鏞記酒家有幾層樓,去到樓上得我地一張枱。先來一個酸薑皮蛋,本身有啲抗拒皮蛋,但係試咗之後發覺質感都唔係太差,酸薑好好味又好爽,但係單吃會好搶喉。之後嚟一個冬瓜盅,10分足料,夠12個人食。第一次食椒鹽海參扣,好爽口,炸得又好脆,食到停唔到口再嚟個燒鵝例牌,比想像中冇咁好食,肉質比較實。之後再嚟一個清湯腩,每日限定十份,十分推介。肥瘦適中,又爽口。斑塊肉質比較嫩荷葉飯濕度適中,唔會太乾或太濕最後上甜品: 有芝麻糊同蛋撻芝麻糊唔會太水,亦唔會太甜。蛋撻就比較普通,又甜左少少。…Read More

在港期間,到鏞記吃了午餐。一行五人,有酸薑皮蛋,一份海蜇,半隻燒鵝,一份叉燒,一份荷葉飯。甜品有蛋塔,芝麻水雲糕。連汽水兩罐,合共九佰多,平均每人才一百八十元左右。份量方面,絕對足夠五個人食用。味道方面,I have no complaint :) :) :)。酸薑皮蛋:那皮蛋有幾好味,不用重覆。那酸薑的確比坊間辣和酸,根據席上長者言,薑的酸度有中和皮蛋的鹼度(!?)個人覺得,總好過有些酸薑製造商下的吃完會口渴「糖精」!燒鵝: 因為我們都不是脆皮燒鵝的 fans,所以鏞記的燒鵝風格比較貼合我們的口味。鵝皮很香很醇厚,香味和食味很吸引,肉很多亦很紮實,但絕不是死硬橡膠派。可以其鵝的供應有一定質素。叉燒:肉質是軟淋派,席上長者說是「半肥廋梅頭」類。那掛在廋肉間的肥肉,甘美得很。恨不得叫碗白飯伴食。check point: 勿小觀墊底的花生,美味程度亦很高。雲吞麵:蛋麵絲幼爽口,雲吞嬌小散尾,蝦的鮮度極高,其湯底很搭。荷葉飯:造形極佳,一大包飯上桌,可觀!份量極巨,我們五個人各吃了二小碗,仍有半份剩。內裡賣相平實,顏色簡單,但配料不「馬虎」,有鵝粒,海鮮粒,雖顏色普通,味道卻十分好味,飯粒分明,濕度控制得宜。吃的時候,心裡只有五個字:「師傅好手勢。」甜品:蛋塔仔很新鮮,蛋香濃甜美,酥皮香脆,比坊間的蛋撻專門店更好。芝麻水雲糕很值得一嚐,黑芝麻下得爽手,味香濃,讓我吃得過癮。質地很特別,不是一般粘米魚膠,吃得出類似日本甜品用的海藻類材料,質地清爽,很適合吃完高脂的燒鵝後的甜品。環境方面,因為我們被安置於二樓,餐桌跟餐桌間並不算很闊,但又末至於到話好迫,可接受。個人認為其服務算係有招呼開遊客和達官貴人嘅大舖風範,多餘嘅「吹水」和無厘頭的儍笑都不會出現。門口知客郭電梯亞姐亦親切有禮。做開大客的飲食業服務員係唔同啲。尤其對同行的兩位男長者,態度親切體貼有禮 :)。絕對有再來的理由 (i.e., 雲霧肉)。…Read More

今日慶祝外子生日,特地pick了一間大家未去過又慕名已久的飯店 - 鏞記。同台的其他四位都曾經來過,席間不其然提到他們之前來的美食 - 皮蛋酸薑,燒鵝等等。懷著熱切的期待,我們開餐了!皮蛋酸薑。:( 當這牒皮蛋酸薑放上台時,那陣醋酸味直攻鼻腔,大打節扣。心中胡疑之下,先試一口皮蛋。皮蛋是糖心的,很美。然而一食入口有一陣怪味。其他朋友也有相同感覺,相比他們口中聲稱食過最好味的皮蛋,味道實在相差太遠。酸薑呢,切得太厚。那一障酸醋過了,但友人吃下仍有涸喉咳嗽。這個皮蛋酸薑,算是不及格了罷。燒鵝。半隻燒鵝份量也不小。不肥,肉質不"un",味道不錯。但我卻期待一個驚喜...荷葉飯。:) 今晚我最欣賞的茶式。飯炒得乾身,顏色均勻,內有細細的肉粒及元貝絲,食的時候仍有其荷菜香味。不知不覺,連吃兩碗。雲霧肉。入口那些肥肉在咀裡慢慢溶化,肉帶點煙薰的香味,所以食落不是覺得油膩。 :) 食過之後個人理解食物的名字除了指那白雪雪的肥肉外,好可能包括食時閉上眼像在雲霧中品嚐真味的感覺。美中不足的是下面的肉煮過之後太乾,只能趙,不能吞。清湯牛腩。部位特別,有腩肉加筋膜﹔雖叫清湯但牛味出。很不錯。壽包。生日嘛,特地order半打蓮蓉壽包,一人一個。壽包應是我們即叫即蒸,但不知何解,上到台時個包已不大熱。另外,個包皮太乾,食的時候著實不想吞落肚,所以我只食中間的蓮蓉加蛋黃。蓮蓉不太甜,加上蛋黃油出的油,味道還算是及格。不過還是東園的壽包最美妙 - 又熱又香又軟~ 晚市時分,熱鬧得很,全院滿坐。有一家大小,扶老攜幼﹔有帶外藉同事或來賓來欣賞香港美食﹔有一大班外國長大的年青才俊。顧客客似雲來,挾著米芝蓮食府之名,在此大好情況之況,不見得此餐店有何誘因追求更大的進步。今次是第一次來,或者也可能是我最後一次。…Read More
