喺香港歷史博物館附近行過,今晚老公話要食中菜,原來佢已經預早book好位,慶祝甚麼紀念日,驚喜。店內裝修格調大方,位於高樓層,窗外面望到街景。店員為我哋沖泡了茉莉花茶,入口清香,解暑氣。涼拌金菇紫椰菜,仲有芫茜,清新爽口,這個天氣食最啱。麻辣牛,辣嘅程度啱啱好,牛好淋,老公讚不絕口。招牌石岐燒乳鴿,皮香肉嫩,鴿皮香口到一個點,肉嘅味道調得好好,不需淮鹽也不需喼汁。時令燉湯(雞)味道好香濃,熱騰騰,非常足料。燒汁薑蔥比目魚,師傅輕輕把魚塊泡油,既增添可口程度,也不會破壞肉嘅質感,每件魚塊都掛上秘製嘅燒汁,高手!推介一定要試。香煎帶子伴飯,賣相已經好吸引,帶子爽口彈牙,個自家製黑豆豆腐好特別。津菜玉荷包,這個菜做得好仔細,饀料有冬菇、雞肉、紅蘿蔔、粉絲,味道好好。甜品係菊花豆腐,師傅嘅刀功真係厲害,豆腐嘅上層切成幼幼的絲,浸於薑汁糖水裏面成菊花形態,這是一件很美的藝術品。很滿意這頓晚餐,吃得出師傅嘅用心製作,好有誠意,讓食客感受到真正的美食。…Read More

媽媽一年到晚對我們的照顧無微不至,從不間斷,沒有一天的休息。趁著母親節快到,特別約了一間私房菜,和媽媽吃餐好。皇軒私房菜位於尖沙咀柯士甸商業中心,佐敦站出發不用十分鐘便到,地點方便就腳。我們一行四人點了這一個530蚊套餐全包宴。 糖心蛋伴胡麻沙律(⭐⭐⭐⭐💢)各式各樣不同的沙律菜簡單的配合醬汁,味道甜甜酸酸,令人食慾大增,十分開胃。 招牌石岐燒乳鴿(⭐⭐⭐⭐💢)這個燒乳鴿即叫即燒的,上枱時還是熱辣辣。乳鴿相比其他酒樓吃到的細,吃起來外皮十分香脆,肉質鮮嫩,完全沒有渣。每人一隻實在有一點兒不夠喉。香煎北海道元貝(⭐⭐⭐⭐⭐)這個日本帆立貝肥大而且肉厚。師父不是煎得太熟,吃起來有點嫩口, 還有淡淡的海水鹹香味。而且還要特別一讚伴碟的豆腐是廚師用黑豆漿自家製的,吃起來十分幼嫩,有很香的豆味,能襯托出元貝的海鮮味 。時令燉湯(⭐⭐⭐⭐💢)真材實料的老火湯,飲起來便知龍與鳳。味道濃沃,而且喝完不會口乾。湯渣挺為豐富,包括瘦肉,蟲草花,茶樹菇,金華火腿和雞腿等 。香煎羊架(⭐⭐⭐⭐⭐)這個羊架吃起來十分淋身,而且有肉汁。配合旁邊的薄荷醬,吃起來味道清新,不會覺得有騷味。廚師十分細心地用錫紙包住骨邊,令我們吃得十分方便,值得一讚。 神草蒸比目魚(⭐⭐⭐⭐⭐)一般平時在家吃的比目魚都是香煎的,估不到清蒸也另有風味。魚肉十分嫩滑,而且油脂感較為重。幸好上面配著香蔥吃起來沒有那麼肥膩。每人三舊剛剛好。津菜玉荷包(⭐⭐⭐⭐💢)又是一道巧手工的傳統中國菜,薄薄的津菜包著不同的餡料,看起來脹卜卜,拍照打卡一流。裏麵包著肉粒,甘筍,粉絲香菇等等,吃起來有點像生菜包,簡單而清淡。 金柱五穀炒飯 (⭐⭐⭐⭐💢)最後還有個五穀炒飯,有點澱粉質才飽肚。炒飯應該是用隔夜飯做的,十分乾身,而且每粒飯也均勻地被蛋漿包著。配合瑤柱絲和其他不同配料,吃起來十分香口,鑊氣十足。 菊花豆腐(⭐⭐⭐⭐⭐)最後這個甜品真的是令人眼前一亮,從來沒有看過這麼犀利的刀工。廚師的巧刀工令平平無奇的豆腐變成一朵活生生的菊花,真的令人不捨得催花。豆腐十分香滑,配著暖暖的薑湯,為今天的晚餐畫上完美的句號。總括而言,這間餐廳廚師烹調功夫十分到家,而且食材質素也十分高。下次有機會也會再來吃餐好。~~~~~~~~~~~~~~~~~~~~~~~~~    皇軒私房菜 尖沙咀柯士甸路4號柯士甸商業中心17樓推介菜式: 香煎羊架、神草蒸比目魚、香煎北海道元貝、菊花豆腐👍🏻地點方便 👍🏻廚藝超凡👍🏻食材高級 …Read More

真的不好意思! 約了客戶吃晚飯,我竟然遲到,要他們等我,真是罪過罪過! 幸好,今天的晚餐非常出色 (全靠大廚的功夫),稍令我減去些罪過感。說是私房菜,裝修、餐具當然是有所講究,否則,我都不敢推介給客戶啦。預先約好了餐廳,今晚我們一共四人用膳,餐廳那邊問了我的預算之後,便建議了$830、$530和$328套餐。侍應專業又殷勤,每上一道菜都會作出簡單介紹。【胡麻沙律】沙律菜澆上日式胡麻醬,非常滋味。【招牌石岐乳鴿】乳鴿色澤均勻,皮薄,香嫩,醃得又入味。【時令燉湯】好夠火喉。材料又蟲草花、瘦肉、雞腳、猴頭菇等,喝下去非常舒服,非常滋補。【濃雞湯翅】嘩! 啖啖魚翅配上濃雞湯,這個情況之下,只能夠專注去食,不想多說話了。【珍寶花膠扒】很大塊花膠扒,大過一隻手掌,全是Cocollagen。那個茨汁非常美味。【4頭蠔皇鮑魚】4頭鮑不是常常可以吃,真的要用刀叉來品嚐,蠔皇汁好好味,用來配飯頂瓜瓜!【香煎北海詭元貝拌飯】特別的是它用料黑豆來造豆腐,所以豆味更濃郁,而且很滑。元貝很新鮮,好味道!【神草蒸比目魚】比目魚很嫩滑,跟比目魚一起蒸的是紅棗絲、薑絲和大頭菜絲,用料非常之特別,難怪味道那麼好。【燒羊架】燒得很香,時間又掌握得好,令羊架不會過熟,而且羊肉又不膻。同時配了芥末和薄荷醬,我們吃到薄荷醬很特別,原來,這裡的薄荷醬是加了桂花,怪不得這個薄荷醬會有花香味。更特別的是用了紅薯蓉墊底,紅薯蓉的甜味真令人回味。【津菜玉荷包】造型精緻,津菜是透明的。內裡的餡料是炒得入味的肉粒、甘筍粒、粉絲、冬菇等材料,整個津菜玉荷包非常好味道。【杞子海參浸時蔬】時菜是用了上湯來浸,當中加上海參絲,非常爽口,滋陰又養顏。【金瑤五穀炒飯】顏色悅目,香味十足,不油膩,夠乾身,味道一流。【】刀功令人嘆為觀止,名副其實是 “豆腐花”。另外,不可忽視的是薑糖水,薑味好暖胃。看見我的客戶個個都吃得津津有味,我的心滿是歡喜。相信,同樣地,餐廳的廚師知道我們那麼的欣賞他的菜式,亦會歡喜非常。…Read More
