天氣開始轉涼,秋天即將來臨的一個星期六晚上,我與兩位朋友一同前往西環德記潮州菜館品嚐正宗的潮州美食。記得當年讀大學嘅時候,久唔久都會嚟呢度「打凳」,所以對我哋嚟講,呢一度係有一種回憶嘅味道。抵達時,(feel glad to see) 餐廳已經恢復了疫情前的熱鬧氛圍,座無虛席。我們首先品嚐了胡椒豬肚湯,這道湯品香口但是不肥膩。湯汁濃郁,充滿胡椒的辛香,豬肚則入口軟嫩,帶有微微的彈性,但是欠缺一般內臟的豬香味。這道湯不僅暖胃,還能增添食慾。接著,我們點了潮州的經典小吃──蠔仔餅。這份蠔仔餅外酥內軟,口感十分可以,是餐廳裏的數一數二作品。裡頭的蠔仔鮮嫩多汁,與餅皮的酥脆完美結合。這道小吃讓我們彷彿置身於潮州的街頭小巷,感受到濃厚的家鄉風味。更正的是,他上菜的時候還是脆卜卜的,就算即將清碟,仍舊鬆脆, 我十分欣賞!繼續品嚐,我們選擇了滷水鵝片鵝肝。味道濃郁,肉質鮮嫩,沒有使用味精,十分天然。鵝肉片入口鬆化,鵝肝則帶有獨特的潮州滷味,咀嚼久了,還有淡淡酒香,富有層次感。這道菜讓我們感受到潮州滷水料理的精髓,彷彿品味到了懷舊的味道。最後,我們選擇了排骨春菜煲。這道菜的排骨肉質鮮嫩多汁,與春菜的清甜味道相得益彰。菜煲中的湯汁味道濃郁,但不油膩,讓人回味無窮。這道菜兼具香口和不肥膩的特點,給予了我們美味與健康的「平衡」享受。西環德記潮州菜館以熱鬧的環境、地道的家鄉風味和美味的菜式,吸引了許多食客。他們的菜品不僅香口但是不肥膩,味道濃郁卻沒有味精,十分天然。若你想要品味正宗的潮州美食,這家餐廳絕對是值得一試的好去處。…Read More

今日一行七人,於港島區行完山準備去嚐美食,大家都異口同聲想去德記食潮州菜因為之前曾經光顧過覺得食物很有質素,於是決定今晚食潮州菜。我們下午5.30已經到達食店門口,之前亦打電話問過是否需要訂位但回覆說時間尚早就不需要,不過下次訂位會比較確定。食店環境擠迫,枱與枱之間距離很近,幸好有膠板相隔會比較安全。餐牌分門別類:潮州鹵味($98~$338), 特色小食($38~$158), 雞鴨類($98~$256), 豬肉類($78~$98), 魚類($108~$298),牛肉類($98~$108),煲仔菜類($88~$238),湯、羹類($78~$228),豆腐類($88),海產類($98~$448),蔬菜類($78~$128),潮式粥、粉、麵、飯($55~$168)。我們最後點選了下列菜餚:先來了三碟前菜,每碟$9都算是經濟,花生香脆,咸酸菜味道小小甜甜酸酸很醒胃,豆干微辣很惹味。鵝片($138): 是吃潮州菜必點的,口感非常嫩淋,肉質肥瘦適中,但味道畧淡不夠入味。蠔餅($108): 我很喜愛吃蠔餅,賣相金黃色相當吸引,口感非常香脆但沒有油膩感,粉漿不算太厚,每粒蠔仔都很大隻,點些醋一起吃可減油膩感。鵝肝(大)($516): 口感非常嫩滑但欠鵝味,墊底的豆腐亦同樣嫩滑,吸收到鹵水汁咸味都很美味,雖然份量都算多但價錢偏貴,另外我會比較欣賞西式的烹調方式。沙嗲牛肉芥蘭($98): 看一看賣相已經覺得醬汁比較多和濃但味道卻畧為淡而且牛肉口感太淋疑似加了鬆肉粉,芥蘭爽口清甜。豉椒炒鵝腸($148): 鵝腸口感爽脆而且腸吸收了豉汁的味道非常惹味,青椒、洋蔥的配菜都很爽口清甜。韮菜豬紅($78): 醬汁味道濃郁,九菜吸收了濃郁很入味,豬紅口感嫩滑而且份量算多,點些辣椒油更美味,而九菜口感幼嫩沒有渣。黃金墨魚卷拼蝦棗($118): 墨魚卷和蝦棗賣相都不油膩,口感亦很鬆脆,粉漿不算厚,裡面有墨魚和蝦粒,點些醋會更美味。蠔仔肉碎粥($148): 蠔仔大大粒夠份量,而且份量都算多,粥的味道咸適中,加埋肉碎冬菜芫茜和方魚一起吃特別美味。反沙芋($98): 最後一碟當然是甜品作結尾,之前亦想點但侍應生說反沙芋售罄,可能時間尚早所以仍可點選,反沙芋的口感香脆,外脆內軟,可能現在是芋頭當灶,所以口感粉嫩味道香濃。我們嚐過美味的潮州菜已經非常滿足,準備離開的時候已是晚上七時,門口已經有很多客人在等侯,這足以證明食店很有質素,客似雲來。…Read More

位於西環嘅德記潮州菜館,屹立三十多年,早年更躍升為米芝蓮推介🌟。果然,一試無令我失望!依家仲要有埋香港大學地鐵站🚇,一出地鐵站斜對面就係餐廳所在,好方便!.一行三人,叫咗個四人餐.🍴滷水鵝肉片首先份量唔少,以呢個價錢來講真係估唔到出面一個碟仔都收百幾蚊啦味道方面,鵝肉甘香,肉質彈口肥膏同肉嘅比例恰到好處,爽啊!.🍴炸子雞(半隻)炸子雞其實睇個樣就知佢好唔好食一上菜,雞皮烤到金黃色,又有光澤咬落去非常脆口,雞肉肉質嫩滑多肉汁.🍴胡椒豬肚湯本身個餐係蟲草燉盅湯,但因為真係好想飲胡椒豬肚湯,餐廳好好人咁俾我哋轉胡椒豬肚湯最重要胡椒味夠重,呢點佢做得好好除咗胡椒味,仲附帶淡淡嘅鹹菜鹹香味我哋飲完一碗又一碗.🍴蠔仔餅超超超超超大份,圖入面其實係有兩層佢個蠔餅夠脆口,鴨蛋香味夠重落蠔唔手軟,啖啖都咬到好多蠔配賣魚露食,鮮味出晒嚟. 🍴雲腿大芥菜煲相比頭先嘅餸菜,芥菜煲就顯得有啲普通略嫌芥菜煮得比較林冇乜咬口.最後大家可以睇睇價錢四人餐咁多餸先$589,加埋一都係六百幾完全顛覆咗我潮州菜好貴嘅概念我哋三個人食,完全食唔晒質素遠超過價錢,性價比非常高有機會都好想再食多次…Read More

六月第一個星期五晚上,天氣悶熱。剛好下午在上環做完美髮,好友知道我沒有吃過潮州菜,於是他就帶我到這家有名的潮州菜館晚飯。遠處已見大批人龍聚集門外,好友介紹說,以前西環有不少潮州人定居,所以潮州菜館不少,而這家已有三十多年歷史,從前到現在門外的人龍沒有減退過,幸運地我們等了大概十五分鐘就被安排入座。對於中菜沒多大概念的我放心讓他點菜,先上粟米魚肚羹,非常喜歡吃魚肚,含豐富膠原蛋白,養顏美肌,而且裡面有非常多的蛋花,清香黏滑,粟米粒爽甜,味道濃香而不咸,口感層次豐富。鵝肉鵝腸拼盤,鵝肉不是很薄切,滷水醃得夠味,肉身偏瘦彈牙,故此可以大口吃鵝沒負擔。鵝腸沒鹵完以後完全沒一點腥味,爽脆鮮香,軟中帶嫩,非常開胃的一道小菜。煎蠔餅一端上來我們都傻了眼,那厚度,那份量根本不是外面一般的能相提並論。餅身完整不鬆散,每一口都吃到實在的蠔,油份不過多,鬆化香脆,無論賣相跟味道都讓人讚口不絕。最後我們點了一碗潮州蠔仔粥,潮式的粥就像泡飯一樣,在湯中加入米飯,粒粒分明,蠔仔的份量完全沒有在省,每顆肉身飽滿,獨有的海鮮味充份帶出其他材料如大地魚塊,肉碎等鮮香,整體甘甜味美,香濃清爽。餐廳每一道菜品都在水準之上,而且各有特色,菜式包萬有,上榜必比登推薦,長期駱驛不絕的人流,很高興能吃到這麼這質素的潮州菜。…Read More

26/3已經是第三次到訪了, 仍然多人, 加上港島西鐵路開通, 交通更方便.是日到達時間是六時, 才可以立即有位. 加上反沙芋製作須時, 要立即點, 立即做, 立即上菜, 才肯幫我們做, 否則晚了人客多, 就沒時間做了. 我們為了食, 當然沒問題, 甜點鹹點一起吃. 果然沒有叫錯, 很香的芋頭味, 一定要趁熱吃. 有人覺得表面的糖太多, 那麼可以自行咬返出來不吃. 但作為甜品, 是應該甜一點的.鵝片拼盤, 在這餐來說應該貴貴地, 因為有很多鵝片, 底下亦有其他魯水野及豆腐.蘿蔔洛雖然熱氣, 但好味, 要趁熱吃, 因面頭的脆脆會唔再脆. 細細粒, 容易分. 轉眼就掃清了.蠔餅, 好多塊, 也是要趁熱吃, 蠔都好大粒, 所以吃得出蠔味. 但相比反沙芋及蘿蔔洛, 因為較多地方可以吃到, 就沒有那麼珍貴了.總之就好忙, 因為上菜快, 食物又要趁熱吃. 吃完之後又看到街外長長的人龍, 所以沒有再坐行久了. 忘記了每人多少錢, 總之是出奇地抵食~…Read More

朋友生日一班男仔想搵經濟又有圓枱既地方食野有人提議去德記打冷自從有香港大港站之後 去德記變得好方便 一出地鐵站就到一坐低未點菜已經放低左幾碟前菜分別係花生,菜甫豆腐同咸酸菜都係唔錯既開胃小食 食完等人齊同睇menu一睇menu 除左海鮮 大部份菜式都係一百蚊樓下都算經濟我地點左以下幾樣去打冷必點鵝片, 德記都整得唔錯鵝片唔軔 鹵水汁好入味不過份量比較少 只有大約8片 有4舊大豆腐墊底賣相唔錯 但唔係好夠味 唔夠鹹又唔夠辣好彩有調味可以點 還可以好大份 粉漿同蠔既比例適中又唔會炸到好乾身如果多d蠔會更好蝦棗我聽都未聽過 點來一試原來好似泰式蝦餅咁 不過整做球狀墨魚卷同蝦棗表面都炸到好脆裡面分別係軟身釀墨魚肉同蝦肉 口質很好配搭附上既酸甜醬 味道更為一絕好普通既蒸魚 麻麻地下次去打冷都係叫返凍魚穩陣宜個menu係冇既 我朋友想食就問下待應有冇待應照落單 整到出黎竟然有驚喜唔似一般西檸雞既做法宜度既西檸雞炸粉外面黏滿杏仁片 好特別食落口比一般既更加脆最後黎個炒飯 味道正正常常但份量比想像中少總括黎講德記既菜式唔算特別出式 份量都唔係多不過勝在價錢唔貴 可以試多幾款菜式我地7個人飲埋啤酒都係每人$180左右而且香港既打冷店好多都係好小型未必有大圓枱坐得咁舒服所以宜個都係德記既賣點如果一班既話 可以考慮一下德記…Read More

德記搬了新舖差不多兩個月,地方大了,門口的人龍依然,不過入座安排依然有點混亂。光顧了兩次。第一次由於有老人家,很多東西都不能吃,只要了豬肚湯、鵝肉、梅子燒烏頭、炒菜、兩面黃等。兩面黃不錯,煎得不會再乾。豬肚湯有胡椒味之餘也鮮味。梅子烏頭幾得意,酸味味,但梅子味太濃,令烏頭味盡失。第二次和老婆來就自由得多,就點了個二人餐,有胡椒豬肚湯、魚湯浸菜、八寶蝦子海蔘、一塊蠔餅,另再加一碗蠔仔粥,和一杯鹹檸七。蠔餅確不錯,香口之餘又保留了鮮味。八寶海蔘用料十足,海蔘夠大塊,又有帶子、汁內又有江瑤柱。蠔仔粥鮮味,當中有些炸脆了的方魚,令口感更豐富。鹹檸七有驚喜,個鹹檸已冧晒,一督就散,雖不算太鹹,但味道十足。而且那罐七喜已雪凍,杯內沒加冰,不會愈飲愈淡。埋單$221,食到飽飽。店內的老伙記都是中年以上,快手之餘,態度也不錯,起碼比很多所謂大集團的連鎖酒樓好。…Read More
