平時冇乜幾可會入筲箕灣,今次入去搵朋友,地膽話食呢間就信佢啦!常見小菜同打冷菜式都有得揀,仲有幾款較有特色ge「煮打菜」。打冷唔想左諗右諗,所以叫左滷水拼盤(小),三個人份量岩岩好,每款都不錯,唔會滷得大鹹,醋、辣椒油同埋魚露任你點,另有芽菜執底,幾爽口。潮式爆花蠔餅擺設好似Pizza,d脆脆真係好爆!食落「索索」聲,非常鬆化,仲一d都唔油,唔會炸到好似食緊薄罉咁咁多麵粉,蠔仔份量合理,都幾大粒,新鮮無沙。蜜椒薯仔牛柳粒就食得多,但蜜椒吊燒骨都係第一次食,排骨肥瘦適中,夠晒淋,炸完再落鑊加埋蜜糖黑椒兜兩兜,排骨掛滿晒蜜椒汁,面頭再灑上腰果碎,極之香口,送酒一流。蝦醬落得岩岩好,香而不鹹,通菜亦夠新鮮爽脆。紅燒茄子排骨煲好足料,茄子拉過油保持到紫色,排骨亦同蜜椒吊燒骨一樣係好貨色,熱辣辣!香噴噴!我地好鍾意食蠔,一碟蠔餅點夠喉,整窩蠔仔肉碎粥先,蠔仔同樣新鮮飽滿,加埋芫荽真係一碗接一碗,最後全窩清晒!…Read More

同2位朋友行街,其中一位朋友話好攰唔想再行,咁啱路經一間餐廳,於是就入去坐,順便當早D食晚飯。可能係太早嘅關係,餐廳裡面唔算多人,其中一位朋友仲細細聲講間野冇人會唔會中伏架佢主MENU係紫色嗰份,而另外黃色MENU就精選D菜式做廚師推介。最後我同朋友決定叫 紅燒茄子排骨煲($88)、蜜椒吊燒骨($98)、滷水拼盤(小) ($88)、蠔仔肉碎粥(每窩$102)、蝦醬通菜($70)、潮式爆花蠔餅($96)蜜椒吊燒骨呢個食落有驚喜,佢喺排骨表面搽上蜜糖再燒,表層食落有D焦糖香,黏黏地甜甜地,而裡面肉質食落軟滑,肥瘦適中滷水拼盤(小),裡面有 墨魚、紅腸、腎、腩肉、大腸、生腸、豬耳、鵝腸、喺底下仲有D芽菜。雖然叫做小,但其實份量都唔算細下。味道都OK,但如果可以滷得再入味少少會更加好,佢上菜時跟左3隻醬俾你點黎食蝦醬通菜,炒得好惹味,唔會太重手鹹得濟,水準之上潮式爆花蠔餅上菜時成個PIZZA咁佢唔會好似部分餐廳D蠔餅咁,蛋漿加蠔仔喺平底鍋到煎到扁一扁咁,係會見到佢係有個層次喺到,所以食落口感夠鬆脆,唔會成口油,有少少蔥花調下味,同埋蠔仔數量都算多紅燒茄子排骨煲,茄子同排骨都煮得夠淋夠入味,但始終都係唔及漁香茄子煲嗰種煮法咁惹味蠔仔肉碎粥(一窩),呢個份量係好大,建議起碼4個人先好嗌除左份量大,落料都好足。成碗粥熱辣辣,食落去好香蠔仔隻鮮甜味,佢莞茜另上,啱晒我呢D唔食莞茜嘅朋友大合照3個人食連埋加一$596.2,雖然價錢算係少少貴,但佢每碟個份量都好大,味道又好有水準,都算值得題外話: 食到咁上下,愈黎愈多人,仲開始要等位,好彩食得早唔駛等…Read More

「煮打」位於筲箕灣道旁的小街裡頭,距離A3地鐡站出口的確不算遠,路程約10分鐘,當然前提是你先要做好路線圖的功課@!望望餐牌,港島區的消費指數的確相對較高,平均也要$70-80一個小菜,唯有期望質素也有相應的水準?蒜蓉果皮蒸白鱔 $198聽聞蒸白鱔是這裡的招牌菜,現在不少餐廳都較少供應蒸白鱔的菜式,一般都以豉汁蒸為主,取其濃郁的豆豉味為鱔調味,這樣反而蓋過了海鮮的鮮甜味,難得煮打敢以蒜蓉果皮清蒸,相信餐廳一定對食材的鮮味有十足信心。以砂鍋上菜,單看賣相已風味十足,白鱔煲以濃厚的蒜泥鋪底,鱔件則鋪在上面,配以大量的芫茜等。細味之下白鱔肉質鮮甜、幼滑,蒜味完全融入白鱔,蒸白鱔的火候拿捏恰到好處,否則鱔肉太老,會變「鞋」口,影響味道。若然你喜歡重蒜的口味,這裡的鱔煲絕對是你杯茶。由於鋪底的蒜泥太濃,我認為鱔件再沾點蒜泥會完全蓋過鱔的鮮甜。整體而言,這裡的蒸鱔絕對值得一試,至少你不容易在外頭的餐廳吃到這樣蒸鱔手法 @!蜜椒吊燒骨 $98餸名叫「蜜椒」,名乎其實的「蜜汁」和「黑椒」為主要調味。燒骨肥瘦比例均勻,咬下去會發現外面的瘦肉包住肥肉,口感平衡而豐富,十分滿足。不得不佩服廚師的功力,蜜汁的甜美完全包裹著燒骨並滲透到瘦肉當中,與豬肉配合得天衣無縫。送飯一流!!魚湯海味浸白菜仔 $78望到奶白色的魚湯,相信都不用多費唇舌介紹有幾正,最後忍唔住當湯飲了幾啖。反而值得介紹的是配菜的魚干仔和蝦干,大量的魚干仔香脆可口,為軟綿綿的湯浸白菜仔帶來不一樣的口感。此外,蝦干也是優質海味的貨色,原條咬下去充滿海水的咸香,猶如頓時置身大澳海味街。滷水鵝片 $88此店滷水汁味道適中,鵝片則略嫌偏瘦,本人較喜歡7-3比的瘦肥比例,但這裡的鵝片則近乎8-2 甚至 9-1 的比例。除此以外,滷浸鵝片的火喉剛好,而墊底的豆腐則以新鮮取勝,豆味十足,但夾起手則容易散開,廚師亦可能因此而不敢長時間滷浸入味,結果豆腐入味程度未夠理想。…Read More

因為朋友新居入伙, 第一次踏足筲萁灣順道吃一餐便飯。人多少少食小菜好點餸嘛~作為一個外來人, 如沒有朋友介紹或查看網上資料未必會留意煮打的位置。要先行上一段小斜路再轉入內街, 門面低調得街坊先識食七點的晚飯時間人潮己至, 只剩一兩枱空置。甫坐下朋友已經好熱情介紹佢既心水推介, 我也配合全權比佢決定。老火例湯 (4-6人用)出外飯局多自然想飲老火湯湯潤一潤,是日為大白菜豬肺湯,夠哂滋潤啦呢度點菜好有自由度,湯已經有數個選擇,有一碗湯 小煲 大煲 燉湯。我地點既係大煲,勺出六碗絕無欺場~唔知係唔係原煲放入蒸爐呢?上枱湯竟然在沸騰大白菜煲到剛剛開始爛。湯好清一滴油都無,而且無味精少鹽非常健康。因為材料多,少鹽都唔會覺得湯淡味蜜椒吊燒骨自創菜式誠意推介呀!蜜椒並非甜椒,而係蜜糖加黑椒的配搭。排骨用中式咖哩粉醃完再炸,外層是煮杰了的蜜糖,緊緊包住香味唔怕邊夾邊滴。驚喜的還有排骨厚肉卻只連細骨生愊白鱔煲 (蒜蓉果皮)鱔有啫啫煲亦有風沙炸的煮法,白鱔煲朋友想食原味揀左蒜蓉果皮。白鱔比黃鱔肉更肥美更淋滑,而啫啫煮更能保留水份。食到底仲有大量蒜頭乾蔥,難怪鱔肉唔需要點汁都咁入味,撈飯最好。鵝片 (淨肉)平日打冷點一碟鵝隨便就要過百,呢度起埋骨先賣$88, 更送滷豆腐墊底呢。鵝片都有十幾片,片片肉質都好細嫰架。豆腐用新鮮磚豆腐,原來滑豆腐好吸花椒八角味只係汁方面有魚露同香辣油,缺少潮式蒜味白醋平衡一下魚湯海味浸時菜 (白菜仔)本來我想點粉絲雜菜煲,但朋友食過呢款想大家試。時菜當日有勝瓜生菜白菜仔。魚湯浸菜之上乾海味疊的高高的,海味指既係炸白飯魚仔,蝦乾,鮮魷魚。魷魚用新鮮貨所以好滑口,另外有切絲既鮮冬菇融入海味中,自己係屋企整唔到架。飲過豬肺湯仲有魚湯飲,竟然用真材實料隔渣煲到奶白色,又是一滴油都無。食到尾用湯浸魚仔又是另一番風味餐廳行住家風格,少油少鹽無味精,難怪咁多街坊都識佢大名啦…Read More

煮打菜呢間菜館我之前和同事食過兩次,覺得呢度D野食好好食同好地道,所以今次就特意帶男朋友的家人前來試試。我地總共點了5個菜及2個炒粉麵。滷水拼盤拼盤食物種類很多,而且排得整整齊齊,有豬耳、八爪魚,雞腎,大腸,豬腩肉等等。整體味道不錯,但略嫌鵝肉太肥。蜜椒吊燒骨佢個蜜糖醬汁調配得好好,甜甜地,幾開胃,而肉質都好鮮嫩,唔會話太肥或者太瘦。豉油皇大蝦豉油皇大蝦最緊要一定係個豉油啦,而佢的確整得好好,醬汁惹味,有少少甜甜地,但略嫌上菜時不夠熱。潮式爆花蠔餅蠔餅炸得非常香口而且鬆脆,而裡面亦有好多隻蠔,隻隻都好飽滿,十分足料。籠仔荷香蒸爆牙肉餅今晚既主角終於黎啦,呢個肉餅佢有好多配料俾你簡,包括鹹魚,鹹蛋,土魷等等。而我地就簡左銀魚仔。佢地既肉餅比一般餐廳整既肉餅彈牙好多,肉餅之間亦都加入豬耳,令彈牙之餘亦會有爽口既口感,高度推薦 雪菜肉絲炆米及揚州炒飯份量十足,鑊氣十足,我地一行六人叫左兩碟粉麵都好夠飽。食完晚飯之後,最驚喜既就係竟然仲有糖水送,成個"家的感覺"即刻出哂黎。而我男朋友的家人對呢間餐廳都有讚無彈,所以下次我一定要再帶他們來吃。…Read More

今日相約住在筲箕灣的老朋友,他介紹去間紮根已久的打冷小菜店,我們到店的時候還早,不用等就可以入座,但到真正晚飯時間,店內已人來人往了!細滷水併 併盤包括有生腸、豬耳、香腸、豬腸、滷肉、魷魚、等等… …滷肉充滿著滷水汁的味道,又腍又軟,魷魚煙煙韌韌,絶對是水準之作。蠔餅蠔餅炸得金金黃黃,熱乎乎的,很鬆脆,中間部份有不少的蠔仔,加上一點魚露,令整個蠔餅的味道更上層!真芝士拉絲蝦丸一碟八粒的蝦丸,熱辣辣的皮很香脆,口感爽口彈牙,中間加入味道濃厚的芝士,一咬下還可把芝士拉得很長呢!配上特製的甜酸醬,也很不錯!蜜椒吊燒骨吊燒骨肥肉均勻,肉質很軟腍,香甜的醬汁非常惹味,味道夠濃,食多兩件也不覺得肥膩!銀魚爆牙肉餅呢個爆牙肉餅是得獎菜式!眼見八成的客人枱上都有一碟,自然應該就必食吧!肉餅面層的配料是可自選的,包括有鹹蛋、土魷、鮮魷、銀魚、鹹魚及梅菜,我地就選了銀魚。肉餅以蒸籠上菜,以荷葉舖在底部,面層就舖滿數之不盡的銀魚,肉質不死實,入口肉汁多,香濃又彈牙,原來肉餅加入左豬耳,所以比一般的肉餅較為有咬口,師傅果然是有心思,難怪是得獎的招牌菜式!魚湯海味時蔬最後,來個魚湯小白菜,清甜的魚湯配上新鮮小白菜,一個簡單的菜式也不會做得馬虎,也是最能看到師傅的功力喔!筲箕灣的老朋友果然是好介紹,下次一定會再來探探這位老朋友啊!…Read More
