要是問大家"我最喜愛的地方菜式",相信日本菜絕對是大眾揀選的前5位吧?!其中又以日本的海鮮最為誘人。近年香港興起一股浜燒熱,即是在海邊即捕即燒新鮮海產的傳統日和料理。試想像在日本海邊將捕獲到的海鮮即時放上烤爐燒烤的滋味,只是想像都令人興奮,現在身處香港也能嚐到這種鮮味,愛好嚐鮮的港人又怎會不趨之若鶩 。位於尖沙咀廣東道的一間浜燒食店,是筆者近期所吃過的第二間日式浜燒專門店,一様以浜燒為主打,這店更貼心已為客人擬定了菜單,明 碼實價,實行以最新鮮食材呈現浜燒的精髓。一到門口就見大魚缸內的海鮮向我們招手,店內由日籍廚師主理,裝潢充滿日本情懷,周圍掛上了日式掛布,木製枱櫈加上放滿清酒的裝飾台,還有室外露台小雅座,時尚帶傳統味道的設計滲出悠閒舒適之感,讓人不其然放鬆下來。我們二人選了松二人前,有齊沙律、刺身、浜燒海鮮、菜蔬、主食和甜品。 一向愛好杯中物的筆者,還點了口味較清淡的純米大吟釀清酒贈興。等候上菜期間,店員還貼心地送上一客燒雞泡魚干,當作為佐酒小食,實在窩心。先來的是蟹肉沙律,一絲絲雪白色的鮮拆蟹肉加上脆彈蟹子,放在翠綠爽口的沙律菜上,配上充滿芝麻香、微酸的胡麻醬汁,健康清爽,是一道十分到位的開胃菜。接著到刺身拼盤登場,內有三文魚、劍魚腩、赤蝦、加拿大海膽和活赤貝,三文魚新鮮軟滑,劍魚腩肥美脂香,赤蝦鮮甜爽彈,加拿大海膽入口Creamy甘香,最正的是活赤貝刺身,非常爽脆鮮甜,帶著濃濃的海洋氣息。值得一提的是,此店採用了生磨的山葵蓉,清香而不太攻鼻,配上醬油佐著刺身同吃,更能帶出海鮮的鮮味。跟著的就是主角浜燒盛合,有齊活伊勢海老(活龍蝦),蟹肉蟹膏甲羅燒,活帆立貝,活鮑魚,日本蠔,活刀貝等,全部海鮮都是在魚缸新鮮即撈出來,端上來時還在微微蠕動。全程都有專人代燒,很有氣派的服務,店員的態度與技術都很專業,從貝類起肉到龍蝦開邊,手法都駕輕就熟,間中還和我們談笑風生。活帆立貝,珍寶尺碼,店員以清酒及淡醬油輕輕調味,入口軟彈,完全能吃出貝肉的鮮甜原味。活鮑魚尺碼中規中矩不算太大隻,端上來時還在蠕動,雖然有點不忍,但足見極度新鮮,店員將之燒到剛熟,入口鮮嫩彈牙。日本蠔燒至僅熟,蠔肉漲卜卜,蠔味清甜濃郁。活刀貝類似平時的大花甲,但更為厚肉,加入了少量清酒同燒,味道鮮甜爽彈帶點海水味。伊勢海老(活龍蝦),店員將龍蝦開邊後,放在爐上慢慢燒熟,期間掃上牛油,爐火瞬間燒得火紅,畫面壯觀,龍蝦肉質結實彈牙,帶著淡淡牛油香顯得更鮮味香口。最後是筆者期待的蟹肉蟹膏甲羅燒,蟹肉和蟹膏加上鵪鶉蛋放在蟹蓋內拌勻燒香,沒有加上太多調味,陣陣蟹香徐徐飄來,燒至稠身後便可享用。此店的甲羅燒蟹味濃郁,味道較外邊的為淡,但相對原汁原味,店員還送上了一碟薯片,原來是用來佐著甲羅燒來食的,配搭很新鮮,薄薄香脆的薯片,配上濃厚甘香的蟹醬,口感豐富特別,創意滿分。其他還有一品料理…唐揚日本產雞件,炸雞件外脆內軟,脆皮很薄,咬落汁豐肉嫩,味道不俗黑松露野菌錫紙燒,黑松露和野菌一向是最佳拍檔,而這店的黑松露醬用料一點也吝嗇,配上本菇和雞脾菇燒熟,兩者相互交融之後,菌香滿瀉,帶著淡淡牛油味,口感濕潤爽脆,好味到讓人吃到停不了口。野菜牛肉鍋燒烏冬,薄牛肉片伴上爽甜娃娃菜,還有煙韌軟滑的烏冬,份量頗多,筆者最欣賞的是這個烏冬的湯底,湯色清澈得像白開水一般,但神奇地入口味道清甜,還帶點牛肉香,盡顯大廚功夫及心機,令人驚喜。最後不得不提一下這店的柚子雪芭,非常軟滑清甜,令人一試難忘,清新一下味蕾之餘,亦為這頓晚餐畫上了完美句號。這頓海鮮之旅,由環境、味道、招呼以至海鮮質素都無話可說,令人喜出望外,而且每位索價六百多元,有齊刺身、活龍蝦及多種海鮮,加上沙律及幾款熱食,還有專人招待,實在是物超所值,性價比算高,下次一定要約齊大班朋友過來Encore一下。…Read More

之前情人節既時候已經好想試呢間但就Full Booking,難得要同朋友食生日飯,即刻帶佢黎試下浜燒,果然真係有驚喜。 今次我地兩個女仔胃口唔係真係好大,所以揀左$640/位嘅浜.松二人前,但其實睇個都已經覺得好多野食好豐富咁!先黎前菜有蟹肉籽野菜沙律,呢個蟹肉沙律真係有好多鮮蟹肉碎,食得出有鮮甜味,同埋沙律菜都好新鮮,而且跟餐前菜黎講佢份量都幾多,真係估佢唔到。 之黎到刺身4點,有加拿大海膽、赤蝦、三文魚、劍魚腩。 刺身都好新鮮,海膽好甜,赤蝦好大隻同埋鮮甜爽口,另外劍魚腩同埋三文魚都好肥美同厚切,整體質素好好。 黎到重點喇,呢個浜燒盛合真係睇到我地雙眼發光,所有海鮮都好新鮮,鮑魚同海老都仲識彈下彈下。同埋呢到真係好好,因為侍應會幫係燒埋,而且係等你食完一樣海鮮再上另一樣,時間岩岩好!至於味道方面呢,我真係好欣賞佢地冇咩點落調味料,完全食到海鮮既鮮味,而且海鮮既肉質都好好,特別係活鮑魚爽等黎唔韌,同埋真係有鮮味,而日本蠔陣燒過既海水味都幾正。另外平時食燒蝦成日都食到燒到好鞋或本身唔新鮮,但呢個海老就好爽口同有鮮味,水準真係幾高。 另外佢嘅蟹肉蟹膏甲羅燒係侍應現場撈既,同樣有鮮甜蟹肉味,配埋薯片食好正。 另外一品料理就有黑松露野菌錫紙燒同埋居揚日本產雞件。 先講黑松露野菌錫紙燒,黑松露真係鋪滿野菌表面,無論聞定食落都有好香既黑松露味; 而居揚日本產雞件就炸得都幾香同皮薄,味道都唔差。 另外個Set仲有野菜牛肉鍋燒烏冬,呢個烏冬本身個湯冇咩味,主要都係野菜同牛肉既味,清清地都幾岩係食完咁多野之後食。 另外佢嘅牛肉都幾嫩滑,同埋幼烏冬都好彈牙,都唔錯。 最後緊係要食番個甜品作結啦,呢個日本柚子雪芭味道好清新,酸酸地甜甜地,食完都唔會太滯,完全係0罪惡感,哈!雖然呢到價錢唔算平,但一分錢一分貨,佢既食物同服務水準都好高,所以我都會將佢列入我既翻食List入面架!…Read More

前排去完日本,就算返到嚟香港仲係好掛住日本嘅海鮮,日日夜夜都同朋友講想食海鮮,今日終於有朋友帶我嚟依間燒海鮮嘅日本餐廳所以我由上星期已經開始期待。朋友話依間餐廳通常都滿座,要早啲book枱,好彩book咗,唔洗等就已經可以入座啦。首先我哋揀咗左邊個二人餐,入面已經包括有蟹肉蟹籽沙律,刺身四點,燒海鮮,黑松露野菌,炸雞,牛肉烏冬鍋,同柚子雪芭作為甜品。蟹肉蟹籽沙律其實都幾大碟,同埋蟹肉真係好多,蔬菜亦都好新鮮爽口,醬汁酸酸甜甜的,很開胃。之後上嘅就係刺身四點,擺碟夠精美之餘刺身嘅色澤好靚,每個刺身面都好有光澤,而且好厚身。三文魚雖然唔算好肥,但非常厚身,好好味,而劍魚腩就夠晒肥美,兩樣都好鮮甜。不過如果講鮮甜就不得不讚佢哋嘅海膽,係我喺香港食過最鮮甜嘅海膽,一啲都唔腥!唔洗點豉油都好好味而赤蝦真係我嘅最愛,蝦肉厚實,點少少豉油食,個鮮甜嘅後勁好強,食完個口都仲保留到個種甜甜地又清爽嘅感覺隨即就主菜就上枱啦!一睇已經覺得好驚喜,因為你會見鮑魚同龍蝦係仲郁梗嫁真係好新鮮!之後會有職員幫你燒埋,服務好好喔!而且仲會幫你剪細啲,方便進食。活帆立貝就味道最清,所以先食佢,肉質彈牙,而且職員煮嘅時間岩岩好,保留到爽口嘅口感。蜆肉就不過不失,都唔錯。日本蠔就好得我朋友嘅歡心,因為真係好有海水味!而且唔會燒完就縮水,燒完仲脹卜卜,好多肉同夠晒肥!我就覺得鮑魚最正💕因為真係真係好肥美同埋大隻得黎又好彈牙,非常有咬口。而且好入味!依個蟹肉蟹膏甲羅燒又係令我好驚喜,其實之前都係食過依樣菜式,不過真係依間最好味!比起我之前食個啲濕潤得多!而且份量都好多,啖啖都滿滿嘅蟹肉,而且蟹膏都好多,好有鮮味,一啲都唔腥!會有一碟薯片俾你搽上去食,咁食就更有口感,香脆嘅薯片配上滑身嘅蟹膏,令到蟹肉蟹膏嘅鮮味更突出!總括黎講,依個燒海鮮盤真係值依個價錢!絕對係有誠意,食物都好有質素!依個黑松露野菌都好好味,黑松露嘅份量都好多,一放低個浸黑松露味已經好吸引,而且野菌好入味之後就上炸雞同牛肉烏冬,炸雞值得一讚嘅係你見佢大大件,會以為一定好厚炸粉,但咬落去竟然只有好薄好薄嘅一層,比雞皮更薄!真係貨真價實,仲炸得好脆牛肉烏冬口味係好清,但係湯入面有牛肉味同菜嘅清甜,牛肉都係用靚牛肉嫁,牛肉好柔軟,肉味濃,而烏冬就用幼身嘅烏冬,夠彈牙又索味。最後有柚子雪芭做甜品,真係比一般雪糕出色,而且柚子味好濃,仲食到一粒粒嘅柚子皮,可以清一清口氣。雖然價錢係唔平,但真係物有所值,服務態度亦非常好,keep住會幫你沖茶。環境亦都好舒服。…Read More

近排食過幾間浜燒, 不過要數最出色最用心既, 就一定係呢間位於尖沙咀既浜燒從呢個頭盤, 就已經感受到佢地既誠意蟹肉好有鮮味, 唔係罐頭野, 而且好足料刺身更加唔洗講主角黎啦 自從上左呢個盛合, 侍應姐姐基本上都無離開過張枱, 逐樣逐樣燒完先離開而且所有海鮮都燒得恰到好處, 唔會太熟, 亦唔會落好多調味料黑松露味道好出, 不過味道偏淡大大力推介既甲羅燒平時食開既甲羅燒, 會好重麵豉味, 但呢到係滿滿既蟹肉同蟹膏由頭到尾都係蟹味, 配有少少鹽既薯片, 超滿足無芝士, 無蒜蓉, 只有啖啖龍蝦味, 已經好鮮味炸雞令我地超級驚喜, 外面脆裡面超級Juicy! 無諗過一個set既小食都可以整得咁好食烏冬好彈牙! 味道都係偏清自家製柚子雪芭, 食到小小的柚子粒…Read More
