大大個訂位招牌吊高行人路迎面當眼處,不是虛張聲勢,試過隨便walk in,下場是不得其門入。於是幫襯前哪管是平日還是假日,志在必得還是要訂位就記在腦海。這回順利入舖,舖內就得十張以下4至8人不等的枱,而且一入舖只招呼上樓上埋位,下層基本不坐客,一切已明瞭,是類近私房菜格局。扶着有幾分似電梯扶手的樓梯扶手,及至舊樓閣樓,本就預定隔音差,食客高談闊論聲浪都困於低樓底之下,在場沒人猜拳、髒罵聲,已屬萬幸。古色古香、七八十年代的地磚裝潢等算是保持得狀態不錯,枱與枱之間擺放是極盡可攝盡攝之能事,有機會椅背貼椅背。據知此處「炸物」出色,冒住喉痛流鼻血等風險一口氣點「潮州蠔爽」$138、「避風塘竹仔魚」$108。「蠔爽」菜名改的一絕,也不知是易叫還是潮州代表作,見八成枱都「蠔爽」一番。每粒粉漿分明不互相藕斷絲連糾纏一起,磨砂面的脆皮做到「爽」,每顆蠔仔豐滿鮮味,入口帶些蠔汁滋潤又不覺熱氣。竹仔魚於潮汕的另一種意義等同香港的「藤條炆豬肉」。此味今回凶不到同桌的縮水阿伯,反化身補鈣恩物,脆漿薄,由頭至尾、骨肉炸得全脆酥化,避風塘式是含蓄辣度,相對蠔爽乾身。如不強求綠色蔬菜,「豉油皇鵝腸」$108底部墊的大豆芽那種擔草入城門之勢也足夠一餐纖維需要。只是下面纖瘦,亦需接受上層肥腬,鵝腸全是楊貴妃之同好,無一條是袪肥膏的,雖則腸肥,但調味沒重口味。幾款魚麵,即是將長方體未切片的魚片切成粗麵條狀,味道質感與魚片無異,篤定「鮑角牛仔粒炆魚麵」$128,每條粗幼勻稱沒中斷,初時以為鮑角是罐頭鮑,吃起來隱約有鮑汁味,但咬感似海綿,明顯比平常的鮑魚腍身,估計是素鮑魚。牛仔粒是一口牛的大小,但沒一口牛時有的脂肪。菜式價位盡是中式意頭8字尾,無加一,埋單收銀姐姐將計算機篤了又篤,計了二回,很均真。八時半,人潮緩緩散去,補張吉枱照,順便拍個牆上餐牌照補漏。…Read More

想食小菜又不想在寒風之中坐大排檔……又逼又要等位。說穿了就是懶惰兩字,而連打電話訂座都可以懶的話,要找美食更是難上加難。左問右問,友人說出了這家店子的大名,有點出乎意料的推介。酒家,想起的就是點心、飲宴、聚餐……但我想要的是舊式一點,街坊一點的去處啊。半信半疑之下再自己搜搜,咦!這格局……正合我意。  「歡迎光臨,樓上雅座」--那是小時候看九十年代的電影才多見的情景,我自己就少接觸。唯獨去茶餐廳小廚時會偶爾上一上,不過這也可算是逐漸消失的香港特色啊。  當然所說的雅座並不是什麼金碧輝煌有氣派的壕位。但這邊看來夠闊落,而衛生狀況不錯,亦非油煙味重,周圍黏笠的店子。不意外地牆上貼滿了多張特別餐牌,寫著的菜式名堂跟正式常有款是不同的。有著大大小小的變化,不僅僅有餐牌上印著的六七十款小炒(雖然都已經嚐不完)。  潮州蠔爽 $108是友人特意推薦的菜色,老實說我真的沒有聽過這名堂。蠔餅就食唔少,只是經常不夠酥脆香口,或是油膩濕淋的過分可怕。這次的蠔爽就不像蠔餅一樣下漿煎成一大塊,反而是一粒一粒分開上。蠔肉份量完全對得住價格,在我角度而言,要知道在香港有幾多性價比恰好的店家?鹹香酥脆,未有滲油,僅輕泛油光,粒粒蠔肉飽滿誘人。一口一件,鮮美水份迅速溢出,什麼膩感什麼油光一下子全消啦。  然後就是我夢寐以求,心心念念的最愛--咕嚕雞球 $78。其實每次去到吃小炒,總會在咕嚕、生炒、京都、香檸、柚子……之間猶豫不決。看出共通點了嗎?就是酸甜的啦!這次的咕嚕雞球沒有一大盤的醬汁盛在碟上,幸好就是有先充分裹好醬汁。那就不怕吃著會無味,不過本身也有少許炸過的香口及微鹹醃味。雞肉不會乾柴過老,雖然沒有製成肉丸狀那方法的成品來得油潤可口。但吃下去可是脆感滿滿,加上不油膩,又酸酸甜甜的,醒胃且送飯一流。  來個重口味的最後衝刺,避風塘炒蟹聽得多,我們要的是避風塘豬頸肉 ~$78。濃濃的蒜香撲鼻而來,粒粒金黃的蒜碎焦香不嗆。加上點點辣椒的辣味醒胃,教人欲罷不能,涮嘴得太邪惡了。夠肉味又煙韌好嚼的豬頸肉也是略帶焦脆,金黃色的邊位最好吃,也不會油滋滋的。鹹香辣度恰到好處,不會辣得過份,香口惹味得想再來一道。  由小到大我家就極少去大排檔還是小廚之類,那怕是樓下三數間茶餐廳。有人說小時候的不足,就會在人長大之後瘋狂補回,甚至去到過剩狀況。我想……這句或多或少說中了我的情況吧?…Read More

samurai 這酒家的風格就是吃得夠豪, 味道好, 碟頭大, 價錢實惠. 尤其是煎炸, 辣, 椒鹽之類的食制, 更加精彩.

位於太子雷生門附近的珠江酒家,初到貴店便感受到強烈的懷舊古董味。設計好簡陋,地方也不算大,但卻感覺相當親切!好有回到過去的感覺哦~一行幾人入門後便直上二樓,樓梯好窄,相當難行下⋯牆上貼滿各色菜名,驟眼望都已經好多選擇,每道菜名都好吸引眼球,一下子都變了選擇困難了~好!直接介紹下以下幾款小菜先~涼拌花甲:好開胃嘅一個前菜,青瓜好爽口,花甲肉亦顯肥美,小小辣加上小小麻,超正!!再嚟多碟都可以ko佢^_^潮州蠔爽:唔好齋睇啲蠔以為細粒,其實啖啖肉,而且新鮮唔腥,麵粉用量適中偏薄,令到蠔仔炸出嚟更加酥香,漲卜卜肉汁保留得好好!而且完全不用沾醬共食,主角蠔仔已經可以獨當一面,味道可以用啱啱好嚟形容。黃金鮮魷:呢個鮮魷賣相好特別,正正方方,size如瑞士糖一般,麵粉沾到好薄,加上濃濃嘅蛋黃漿,包裹住一塊新鮮爽彈嘅魷魚塊,每口size都啱啱好,咸甜適中,好味!姜蔥魚雲煲:魚頭當然新鮮啦,用上鐵皿上菜,存溫較長~姜與蔥嘅味道,剛好辟去魚本身所帶嘅腥味,真係好魚魚魚呀!鱻!百花蜜京都骨:大大件,百花蜜重,甜甜的,味道也不錯吧~椒絲腐乳通菜:味道不錯,但略嫌煮得過熟,口感唔夠爽。蝴蝶腩:豬嘅一部分,但略為遜色⋯sorry..我覺得有啲豬臊味⋯肉質偏韌,試咗一舊而已。豉油皇炒麵:有我喜愛嘅大豆芽代替咗芽菜,麵條用上扁粗麵,師傅炒得唔錯,味道ok!但我還是中意幼麵多啲。又到總結嘅時間!值得推介!雖然裝修就簡陋老土啲!但同食物味道相當接近,懷舊感重!味道色香味存,絕佳老字號!…Read More
