[鬼滷]   店名夠吸引, 今晚一於訂檯試試!   餐廳位於銅鑼灣, 交通方便, 約朋友食飯談天至正.  步入餐廳,  留意到裝修設計用上高貴朱紅色但不落俗套,  非一般中式料理.   飲品柜陳設美觀. 感覺裝修都幾講究. 餐廳佈置好精緻,  有西式高腳凳, 也有方桌, 各適其式.  玻璃窗用了歐州式窗簾, 環境甚悠閒.  滷 ~本是潮式調味.   餐牌有潮州菜滷水打冷, 也有我們的喜愛的西式慢煮牛/羊,得閒打冷, 重可以配紅,  白,  雞尾酒,  中西合璧.  真係好時髦, 鬼鬼地我們點了  蜜桃柚子梳打.  梳打夠冰凍, 清涼!   店員送上免費小食,  一盆子爆谷, 好貼心.爆谷, 大大粒, 又暖又脆,  帶點焦糖香, 幫助開胃, 增加食慾. 大家開心之餘,  潮式滷水拼盤送上.潮式滷水拼盤,  (三選 ) 滷水鵝片, 豬腩肉, 慢煮鹽香雞, 上枱時連同燭台送上, 確實保溫作用.  滷水香料鹹度適中, 調味好好.滷水鵝片薄切排盤,  墊底用了滷豆腐,  鵝片已去骨好入味,  肉質油脂感豐富, 正宗潮式滷水鵝超級美味.   墊底豆腐口感滑, 富豆香真係好配搭.豬腩肉, 肥瘦平均, 口感不錯, 配埋秘制醬汁, 蒜茸辣椒醋, 令味道更高了一線.雞肉已經醃制, 口感鹹香鮮美,  有雞味, 嫩滑可口,  雞皮爽薄唔肥, 賣相味道令人回味.  鹽香雞也是潮州名菜.蘭王蛋蠔餅,  即叫即炸,  熱辣辣的送上, 面上木魚絲在舞動, 色香味俱全.用了蘭王蛋,  配合蠔仔肉, 再加上番薯粉, 煎得不油膩, 脆中帶點煙韌,  上檯時已備刀叉, 方便分嚐.蠔仔飽滿,  味道鮮美.  配以魚露,  真滋味. 椒鹽普寧豆腐 , 一客六件.  普寧醬加椒鹽把豆腐包裹, 炸至金黃色.  表面香脆皮薄,  內裏豆腐非常滑口, 師傅廚藝好.  沾些韮菜汁更惹味.蜆仔肉生菜包,  蜆仔肉加了菜甫炒成一碟, 用脆米粉墊底.    新鮮生菜另上. 蜆仔肉加了菜甫帶出鹹香味, 配上脆米粉, 再用生菜包著, 口感有層次, 爽甜生菜剛好平衡了蜆仔肉的鹹味.   想食潮州菜但不喜歡傳統環境 ,  [鬼滷]  鬼鬼地吾錯.  [鬼滷]  令我們更喜歡食潮州菜 !!…Read More

是晚選了於銅鑼灣的鬼滷晚飯。餐廳格局猶如一間西餐廳小酒館,吃的卻是新派潮州菜。坐下不久,店員便像酒吧一樣,先送上一碟焦糖爆谷。從氣炸鍋取岀帶點微暖,而且非常香脆,焦糖香而不過甜。剛好我和友人也很餓,可先吃一點再點餐。椒鹽普寧豆腐:其中一道前菜點了豆腐。一份6大件豆腐,就像是巨大版的椒鹽七味豆腐,外皮酥脆惹味,內裏的豆腐超滑且很香豆味,單吃已很好吃。新派炸豆腐沾點傳統普寧豆腐必配的溫熱韭菜鹽水,減低了熱氣感之餘加添了一些韮菜香氣。兩種食法個人也相當喜愛。蜆仔肉生菜包: 小時候跟父母去打冷總愛點蜆仔肉,貪其鹹香下飯。這裡注入新做法,泰式生菜包變成潮式蜆仔肉生菜包。蜆仔肉加了菜甫同炒,咸咸香香,加上脆米粉增加口感,用生菜包著,生菜爽甜平衡了蜆仔肉咸味。這道潮式生菜包令人頗驚艷。滷水拼盤: 到潮州菜館必須要試滷水。是晚點了滷水三拼滷水鵝肉、墨魚及豬仔髀。滷水鵝肉剛好給了鵝髀位置,而且去了骨,非常加分。鵝肉嫩滑入味,皮脂不過厚,入口滿口鵝油香。滷水膽有香料香味,咸度適中,能保留食材原味。墨魚煮得軟淋而不失彈性,墨魚鮮味,處理得非常好。豬仔髀滷得剛好,夠淋很香而入味,整支拿著咬,吃得過癮。底下亦付上滷豆腐,亦是很滑有豆味。特別欣賞店家於滷水拼盤上花了不少小心思。第一是滷水底下有微火溫著,不像平常打冷吃著冷滷水。第二是付上的每人2碟醬。一碟是常睡的蒜茸辣椒醋,另一碟是自家製的辣油。個人喜好先點了醋再點辣油,辣油不死辣且很香,帶椒辣香氣,更加分。這份拼盤相當高分。蠔仔粥: 是晚亦點了一份2人份蠔仔粥。蠔仔量不少,新鮮大大粒。入口熱辣辣很暖胃,亦加了一些炸蔥蒜增添香氣。店家非常細心,將蔥、菜甫、芫荽分上,讓食客隨個人喜好添加。如我倆般一個愛芫荽一個不愛,亦滿足到各人所需。整體食物質素很好,很欣賞店家做新派潮州菜加入新創意或小巧思之餘亦不失傳統美味,讓人感到驚喜。而且以銅鑼灣區來說定價算是實惠,性價比相當高。必定回訪。…Read More
