每個人或多或少都可能會對某一種菜式或食物產生莫名的情意結,正如有位朋友一有機會便會四出試不同餐廳的北京烤鴨,不論地點、名氣,總之發現有北京烤鴨的地方便總要走一趟,今晚新目標在銅纙灣,一班吃貨當然奉陪到底。北京烤鴨半隻 $218北京烤鴨這道菜,當然是今晚沒有商量餘地,一定要點的首選,因為是友人的至愛,鴨皮的顏色通透油亮,酥脆肉嫩,皮肉間有適量脂肪,肥而不膩,肉汁豐富,連同蔥段、青瓜條、醬汁等放在熱辣辣透薄有彈性的餅皮內捲好再入口,簡直滋味無窮。鍋塌豆腐 $108對鍋塌這個詞有點好奇,一查之下原來是山東一種烹調方法 : 先煎後煨,豆腐沾上蛋漿煮至兩面金黃,最後一步下高湯,轉小火讓豆腐充分吸飽湯汁後上碟,鍋中剩餘的湯汁再繼續煮至收乾轉濃稠,再淋上豆腐即成。由於有煮熟了的蛋漿包圍,所以比較容易夾,入口軟滑甘香,湯汁加入了瑤柱,所以味道份外鮮甜。糟溜魚片 $138又是一道傳統北京名菜,以桂花酒糟、黑木耳、高湯煨煮而成,魚片雪白,芡汁散發著桂花香,淡淡的酒糟味更突出魚肉的鮮嫩、爽滑,味道不俗。淮山木耳窩筍 $90窩筍翠綠清甜爽口,淮山,木耳口感爽脆,加入適量的調味,反而吃出食材天然不做作的味道。三鮮水餃 $ 80蚊八隻 造型小巧,一口一粒,餃子皮質感柔韌、滑溜;以清爽的菜心、 蝦、豬肉作饀料,肉汁豐富,蘸上香醋,味道更有層次。拔絲香蕉蕃薯 $90餐牌上有蘋果、香蕉、蕃薯拔絲可供選擇,大家討論選蕃薯抑或香蕉之際,侍應便提議來個雙硑,大家一致同意,問題解決,坐定定等食。拔絲可以話是一道老少咸宜,相機食先的甜品,不但造型很有藝術感,糖漿凝固後牢牢地包著的生果,咬落外脆內軟,甜甜的味道非常可口。餐廳陳設不走時髦路線,令人有種回到舊時老家的感覺,菜餚也以地道平實的款式為主,對於一些老家在中國內地的港漂來說,或有如在家用膳的感覺。…Read More

今年剛去完北京食過北京烤鴨,回來之後有時都好想回味一下,今日就去銅鑼灣「老北京」回味一下烤鴨美味。地點位於地鐵站附近,好方便同好容易就找到,門面有中式牌匾、有一道大閘門作裝飾,店內乾淨整潔,坐位闊絡,仲有包廂房,適合私人聚會。我地先點半隻北京烤鴨,價錢已經包括餡皮、配料和醬汁,烤鴨外皮香脆,烤得剛好不會過燶,肉質嫩滑不會過老,食落不油膩,質素方面可以話好味過北京全聚德(我未食過香港全聚德,但北京全聚德有點過份油膩,和外皮偏淋。)配上青瓜、蔥絲、醬料,好美味!😋另外點了一份高力豆沙,紅豆餡同皮都不算太甜,炸得金黃但不太油膩,不錯。整體服務都好滿意,食物質素高,結帳二人三百蚊左右,日後會再來嚐下其他菜式。…Read More
