好開心今次可以出席由openrice x WWF x L'Hotel 合辦嘅「環保海鮮週」活動,除咗品嚐到酒店嘅自助晚餐之外,重試咗3款以環保海鮮入饌嘅菜式~今次除咗食野之餘重對「環保海鮮」了解多咗~喺到同大家略略講一講~其實「環保海鮮」即係一啲喺野外捕撈或養殖嘅海產,其捕捉或養殖方法係唔會嚴重破壞海洋生態,可以滿足目前需求之餘,未來仍係長食有,不斷享用~有科學家推測如果再唔改變下現時嘅捕漁方法,分分鐘10年後會無海鮮食!真係要多多關注一下先看看自助餐有甚麼好吃的~最入的位置有刺身吧、串燒、生滾粥及麵食類,後兩者的配料甚多呢~湯品向左望就是湯品及麵包,湯品共有2款,一中一西的~最貼心的是小盒牛油竟有植物牛油及普通牛油供選擇~非常細心呢冷盤再到旁邊擺放著一碟碟冷盤的走廊看看,有數款火腿、水牛芝士蕃茄、木瓜沙律、雜菌及薯仔沙律海鮮類海鮮類就有青口、蟹腳及凍蝦~可惜沒有生蠔及翡翠螺吧~熱盤到於熱食方面,有原條豬肋骨、一整盤的蒸扇貝、炸物及酥薄類等咖哩而放在正中位置的原來是一煲煲青咖哩、紅咖哩及黃咖哩,走近時聞到陣陣咖哩香呢~甜品至於甜品方面,種類多得擺滿了一整個長形雪櫃,有雪糕、奶凍、朱古力蛋糕、芝士蛋糕及啫喱等. . .旁邊原來還有蛋散、笑口棗及麥芽糖等中式甜品~先吃點冷盤,青口及三文魚刺身,兩者同樣夠鮮,不過略嫌三文魚刺身切得較薄。而青口則味道鮮甜,且帶點口感每樣取一點試試,最欣賞就是入口甜甜的鎮江骨,煮得入味之餘,肉質還腍腍的。其次就是莎樂美腸了~切得薄薄的,香口非常吃過少量吃盤前菜後,酒店職員就為我們陸續送上3款環保海鮮,再一款一款的為我們慢慢介紹~待介紹過及拍過照後,再分給我們品嚐香煎澳洲昆士蘭捕撈扇貝拼蒜香加拿大捕撈龍蝦醬伴馬鈴薯及爽脆沙律Pan-sealed Queensland, Australia Wild Caught Sustainable Scallop, Canda Wild Caught Lobster Aioli, Majic Potato & Crispy frisse[評分:7/10]經煎過後的扇貝兩面帶點微焦,味道鮮甜,口感嫩滑。配料方面,上方還放上了少量香蒜作提味。醬汁方面,橙紅色的紅油就龍蝦醬,感覺有點像辣油吧,不過龍蝦味不太突出。而下方的薯蓉口感細膩,入口香軟,非常不錯~香煎南冰洋補撈鱈魚柳伴蜜糖菜及本菇Pan-sealed Antarctic Ocean Wild Caught Chilean Sea Bass Filet, Honey Locust Fruit & Shimiji Mushroom[評分:9/10]三款環保海鮮中,這道鱈魚是我的最愛~雪白的魚肉,厚厚的魚身,入口既香嫩又充滿了魚鮮,肉質還富有彈性,相當美味。不過最令人難忘的還是下方的透明物,有點像啫喱吧,看看餐牌才知道原來叫作蜜糖菜,還是第一次吃到呢,入口腍腍的,帶點彈性,很有骨膠原的感覺,非常新奇呢普羅旺斯香蒜風味煎焗荷蘭捕撈鰈魚伴菠菜Seared Gratin Netherlands Wild Caught Plaice Fillet Provencal "Spicy Style", Spinach Garlic[評分:6.5/10]第3款是鰈魚,扁扁的魚身上灑滿了炸蒜及麵包糠,由於鰈魚魚腥味較重,所以加入炸蒜後除了增加口感之餘還能作闢腥之用。除此之外,醬汁也帶點微辣,所以是3款海魚中最濃味的一款,不過略嫌鰈魚還是有點微腥及肉質過腍沒口感,整體感覺一般甜品[評分:7/10]甜品方面的確令人花多眼亂,所以也選了好幾款試試呢,當中有班蘭及牛乳奶凍、忌廉脆筒、雙重朱古力蛋糕、蛋散、麥芽糖夾餅及麵包布甸。以朱古力蛋糕最為吸引,口感軟滑,朱古力香濃而不膩,即使吃飽了也能把一整件吃掉呢~題外話:另外係報紙都留意到WWF為咗進一步向大眾推環保海鮮,將於6月27日至7月5日舉「環保海鮮週」,有超過100間餐廳食肆支持,例如:翠華、美心MX、君悅steakhouse、JW萬豪中菜廳、山頂峰景餐廳、Jamie's italian等. . .有興趣嘅朋友不仿襯依段日子試下呀~LIS Café (香港仔)香港仔黃竹坑道55號如心南灣海景酒店P3~~~~~~~~~~~~~~~總消費:會員活動味道:7/10環境:8/10服務:8/10衛生:8/10 …Read More

自命環保,一向都願意花工夫把垃圾分類,公司紙張少用及儘量不浪費,但環保海鮮卻又未有留意,是日有幸參與openrice及WWF共辦之環保美食週活動,真是大開眼界!原來世界自然基金會一班有心人士,從海鮮補捉及飼養之過程,把海鮮分類為綠、黃、紅三類,開綠燈的自然吃得安心,黃就要想清楚,紅色類別就最好盡量避免,無謂成為破壞生態人士的幫兇,不知者不罪,明知故犯是大罪 !環保週只有九天活動,100家食肆參與。我們是晚先睹為快,嚐到三道特色環保海鮮美食。菜式名字很長,也許儘量提供資料,介紹出處。香煎澳洲昆士蘭捕撈扇貝拼蒜香加拿大捕撈龍蝦醬伴馬鈴薯及爽脆沙律 Pan-sealed Queensland, Australia Wild Caught Sustainable Scallop, Canda Wild Caught Lobster Aioli, Majic Potato & Crispy frisse (3/5)見菜名強調捕撈 wild caught,別於殺錯良民的刺網及圍網,自然吃得安心一點。扇貝煎至金黃色,略帶焦香,剛熟嫩滑;做法亦有多少fusion,番茄蓉配以香蒜,中西混合地堤鮮;以龍蝦熬成的橙紅醬汁有些似辣油,心理上亦覺帶點香辣,剛好替本身無味但質感棉糯的薯蓉添味,幾好的一道。香煎南冰洋補撈鱈魚柳伴蜜糖菜及本菇 Pan-sealed Antarctic Ocean Wild Caught Chilean Sea Bass Filet, Honey Locust Fruit & Shimiji Mushroom (4/5)雪白鱈魚厚身有份量,我這魚痴見已失儀,大啖吃之,嫩滑無比,魚脂豐富,口感享受;蜜糖菜仿似月前在富嘉閣吃到之雪蓮子,透明身軀似啫喱,質感有些韌勁似海哲,但比較軟身;本菇稱職合型合格的好菇,醬汁調味適中,心水推薦。普羅旺斯香蒜風味煎焗荷蘭捕撈鰈魚伴菠菜 Seared Gratin Netherlands Wild Caught Plaice Fillet Provencal "Spicy Style", Spinach Garlic (2.5/5)鰈魚是扁身魚種,與比目魚相似,尤其被烹調後,做法有新意,配以大量炸蒜及麵包糠,好看及香惹,並伴以微辣之醬汁,可惜入口過於乾身,也許是炸蒜吸了魚的油脂,也許是這款魚油脂較少,而且黑胡椒味過強,非我口味!除了三款魚之菜式外,我們亦嚐到不少自助餐美食,奈何現在重質多於量的我只是淺嚐,鎮江骨及清潤雪耳雞湯合心意,其他的,不過不失。香港站有酒店專車到酒店,對我來說,遙遠一些但亦方便,水準可以,不枉此行!…Read More
