香港不乏台式餐廳,但更多的是「港式口味」台灣料理,尤其是正宗牛肉麵更是寥寥無幾。據說鐵牛班底均是台灣人,感覺上食物質素較有保證,而且身邊不少朋友都曾向我推薦,所以不時亦會光顧一下;晚市人流較中午多,雖然排隊人數眾多但等候時間不長。餐牌選擇多元化,湯麵拌麵都一應俱全,另外亦有多款小食及飲品,令人眼花繚亂。入座後需自行填寫點菜紙然後到收銀處付款,等候餐點送上。肉燥小茄子 ($36)小茄子煮得軟腍但不至過分糊爛,加上肉燥簡單卻滋味。魚酥皮蛋豆腐 ($36)皮蛋豆腐幾乎是每間台式餐廳都有的一道前菜,成本低且製作方便快捷,只需將現成豆腐加上皮蛋、肉鬆或魚酥以及醬汁,毋須加工或烹調經已完成,所以亦難以有何驚喜可言,而這份皮蛋豆腐的醬汁實在太鹹。好芝味芝士鹽酥雞 ($45)鹽酥雞炸得金黃酥脆,加上大量芝士醬濃郁可口,但受醬汁影響鹽酥雞軟化速度亦較快。香滷滑牛筋 ($49)牛筋煮得軟中帶韌,口感略黏並富膠質,但實際份量不多,底下大部分均為生菜。招牌紅燒牛肉麵 ($63)牛肉麵配上數件牛腱肉,肉質軟腍鬆化;湯底帶淡淡藥材味但鹹度偏高,麵質偏軟不夠煙韌。紅燒牛筋腩麵 ($63)相對之下個人認為牛筋腩較為出色,肥瘦均稱入口豐腴,但牛筋似乎較單點前菜遜色,口感稍軟不及前者煙韌富彈性。個人心中的牛肉麵之冠非台北林東芳莫屬,在香港實在難以覓得青出於藍的一間,而鐵牛固然談不上出類拔萃,口味似乎仍偏向港式而非正宗台灣風味,但勝在選擇多元化而且價格相宜,仍是我不時滿足牛肉麵癮的選擇之一。…Read More

紅燒牛肉麵起源,是1949年國民黨把南京政府軍隊撒退至台灣,家眷住在眷村。由四川省來台的鐵血戰士,將來自家鄉成都的「小碗紅湯牛肉」改良,加上台灣的辣豆瓣醬,搭配當地麵條,以解思鄉之情。此麪代表台灣外省人的飲食文化,以台北為中心。擔仔麵發源為清末光緒年間台灣漁民洪先生的小販檔子,以台南為中心,代表本土。兩種麪店同樣在旺角中心營業(此店在地牢,一樓立食區有洪祖師),說出台灣人省籍差異的故事。紅燒牛肉麵分幾種:注重濃厚的口味,以豆瓣醬,醬油為主,在原先眷村發展出來。今次食牛筋腩肉,很大碗,偏咸,但筋是十分甘美的。貴一些的私房麪只是加了金錢和牛,並非更高質素。套餐選了木魚炸豆腐,醬汁稍酸。台式香腸有台灣風味,惜不是熱騰騰。鹽酥雞是常見的臺灣小吃, 發明於民國60年代臺南市。亦不是熱騰騰。滷肉飯(常被誤寫為魯肉)的滷者,用濃汁烹調食物也。臺灣美食作家朱振藩說,根據最早的字典漢朝《說文解字》判斷,「鹵」字是正寫,後來出現「滷」字,成為臺灣最常看見的寫法。臺灣滷肉飯通常是醬滷豬肉澆淋白飯,搭配筍乾或是醃蘿蔔乾等;在香港的臺式餐館,「滷肉飯」大多是使用滷五花肉塊,而台南式「肉燥飯」才是使用滷肉碎。 香港流行的是台南式。此店的滷肉飯 質素一般,與度小月相差太遠。總括來說,快餐店格局,侍者是台灣人,牛肉麵佳,其他一般。…Read More

今日同屋企人行完旺角,行得太晏無煮飯,就係附近搵食喇。係毫無頭緒之下,經過旺中見到好大個鐵牛既招牌,第一眼以為係食日本野,望真啲見到下面有細字仔寫住「台灣牛肉麵」,我地就去左試喇。門口有侍應問我地幾位然後帶我地入去坐低,餐廳係半自助形式,店員叫你先揀好食物然後去返門口附近既收銀比錢,之後會有店員送上食物。第一個到既餐係呢個養生素食便當配黃金地瓜飯,呢個無加配飲品。初初以為半自助形式要自己拎餐具,點知原來有埋餐具。黃金地瓜飯煮得太腍,加上有地瓜碎,成個感覺食落好一pat野。碟菜煮得幾好,新鮮又唔油。上面三小碟有滷蛋半隻加菜圃,山根,茄子。呢三碟都好好味,尤其是茄子,唔會煮到好腍,個味道都好好,好似係茄汁味。紅燒牛筋腩麵加$16要左杯凍香芋珍珠奶茶,成個餐就$74。都係先試個湯先,好鹹,個係好香牛肉味。牛筋比牛腩好食,牛筋好腍,牛腩就有啲腍有啲韌。個麵份量好多,又唔會煮得太腍。凍香芋珍珠奶茶好好飲,珍珠好有咬感,唔會好硬。香芋同奶茶既份量控制得好好,飲落好清香。呢個好推介!好好味,個湯同啲麵同之前嗰碗一樣comment,不過呢個牛超正!每舊牛肉都有啲筋,每一舊食落都好腍,諗起都好回味。另外值得一提,店員服務態度好好,問佢攞暖水,佢本身話無,仲主動話得凍水然後幫我地斟凍水。跟住隔左一陣佢話有熱水仲幫我地加返啲熱水。抵讚!…Read More
