農曆新年未敢四出拜年,初七後等到疫情穩定啲即約會銀狐長輩晚聚,並由蕃薯uncle欽點一嚐中環二星名店「營致會館」。中餐廳兩層高,正門設於橫街域多利皇后街,其落地玻璃設計當眼鮮明,不難找到。地下為三用嘅接待處、候座區及酒吧。通往上層用餐大堂可步上樓梯,或於干諾道中進入盈置大廈乘坐升降機。店子面積寬廣,以木地板襯托雲石桌面,感覺雅致通爽。四人散座分佈成內圓外方,近窗位置以半梳化合併式方形餐桌圍邊,其餘內側則擺出圓枱,配上厚墊椅櫈十分舒適。桌上有齊備嘅自用及公用餐具,中西合璧,整潔企理。小弟愚見,雲石餐桌雖看似有格調,不過對高級中菜廳而言,似乎舖返張枱布先能顯出其高雅嘅氣派,同時可提升衛生度及減低碗碟所產生嘅雜聲。散點餐牌共有九頁之多,可從官方網頁下載。如相所示,每頁下方除咗提及會收取加一服務費之外,仲講明要求食客「請將手機轉為靜音模式」。XO仔早於電話訂座前參閱過,方便為晚宴預先定下菜單,到用餐當日,早到可以飲住等,人齊就可以起餸。請留意,雜項收費包括茶芥$45/位及開瓶費$500/樽。服務生溫文有禮,加添酒水、更換新碟等功夫全為自動波,食客反映意見後更迅即調整,誠懇及專業之態度實屬難得,值得一再嘉許。黑魚子煎釀蟹拑($260/位):碟子中央鮮亮嘅蟹拑伴有兩件西蘭花,師傅於盤邊以食用花及菜苗砌出相襯嘅花紋,外觀輕盈精妙得很!煎煮過嘅釀蟹拑毫不油膩,奶白色嘅蝦膠鮮爽有嚼勁,以金黃香脆嘅炸瑤柱碎及鮮美嘅黑魚籽醬點綴,口感更為豐潤,廚師推介菜式當真細膩!唯一席上嘅銀狐兄弟提到,美食如果可以熱少少就更加完美!珊瑚芙蓉蝦球皇($390/位):珊瑚芙蓉蝦球皇以黑色嘅盤子承載,成功突出其橙艷鮮美嘅色調,上枱一刻震撼到連隔離枱都要望多兩眼,絕無誇張!晶瑩雪白嘅蝦球皇極富光澤,咬落爽脆鮮甜,玻璃蝦肉簡直係零瑕疵!半浸住極品蝦球皇嘅芙蓉蒸蛋白面淋上呈珊瑚形嘅蟹膏及鮮蟹肉,舌上嘅嬌柔嫩滑頓增添海中貴寶嘅鮮濃氣質,組合配搭確真天衣無縫!明爐燒米鴨($180/例):燒米鴨皮層巧薄香脆,鴨皮與鴨肉之間半點肥膏都冇,粉嫩厚身嘅鴨肉鬆軟易入口,完全唔嚡唔實,肉汁豐盛芳香;嘻嘻,小肥最欣賞靚靚米鴨少骨,脆卜卜嘅透明軟骨仲要吞得架,一客例牌嘅份量最啱四個人分享。秘制香酥雞($290/半隻):反而最失色嘅就係整晚最熱辣嘅秘制香酥雞!香酥雞雖炸至金黃,無奈層炸漿過厚,即使雞肉唔乾卻欠缺雞味,Auntie Y直言此餸難敵快餐店出品,評語激狠。羊肚菌桂花炒粉絲($240):桂花炒粉絲撈入咗羊肚菌及芽菜炒製,蕃薯uncle就嫌粉絲唔夠乾身,細佬則覺得粉絲濕潤中帶爽,質感不錯,只係味道略為過份清淡,雖則見到羊肚菌碎嘅黑點蹤影,但真係食唔出其芬芳之香味,份量是否可以稍為調高?!濃雞湯雲吞雜菜煲($280):以砂鍋呈上嘅煲品熱力十足,哥哥仔展示過後即代為分成四碗。每人都分到一粒皮薄餡爽嫩嘅雲吞,翠綠鮮明嘅雜菜有腍有脆,輕巧健美。濃雞湯底色澤鮮黃,香甜濃郁,真材實料煲出真夠火喉,滑嘟嘟嘅粉絲索盡精華,作為單尾極為暖胃。中環星級中菜廳「營致會館」環境優雅輕鬆,服務生相當好客,而且貼身稱心,佳餚有「營」健康,廚師推介海鮮菜「黑魚子煎釀蟹拑」及「珊瑚芙蓉蝦球皇」尤其精美高質,高級價格尚算合理之列。…Read More

粵菜手功繁複、味道精緻,非其他菜系可以媲美;而今日介紹的 營致會館 Ying Jee Club,開業只是三個餘月便勇奪米芝蓮星,是粵菜界的耀目超新星! 主打商務高級用餐的 營致會館,位處中環恆生銀行旁的盈置大廈內;其命名除了巧妙諧音,也是期望帶來營商致富的美好意願。餐廳由曾是多間米芝蓮粵菜廳的掌廚人蕭顯志師傅主理,未食已充滿期待! 餐廳有兩邊入口,地面入口處有個小小酒吧;拾級而上,不難發現整間餐廳都以綠色為主題:桌上的翡翠綠色餐盤、餐巾環、筷子托,都以寓意福壽吉祥的翠綠碧玉打造,檯上還置放了琉璃工房打造的麒麟,氣質格調高雅不凡。 一開首是點心環節,數量都可以加減非常貼心。喝一口順滑帶甘的普洱茶後,忍不住要趁熱先向 香蔥澳洲M9和牛千絲酥 ($78/3件) 進攻:貌如手袋的千絲酥鬆化不得了,筷子一挾隨即斷成兩半,外層不油不膩又襯以帶蔥香的美味和牛餡,滋味非常曼妙! 更多點心也來了,相機及嘴巴都很忙碌!首先趁熱品嚐嬌艷的 松露雜菜粿 ($69/3件),粿皮內釀入三種菇菌及紅菜頭,面層再綴以黑松露醬,未吃先聞黑松露幽香,口感清新豐富兼帶微酸,是款健康清新又華麗的素食選擇。 飲茶又怎能不吃蝦餃?這裡的 金華筍尖鮮蝦餃 ($78/3件) 精選優質的海蝦,加入金華火腿和筍粒製作而成,晶瑩透亮的金檳色薄皮下,蝦肉極之鮮甜、吃起來彈牙爽口,令人稱心滿意! 接著上場是 香草海皇滑腸粉 ($98),超薄滑剔透外表之下,有蝦、帶子及石斑在內,非常足料矜貴又鮮甜!如果還有胃納,其實還可以試 蹄香澳洲M9和牛滑腸粉,牛魔食友極力推介的! 大家也絕不能錯過集清脆、皮薄、熱暖、足料於一身,鹹甜味完美平衡的 迷你菠蘿焗叉燒包 ($69/3件),絕對是本年度吃過的最佳作品! 其實想吃及值得吃的點心還很多:原隻鮑魚雞粒酥、松露魚子龍蝦餃、荔茸火鴨藏珍盒;但要留位品嚐大菜啊! 先是由經典粵菜玻璃蝦球改良而成的 珊瑚芙蓉蝦球皇 ($380/位),所用越南大虎蝦鮮甜又彈牙,刀手妙絕;配合花蟹肉、蒸蛋白、蟹膏,味道層次豐富,同時鮮味及熱度十足,超讚! 另一款 香蔥爆乳龍 ($380/位) 使用只有六至七両的本地乳龍,取其肉嫩味鮮,以猛火快炒,肉質爽滑不老,火候控制及調味均恰到好處,大顯師傅功架。 接下來這味異常邪惡,怕肥人士不要看下去!脆香貴妃雞 ($280/半隻) 用炸香的瑤柱和蝦米連同跟金華火腿熬湯,放入雞隻慢慢浸熟,撈起自然風乾後再炸;相比傳統以麥芽糖塗抹雞身來炸,雞皮會鬆化酥脆美味很多倍,同時肉質又加倍嫩滑,會令人一件又一件追吃下去... 邪惡又美味的海鮮及炸雞後,當然要來碟時令的 上湯浸豆苗 ($250),清新一下胃納、又平衡一下心理,才敢繼續向炒飯及甜品進發! 在 鮮蟹肉松露蛋白炒飯 ($240) 的雪白外表之下,炒飯粒粒分明又夠鑊氣,松露的香及蟹肉的鮮甜都是恰到好處,令人忍不住三扒兩撥就吃個清光! 最後來到甜品環節,不能不嚐 楓葉柑橘鳳梨酥 ($54/3件),外層薄身清脆、中間酸酸甜甜極開胃,很好吃;中間的 香蕉芝麻蓮蓉球 ($54/3件) 也是香脆不油,中間夾芯比一般蓮蓉餡低甜,又多一份香蕉香氣,也是美味。 最後是新嘗試的 朱古力牛油果西米露 ($55/位),其實我一向喜歡的牛油果西米露,貪其又香又滑的滋味;這裡配上甘濃朱古力粉,更多一份變奏及趣味~ 由點心、海鮮、小菜以至甜點都非常滿意的一頓,連同高雅環境、貼心服務,無容置疑是米芝蓮星級水準餐廳,火速摘星有理!筆時,已經在盤算幾次要再訪了....…Read More
