收工想近近地食海鮮,想起久違的金山海鮮酒家,打電話預約7:30的位子。到達後跟以往人山人海的景況不同了,坐位隨意挑選,或許跟最近的交通控制所影響友人立馬點了蒜蓉粉絲蒸蟶子皇及椒鹽賴尿蝦,剩下由我決定。先來的是君度香橙骨,雖然熱辣辣,但仍有點失望,味道偏甜,香橙味微弱,還有點油。是唯一吃不完的一道菜。椒鹽白飯魚,正。佐酒一流。炸得酥脆,一點酒膩感也沒有。椒鹽比例做得好,沒有太咸或太辣。蒜蓉粉絲蒸聖子,蒸得剛好,聖子也鮮甜,蒜香濃,唯獨豉油重手了,粉絲吸收了大部分,所以很咸。賴尿蝦大大隻,外殻炸得脆脆,蝦肉富彈性,而且有膏的。砵酒焗蠔一般般,蠔是很大但就是不夠惹味整體而言食物:蒸及炸的火喉控制得不錯,海鮮也新鮮,價錢相宜服務:以往侍應們都忙得沒時間招呼,現在不爆滿,服務快速又細心環境:傳統酒家格局…Read More

在佐敦一大班人吃晚飯,想吃河鮮可以去"順德公","樂壽",如果吃海鮮,金山是其中一個最佳選擇.位於佐敦吳松街的"金山海鮮酒家",長年門外聚集著等候的食客.年前在同區開設分店,一樣大收旺場.分店在莊士倫敦廣場七樓全層,環境比老店光鮮衛生.是夜的中學同學"雙星:生日聚會,便在此擺下陣,即日致電訂位也能夠安排到.如果貿貿然走上來的話,便一定摸門釘了.同老店一樣以海鮮為主打,是夜要遷就大家的預算,還是點些小菜為主.價錢大約五,六十塊一個例牌份量小菜,不過我們一行十三人,好些菜式要加大,雲英雞是店內其中一道招牌菜,賣一百六十多一隻,算是便宜,雞皮爽脆而雞肉嫩滑,可是雞味不算明顯,沒法子,在這個年頭鮮雞難求.近年無論在各文化層面,一起吹著懷舊風.古法懷舊菜當時興,好像金錢雞是其中一個例子.單是看這一味在大小飯局出現的頻率,可見一班.在菜單上見到有此味,即刻要兩個例牌來試試.賣相麻麻,面頭的叉燒乾如煙肉,夾著的雞肝甘香豐朕,冰肉就不夠大件,咬落也有油潤感.眾人覺得,金錢雞還是得龍做得最好.本來要個菜膽豬肺湯,可惜已賣光,以粟米魚肚羹代替.窩貼小棠菜是街邊小炒王,熱賣菜式之一,但是並非間間做得好,有些炸到又厚又硬,金山的窩貼小棠菜做得不錯,外表酥化內裏的墨魚膠彈牙.天氣仍冷的晚上,來個臘味煲暖一暖身.田雞臘味煲用料靚,此煲仔菜帶點辣,此時此刻吃就最為適合.潤腸臘肉甘香油潤,田雞肉質嫩,配菜的露荀也一樣爽甜.老店的砵酒焗生蠔做得很好,新店同樣出色.砵酒味香不太搶,生蠔每隻鮑滿多汁,吸收砵酒的香氣,亦有蠔本身的鮮味.豉油王鵝腸做得入味,鵝腸肥美爽口.瑤柱扒豆苗的出現,旨在為這一餐綠化一下.要個炆斑翅,但是夜湊不夠足夠份量的斑翅,如是者找條身價相若的杉斑,來以炆斑翅形式去做.支竹火腩蒜子舖滿原條杉斑,也是第一次這樣食法.支竹索汁之後仍有質感,最好吃的是濃惹的蒜子,杉斑肉纖細幼滑,這個替工也不辱命.蘿蔔牛根腩煲,比較愛吃爽甜的蘿蔔,多過牛腩本身.煎藕餅肉多過蓮藕粒,風格較粗獷.豉油王炒麵做得乾身,每條麵條也盡收香甜的豉油香氣,不幸的是飯店方面不能給我一支余均益.最後的芝麻餅,真正身份為蝦多士,貌似笑口棗的芝麻餅,香脆乾爽,沒有多於油份積聚,蝦膠爽甜彈牙.就算吃到差不多飽,也連下三件才滿足.價錢不貴,十三人吃了以上菜式,二千也不用,當然如果全部叫海鮮,就另計.…Read More
