖滿可可粉,陣陣香濃的可可香。芝士慕絲 極之細滑,跟香濃甘苦的可可粉 和浸過咖啡酒的蛋糕 很夾,味道濃郁,平時少吃Tiramisu的我也忍不住口,喜歡!-------------------------又考考大家,其實你們知不知Pasta 和Spaghetti的分別?答案:Spaghetti只是pasta的其中一種。我原本只認識兩三種Pasta ,但今晚就一次過認識了餐廳所供應的八款,分別有貓耳朵麵 Orecchiette、墨汁吉他麵 Chitarra、意大利餃 Fagottini、千層麵 Lasagna、意大利闊麵Pappardelle、意大利戒指麵 Lorighittas、細扁麵 Tagliolini 和意大利雲吞 Ravioli ,大開眼界。今晚品嚐了三種,以令我意麵情迷,不知餘下五種的口感又如何?期待...…Read More

意大利菜向來都是我最愛的西方菜系之一,它沒法國菜花巧,只講技巧,把簡單食材推至極至。作為澱粉質控,Pasta更是神聖。手做意粉用新鮮蛋黃和麵粉製作,做成不同形狀,以配搭不同的醬汁,口感彈牙,充滿蛋香。只可惜新鮮意粉保鮮期甚短,放久了口感就差遠了,所以香港甚少餐廳會不惜工本做它,就算有,價錢也是頗貴的。.早聞中環的Pici的手工pasta很多捧場客,不但正宗,而且價錢合理。只是一直沒有機會過海一嚐,而它在尖沙咀終於有分店,我和朋友當然要去朝聖。它位於尖東,P3出口走三、四分鐘,大約在科學館附近,人流不算太多。我們大約六點半到達,只有四、五枱客人在餐廳,大多都是外國人,同時侍應也不會說廣東話。場內其他客人都安排坐在餐桌,帶位的人竟安排我倆去廚房窗外的高凳坐,實在令人費解。為了坐得比較舒服,我們也提出轉去二人桌。不過坐下後是另一個侍應招呼我們,服務十分周到,詳盡介紹了餐牌上的菜式,有前菜、意大利粉和甜品,也略略解釋了他們的意粉是意大利廚師即叫即做的。它們的餐牌不花巧,而我們甚麼都想試試,所以叫了tasting menu,可以在餐牌選兩款starters,三款pasta和兩款dessert,每人$280,不設加一。他們也有意大利傳統調酒和其他飲品,意大利人可是無酒不歡呢!但我倆要上班,就不能沾酒了!下單不久後就來了一包餐包,侍應在麵包碟倒了些橄欖油和黑醋。意大利人不塗牛油,而是撕下麵包,沾一點點黑醋油吃,甚是開胃。第一款前菜是Chef’s Selection of Cold Cuts,有兩款火腿(Parma ham和salami)和兩款芝士(parmesan和taleggio)。Parma ham油脂分佈平均,呈較深的粉紅色,有足足五片,我把它包起taleggio芝士,這是種熟成期不太長的半軟芝士,味道不會太濃,入口軟滑,不會和火腿爭妍鬥麗。Parma ham肉味香濃,略鹹,肉質絲嫩,像綢緞,如配上紅酒解膩一流!不過我還是喜歡Parma ham和芝士配水果或麵包,沒那麼鹹膩。Salami就像西方的臘腸,硬身有嚼勁,但不是我的茶,而parmesan是老芝士,甚硬,芝士味很重,配上沙拉或撒上意粉不錯,但單獨吃它太濃,也不太吸引我。這selection來貨有質素,但怕膩的朋友記得叫杯酒相伴。.另一款是Homemade Meatballs含有豬和牛肉,配上自家製的番茄汁,淋上刨成一絲絲的parmesan芝士。肉質柔軟,約三分一個拳頭大,用叉子一撥就散,可攪得太碎,少了點肉的口感。調味適中,拌進了點洋蔥粒調味。反而醬汁不錯,有新鮮的番茄粒,較稀,香草的味道加上天然的酸甜味,是為絕配,正好平衡肉和芝士的膩感。很欣賞侍應按照我們的速度上菜,上完一碟,等我們吃得七七八八再上下一碟,亦會不停加水。吃完前菜就到我們最期待的pasta。.第一碟是Ravioli(意大利雲吞),餡料有ricotta cheese和流心蛋黃,配以牛肝菌醬汁,每碟有兩大件。廚師要煮到火候剛好,才會皮熟透之餘,蛋黃仍會流心。Pici沒令我失望,一切下蛋黃流出,雲吞皮還是al dente。切開彈牙的皮,沾上加了酒的醬汁,酒精蒸發後的甜味,配上鹹香的蛋汁和奶味香濃的芝士,平衡得剛剛好,捨不得把它吃完。吃完不久侍應帶上了Orecchiette(貓耳朵粉),這是種厚身、有嚼勁的pasta,一元的大小,一口一粒,配上香辣的蕃茄汁和意大利香腸,很是惹味。怕辣的朋友也不用太怕,它的辣比較溫和,後勁會一點辣,香腸帶點煙燻味,呈肉碎型,酸酸辣辣。醬汁加入了忌廉,入口順滑,掛汁的效果也更佳,配有咬口的貓耳朵粉,帶來多重口感,不錯!最後上的是Tagliolini (細寛麵),比天使麵寬一點,口感像伊麵,吸汁力較強,配白松露汁和新鮮松露片,也是餐廳很多人點的一道菜。松露片本身不太濃,而醬汁也略淡,頗為濃稠,麵條沾滿了汁,入口偏軟身,不是我喜歡的口感。牛油下得過多有點膩,吃完口感豐富和味道平衡的Ravioli和Orecchiette,這道菜明顯失色了。每碟pasta看起來不太大份,吃畢卻非常飽肚,再來每人一份Tiramisu。Mascarpone cheese和忌廉下墊住浸了espresso和咖啡酒的蛋糕,淋上可可粉,甜中帶甘,才是上品。很欣賞廚師在可可粉上灑了一點砂糖,脆脆的口感不錯,蛋糕也夠濕潤,只可惜咖啡味不夠濃,中和不了忌廉的甜膩,但口感豐盈,亦很滑身,是中上之作。慢慢吃了兩小時,見門外有人等位,但侍應也沒有催我們。服務不錯,結賬時也加了大約10%的小費給負責我們桌子的侍應,每人$310。手工意粉正宗,調味剛好,前菜和甜點不算驚喜,但也不錯。雖然店鋪不太大但情調浪漫,在是值得回頭的餐廳呢!…Read More
