在香港,想起潮式打冷,想必一定會聯想到在街旁的大排檔,撐著摺檯和摺椅,拿著支裝的啤酒,大快朵頤的情境。這次來到這間潮式打冷店,幾年前在新蒲崗一試難忘。轉眼間數年後,晚上閒逛過後,口癢癢想吃潮式打冷,又再想去這間【陳儀興飯店】。從小到大的都愛吃潮州菜,不論是蠔仔粥,凍蟹,鵝片,蠔餅等等通通都喜歡吃。如果呢間飯店在的家附近的話相信是家人最愛飯堂。.【陳儀興飯店】位於崇齡街,但它是有分店的,相隔大約一街有另一店舖,相信是想分隔人流吧,畢竟也是該區的老字號了。店內光猛,相比一般的打冷店較為企理乾淨,坐得都幾舒服,入面設明檔,吊着滷水鵝、紅腸、豬大腸,桌上有大眼雞、鵝肝鵝腸、鹹酸菜、滷蛋豆腐、韭菜豬紅,百花齊放,任君選擇。還有多款小炒,喜歡牆上貼滿圖文並茂的菜式,清楚易明,更快揀到心頭好,仲加入左調皮介紹,如涼瓜煮雞蛋寫着「吾係週圍有」、避風塘炒蜆「上報率最高,有辣有勁辣」。創意十足呀!BTW道道菜都好吸引!點了三樣食物,「蒜香骨、澄海鹵水鵝、潮式炸蠔餅」第一樣到來的是澄海滷水鵝 $90「滷水鵝之鄉」,澄海。澄海的鵝,有如香港的燒味,每一條街,都有滷水鵝店鋪,總有一家在附近,在哪裡吃滷水鵝,非常講究。滷水鵝淋上熱滷水後上桌,滷水汁恰到好處,滷得入味,鵝肉尚算嫩滑,但並不是件件皆是,食落去肉汁豐富。㸃上辣椒醋汁,酸酸辣辣又惹味。底部仲有滷豆腐墊底,一樣入味。份量跟想像中差不多,好像平時外而吃的例一樣吧。呢個時候配配白粥就最棒了。蒜香骨 $75 蒜香骨,重點只在醃味,沒有特別的技巧,這裡另一樣多人點的就是它,究竟有什麼特別呢?蒜香骨新鮮即炸,熱辣辣上枱。蒜香骨外層酥香味美,內裡口感非常的棒,件件都厚肉,沒有過多的油膩感,蒜香味好重,給果好喜歡蒜味既你,應該會好鍾意。潮式炸蠔餅 $70打冷見到潮州蠔仔餅都會必點的吧,總共兩小餅,兩個人食,一人一餅,剛好。市面上的蠔餅,家家都有自己獨特配方而呢個蠔餅粉醬厚薄適中,炸得香口不油膩,口感好爽脆,亦有結實質感。另一方面蛋香味濃而蠔仔比想像中多,蠔仔大小屬小巧,未去到飽滿的形容,但入口不腥。整體調味幾好,好夠熱同脆口,如果想更加好,蠔肉大一點會更有口感吧。㸃埋醬汁會更突顯蠔仔餅的風味喔。上菜速度又快又熱辣辣,正宗的打冷風味令人滿足而歸,可能是老店的關係,會感受到人情味濃,員工非常以禮待人,而且價錢街坊價,沒有收加一。絕對值得專程而黎一嚐【陳儀興飯店】呢個老字號。正宗的味道,換來有口皆碑,就算是地址在哪都好,也可以靠實力贏得客似雲來。…Read More

每次經過新蒲崗見到呢間陳儀興飯店都會被這間餐廳的店名和招牌吸引,這個雲石金漆招牌,一看便知道是老字號。剛好今日的飯腳其中一名就在新蒲崗工作,我們二話不說就約在這間地道潮州餐館~除了門口的明檔很吸睛以外,店內的牆上貼滿圖文並茂的餐牌,還有配上字句介紹菜式,設計用心又有香港特色~潮洲菜必點的當然是滷水,滷水鵝腸從廚房送出來時已經聞到香噴噴,滷水汁恰到好處,不會太咸。驚喜的是鵝腸夠肥,中間還夾著肥膏。底下還有吸盡滷水汁的豆腐,也是不能錯過~潮州菜當然也要有蠔餅,蠔餅炸得香脆而且不會太油膩,滿滿的蠔仔也很鮮味。原本以為魚湯浸大蜆會比較清淡,但反而胡椒味突出,加上吸收了湯底的粉絲,層次更豐富。除了一般的潮州菜外,餐廳也有不少小炒的選擇。其中最令人期待的就是大漠牛柳粒。牛柳粒和四季豆先油泡過,十分香口,加上炸蒜和果仁更加有口感~而且微辣令整個菜式更惹味。避風塘茄子也是另一特色菜,茄子沾上一層薄薄的炸粉,做到外脆內軟的效果。與其說是避風塘茄子,我認為更像辣子茄子,香辣味足~喜歡香口菜式的也要點蒜香骨,蒜香骨肉質鬆軟得來沒有醃粉的味道,配上炸到金黃色的炸蒜,非常下飯。老字號果然性價比高,而且沒有加一收費,每人$150埋單,非常划算~…Read More

今晚又過來新蒲崗,做完野已經九點幾,宵夜時段最好梗係去打冷啦。但咪以為好容易搵位,去到陳儀興,仲係爆曬場要等位,好彩唔算等好耐,不過就要去佢隔離街嘅後舖坐,其實隔離街同正鋪都係相通的,大部分食客都會知道。其實除左打冷之外,呢度嘅小菜都好出名,選擇多又可以自由配搭,我地馬上Order左幾款打冷小菜等食。首先出場嘅係元朗黃油烏頭,滷水鵝件。正宗嘅本地黃油烏頭,有哂身份証明架,絕對唔係粉絲當魚翅。特登比大家睇下佢幾咁黃油,肉味零捨不同,甘香嫰滑,真正食魚🐟有魚味,仲要係啖啖肉滷水鵝件,當然是打冷必點的菜式之一,喜歡連骨一起啜的感覺,和鵝片啖啖肉是截然不同的食法,連骨頭一起吃是可以品嚐到肉和骨的精髓,特別適合送酒。大漠牛柳粒,大量的配料把牛柳粒隠藏著,配料的精華滲透至牛柳內,香辣而不嗆喉,又是一度送酒佳餚。蒜香骨,炸得金黃的酥香外層,上枱時蒜香的味道已經四溢,火候控制適中,不溫不火,外皮香脆,肉香味濃,十分滋味。炸蠔餅,其實不須多介紹,所有炸物,重點是油嘅質素,和油溫要高,將食材用高溫迫出濕氣而又能保持食材新鮮,絕對不像一些採用千年油將食物浸熟的餐廳,還有蠔的大小適中,配上少少魚露提升鮮味,不可錯過啊。韭菜豬紅,也是打冷必點菜色之一,大大件方形大小,挾起也不容易散掉,送粥送飯一流。高朋滿座,大家把酒言歡,風花雪月,這種港式地道風味,久不久就要來回味一下,這間傳統老店,屹立這區多年,晚晚爆場,無人不識,無人不曉。…Read More

早排返左大陸玩左兩日潮汕美食鴨仔團,對當中嘅潮州滷水併盤念念不忘。就係同團友人介紹之下一行五人黎到陳儀興再食多次潮州菜。估唔到呢度店面細細,但座無虛席好彩友人一早過黎攞位先唔使等咁耐。一坐低即刻點左個三點蟹先,因為係旅行團有機會食的但礙於內地嘅生蟹安全所以無食到。但返到黎香港係呢度當然放心大吃特吃啦。呢個三點蟹醃鮮真係無得頂,鹹甜有致當中蒜頭、辣椒與香料味均勻,一口吸吮軟腍的蟹肉,嗰種醃漬鮮味着實令人難以忘懷,其間仲隱隱散發出酒香令蟹肉嘅味道層次更深厚。而且唔會死咸,空口食完都唔覺口渴。螄蚶的鮮甜又係另一種享受,因為醃漬螄蚶嘅醬汁偏淡口,所以將肥美螄蚶肉連血水一併吃下,那種鮮甜可算話敢試嘅朋友一定會愛上。加上特別開殼夾,輕輕一啪就將蚶肉取出,一粒接一粒送入口十分過癮。之後就係打冷必點之一,酥炸蠔餅。雖則經過油炸但無乜油羶味,係酥脆粉漿包裹下蠔仔肉仲保持濕潤。同埋調好左味食落唔有蠔仔腥味,輕輕點一點魚露提鮮,香口又好食。滷水鵝,單睇外觀上晒色就知道滷左夠耐。入口鵝肉腍身中帶點咬口,又夠入味當中嘅鵝油、鵝汁與滷水融為一體色香味俱全。因為知道呢度嘅滷水夠正,所以再追加埋個鵝肝。經過低溫及長時間浸熟鵝肝,入味之餘仲保持鵝肝嫩滑絲質口感,唔知仲以為自己食緊下面墊底嘅豆腐。食完滷水香味同鵝肝甘香亦充斥口腔內,久久不散。而且不能錯過墊底豆腐片,因為佢吸收晒滷水嘅咸香同鵝嘅精華,絕對唔俾鵝肉同肝遜色。鵝腸非常爽口,拉得也很直而且依附在腸衣的肥膏沒有全數刮走,所以食時仍會有淡淡鵝酥味發出。正正係呢啲嘅肥膏先會造就到咬勁同味道十足嘅好味鵝腸出黎,美食當前健康飲食可以稍微讓步一下。潮州凍馬友。因為馬友魚本身肉質鮮甜脂肪比例又夠高,所以凍食係一個唔錯選擇。原條馬友以粗鹽醃製後蒸熟雪凍,食落魚嘅油脂甘甜平衡左醃製嘅微鹹的味道,肉質綿滑緊緻魚味香濃,點埋普寧豆醬同食更美味。最後大家再點左幾個下酒菜,啤啤佢。蒜香骨同小炒王鑊氣同火候都好夠,咸酥香口味道非常適合用黎佐酒。黃金鮮魷入口熱辣辣,鮮魷魚放入拌炒至冒泡泡嘅鹹蛋碎中形成一層金沙薄膜。食落咸香又爽口加上魷魚大大件,所以唔似出面因為細細條好容易炸到乾爭爭,無晒口感味道。多得團友建議黎到呢度,如果唔係都食唔到咁正宗味道又價廉物美嘅潮州菜,下次要食都可以唔使再跟團返大陸了,近近埋搭個地鐵就過到黎夠晒就腳方便。下次要黎補一補了。…Read More
