中秋節同家人過節,多數都會選傳統中菜,而一般酒樓都比較多人同吵雜,所以今次就打算試私房菜,一搜尋就發現呢間隱身係敬業街水準不俗的粵式私房菜 - 御膳,主打手工菜及新鮮海鮮菜式,最少訂二人套餐,平均四百元一位,私房菜來說並不貴,甚至我覺得是物超所值------麻辣手撕雞一份非常開胃既前菜,雞絲同青瓜比例接近一比一,青瓜口感清爽夠味,雞去皮不油也不膩,肉質鮮嫩,醬汁麻辣有勁,愈食愈滋味,慢慢開啟了我的味蕾迎接餘下菜式什菌大蜆豆腐湯什菌湯非常足料,滿滿湯渣,幾款食材本身味道較清淡,反而更能突出什菌原味同埋大蜆鮮甜,隻隻脹卜卜而冇沙,每一啖湯都係精華,沒有添加味精,住家味道花雕雞油蛋白蒸大肉蟹預約前店員有問大肉蟹烹調方法,可選花雕雞油蛋白蒸、避風塘炒、薑蔥炒、胡椒炒、四川香辣炒,我就選了蛋白蒸,原汁原味的做法,蟹的鮮味跟花雕酒香非常搭,酒味不重但有陣馥郁芬芳,甘香但唔會搶過蟹的味道,上菜時還原原隻大肉蟹擺,十分霸氣,蟹肉質飽滿緊實,蟹鉗厚身實淨,拆出來啖啖肉,不得不提第二主角蛋白,蒸得嫩滑,完全吸哂蟹既精華,清甜美味白胡椒香爆南非鮑魚擺盤精緻,未食已經聞到白胡椒香氣,辟去鮑魚本身的腥味,而鮑魚紋理同形狀都好靚,軟韌度剛好,不用刀叉也能輕易食用,食落鮮嫩彈牙且很入味,胡椒氣味陣陣散出,少少辣幾惹味,非常值得慢慢咀嚼細味流沙黃金蝦很經典同時又很邪惡的一道菜,蝦頭至蝦尾連蝦殼都食得,每隻蝦炸得脆卜卜鬆化,厚厚鹹蛋醬附在蝦殼表面,呈流沙狀態,非常濃郁,而且火候控制得宜,蝦肉保持鮮嫩,蝦頭仲有膏,幾有驚喜士多啤梨骨士多啤梨骨外型相當吸引,腩排有輕輕煎炸過,醬汁濃稠沾滿腩排,有士多啤梨天然甜香同時又有酸的味道,具有醒胃效果,同時亦可以去除豬肉的油膩感,不過肉有點太大件,難進食同埋腩排都偏肥蟹油銀芽炒麵炒麵非常考驗師傅夠唔夠鑊氣,炒麵炒得乾身且不油膩,鑊氣十足,麵條軟硬適中,仲有不少芽菜,不過蟹油味欠奉,有點可惜蒜蓉炒時菜芥蘭保持清脆碧綠,清脆而不韌芒果布丁甜品不時都有變,店員事前有講要看師傅當晚的預備,可能會安排雲呢拿布丁/芒果布丁/芝士布丁或椰汁紅豆糕,而我當晚是吃芒果布丁,有芒果香甜,仲有藍莓做點綴…Read More
