早已並非首次到古琴雅苑,可謂是在香港品嘗片皮鴨的不二之選,除了灣仔QRE Plaza之外尖沙咀及銅鑼灣亦有分店。南翔小籠包 ($82)餡料肉汁豐富,外皮不會過分透薄易破但亦不至過於厚實。津白雲吞湯 ($145)雲吞皮薄餡靚蝦肉爽彈,加上豆腐及津白湯頭清甜但性價比較低。蟹粉蓋飯 ($198)飯底加入蛋及青豆炒得粒粒分明,淋上蟹粉澎湃滿瀉,濃郁醇厚不過整體而言鹹度稍高。荷葉杭州雞 ($360)由於製作需時故此道菜式約等了整整一小時,雖然荷葉香氣並不如想像中滲入雞肉,但雞肉皮滑肉嫩之餘細緻多汁實在令人喜出望外,味道香甜近似瑞士汁。意大利黑醋骨 ($98)排骨加上黑醋汁煮得入味,酸甜開胃。烤北京填鴨 ($428)全隻烤鴨連皮帶肉分出兩大盤之餘每盤滿滿當當並非只得表面一層。是次肉質較瘦配上傳統京醬、京葱、青瓜、自家製蜂蜜黃梅醬及哈蜜瓜份外清爽。不得不提精髓所在正是鴨胸皮「一口酥」,蘸上砂糖入口油潤鬆脆。…Read More

首先,未去到食已經一肚氣.話說同朋友諗住去試下呢度嘅片皮鴨,想訂個平日晚飯嘅位,但電話打極都冇人聽.講緊嘅係無論咩時間打去都係冇人聽,剛開門,午飯時間,晚飯時間,總之唔明點解淨係打電話訂個位都咁難。直到最後,諗住再打都冇人聽就唔食嘅情況之下,電話響到天荒地老咁,終於先有位小姐聽電話.晚飯分6點同8點兩場,好啦訂了8點, 心想佢應該係分好左時間同枱.點知準時8點到達竟然門口有好多人等緊位,而餐廳裏面有好多位. 理應所有人都有訂位,如果係因為要等準時8:00先放人入去,我覺得不大可能,因為大家都等左好一陣子,過晒8點都未有人安排入座。門口的職員好似唔知自己做緊乜咁對住個booking list 畫畫畫,一時問人姓咩訂左幾多位幾點,一時又問另一班人人齊未,跟住我就唔明佢安排座位嘅原則,註:我地一早到齊晒,究竟等緊咩呢?.如果接待姐姐就係負責聽電話的員工,咁就立即馬上可以明白點解電話響極冇人聽了(因為佢真係唔知自己做緊乜).安排差到一個點.店內的裝潢是新式而特別的, 尤其是有填鴨做display 嘅位置..,很是重手的菜單,可見店的標誌正正就是「古」+「琴」了.還有很可愛嘅公筷匙羹筷子座,見到它不可能不點填鴨吧.值得一讚是茶的種類很特別,一聽到是玫瑰加荔枝就想試,而同枱不喜歡花茶的朋友也覺得ok.. 因為有優惠卷這是免費的,驚喜點係份量冇少到.想不到松子魚也不算細,味道也算不錯,只是略嫌炸粉太厚.想不到例牌酸辣湯都可以有7碗 不過就係因為咁飲湯飲到填鴨黎之前已經飽左整體都算足料,味道偏酸沒甚麼辣味.看別的評價說南翔小籠包不錯,可惜一開籠蓋已知不妙,皮過厚,雖則是有湯汁,但皮過厚嘅小籠包不用說也是失敗.跟住就係等主角的到來:.值得一提是餐廳貼心地準備了膠手套和濕紙巾..鴨卷餅跟其他店的片皮鴨夾餅不一樣,比較薄同煙韌、另外就是一從蒸籠中拿出來就馬上變涼.....填鴨一到,一開始就片了鴨胸的皮出來給我們,說是特別脆的部份,只是點砂糖醬汁來吃就好。 這個食法很少見,由於是第一下切下來的,新鮮熱辣味道非常好!..其他填鴨片得很薄,每一塊厚度一樣、皮和肉的比例如是,可見師傅功架加上特別可愛的鴨型碟加了分(沒有影相:一隻填鴨是兩碟).味道不俗,這個價錢來說性價比是夠高的。要說就是配料嚴重不足,青瓜哈蜜瓜京䓤都是不夠,吃到一半已經沒有配料了..甜品點了拔絲香蕉,見到實物已經打定輸數,怎料味道竟然不錯,拔絲的糖皮順利結成,炸粉不算厚,整體不錯.除了訂位及其他安排,總括來說食物質數都算是水準之作,唯一是以8點場次來說,2個小時晚飯用餐時間略嫌有點趕.…Read More

片皮鴨係我最愛嘅菜式之一,不過如果想食全隻並由師傅新鮮熱辣切出嚟香港選擇確實唔多,而且亦要夾到成班朋友一齊分享亦唔容易。難得一班舊同學飯局聚舊,我約埋大家一試呢間「古琴雅苑」,齊齊「片片去」。因為OT搞到去到大家已經拍版點晒菜,好彩坐低有啖茶飲,極鍾意政瑰茶嘅我估唔到呢度有瑰荔堂煌 ( 玫瑰荔枝茶 ),相當驚喜之餘味道亦不錯。坐低無耐前菜即刻上場,呢道揚州水晶肉係我第一次食,口味偏鹹,適合「重口味」朋友。呢道 花雕醉雞不過不失,雞肉能展現出醇香酒味,雞肉亦算滑。名物上場!人人即刻相機食先!每隻鴨都係用明爐烤製,一出爐就會即刻去到大家枱上然後師傅即席片皮。第一碟係先食燒到透身嘅「一口酥」,點埋砂糖可算係入口即溶。然後師博足足片咗大約10-15分鐘先「片完」整隻鴨,當然大家等唔到,師博完成一碟後已經俾班餓鬼連皮搶食。每塊皮都極薄,而且貼心地配上薄紙等你唔洗用手拎皮。醬汁方面,除咗傳統嘅烤鴨醬、京葱、青瓜,餐廳更有自製黃梅醬,配哈蜜瓜食口感非常香甜。食完主打又嚟一道我的最愛 - 「風味松子魚」,外型不但美觀,甜酸汁做得極度出色,加埋外層炸到恰到好處,內裡能夠保持魚肉鮮嫩,唔洗3分鐘即刻被大家清空!小籠包每籠6個,底層貼心地加上蘿蔔片令夾起時唔會痴到張紙,內裡湯汁豐富,不過不失。紅燒肋排不但賣相好睇,而且非常入味,燭火保溫令冬天食嘅時候更暖入心。另一推介醬炒年糕蟹,蟹肉肉厚有鮮味,配埋惹味醬汁,連年糕都即刻被大家搶食一空。…Read More

⋇灣仔抵玩新鴨場⋇•••••••••••••••••••••••••同事說好了的升職請食飯。我哋book好咗唯一嘅廂房,裝潢毫不花巧,只是以深淺的木色和玻璃、鏡材搭配,簡潔、俐落,眼睛看了舒服。跟店員八一八廂房有冇Min Charge,原來午市時段2500,晚市就3500,同事大呼好抵,店員提醒,諗住用房要盡早預訂,附近寫字樓有咩喜事升遷都鍾意book房,所費無幾,privacyupgrade!  店員提起佢哋啲果汁全部現點鮮榨,好似幾正,而我都大愛西瓜,不過,正所謂不時不食,西瓜都係留畀夏天啦,我嘅選擇係冬瓜薏米水,色水雖然沉實啲,但感覺夠晒正氣,飲落仲非常之咁真材實料,濃稠得很,糖水咁嘅質地,糖冬瓜咁嘅味道,飲完又潤又暖,準備好食豐富嘅晚餐。雖然話裝修係木調為主,實而不華,但有啲細節係睇得出用過心思。你睇呢個擺公筷公羹用嘅托幾咁別緻。枱上除咗濕紙巾都準備好咗即棄手套,拆蟹食片皮鴨,抹完手再帶埋手套,乾手淨腳,堪稱安全第一,萬無一失。有時落手食好嘢,食到手指都啜乾淨埋,又係一種享受嚟嘅,呢個無疑係店方嘅細心位嚟。店家好客,傾得興起,人又未齊,先請我們吃碟小吃,青瓜沒有一點苦澀味之餘,更是爽脆得嗦嗦作響,跟海蜇絲的闢闢啪啪互相呼應,我等幾個追求嚼感之輩,樂此不疲的大咬大嚼。請看前菜加埋填鴨佐料嘅陣容。醉雞肉質是滑的,賣相也得體。咦,望真啲點解有個香港區徽嘅?主角填鴨出場,大家都不其然舉機,selfie的selfie,story的story。師傅都見慣鏡頭,唔會怕醜仔,只係提醒大家唔好掛住影,記得要趁熱畀佢落刀同埋趁熱品嚐,唔好嘥咗隻北京直送嘅靚鴨。・・・・・・・・・・・・・師傅仔劈頭幾刀先起咗個鴨胸皮,稱之為一口酥,係脆卜卜嘅鴨皮,蘸上砂糖放入口,酥脆而入口即溶,無以尚之。 ・・・・・・・・・・・・・店方一早準備咗兩個大碟,切好一碟我哋就聽話趁熱食,食到咁上下,第二碟又已經準備好,啱晒重視高效率嘅香港人。  ・・・・・・・・・・・・・汁醬佐料方面,除咗齊返大路嘅青瓜京蔥同甜醬,竟然仲有哈蜜瓜添,除咗顏色更靚,其實少少甜味唔落甜醬咁食都好清新。  ・・・・・・・・・・・・・味道有啲似杏子果醬嘅自家黃梅醬仲驚喜,記住要落多啲試真啲個味!  ・・・・・・・・・・・・・好有功架之餘,師傅擺碟仲真心靚靚,整齊又誘人,相都忍唔住影多兩張。但最後都冇數到佢片咗幾多塊,不過見佢鋪到兩碟都滿滿的,就算唔夠108片都不遠矣。  鴨鬆生菜包又係正嘢,啲鴨呀、香芹、菇同筍,全部切成大小相若嘅小丁粒,加埋啲松子,和味又有豐富口感。新鮮西生菜都揀過又裁好晒,塊塊冇穿冇爛,食起嚟特別得心應手。 ・・・・・・・・・・・・・醬炒年糕蟹,隻蟹夠新鮮,啲醬帶少少甜,夠濃郁惹味!留意係手套出場嘅時候喇。年糕件件都沾滿晒個濃醬,五分鐘內清碟之作。・・・・・・・・・・・・・紅燒肋排做得精緻又好食,紅麴嘅色調煞是好看,肉已經煮到離骨,鬆化入味,仲有小小嘅燭火保溫,馬上又安歌咗一份,不過諗深一層,最好都係唔好等太耐先食,否則汁又愈煮愈杰,肉都可能會乾,都係趁熱食啦大家!個松子魚一眼就睇得出做得靚,魚肉又嫩,炸漿又薄又脆,個汁份量啱啱好,唔會過甜過酸,而且仲好上鏡添,真係有姿勢又有實際㗎。出嚟食飯冇理由嗌青菜咁齋啩,整個雪裡蕻毛豆百頁,味道比較家常啲,清清哋都可以的。小籠包做到皮完整唔爛,而且湯汁都唔少,不過個人始終鍾情臺式嗰啲質地黏身啲,一放開筷子就穿嗰款小籠包多啲。   甜品有高力豆沙香蕉,香口又味道不俗,但如果可以再脹卜卜啲一定更加上鏡。  ・・・・・・・・・・・・・小總結:北京填鴨作為招牌菜,真係必食,$300幾一隻係抵嘅!記得食埋個生菜包。松子魚同紅燒肋排都係賣相味道俱皆嘅項目,啱食就唔好錯過喇!喺房聽到大堂都好熱鬧下呀,推薦大家可以嘅話就book房食更Happy啦。 •••••••••••••••••••••••••古琴雅苑灣仔皇后大道東202號QREPlaza 19/F…Read More
