之前在新蒲崗食過「陳儀興」,在他的旗下其實還有幾間分店。位於鰂魚涌的陳儀興尚潮樓便是旗下一間人氣潮式打冷店。餐廳裝潢走中國古典風格,桌子與桌子之間會有雅致的屏風作為分隔。點好餐之後就先送上味濃甘香的工夫茶和鹹酸菜。鹹酸菜用來配潮州白粥吃,也是非常開胃。工夫茶在吃完後會再送上,能夠解膩,但不敢喝太多因為頗提神醒腦。首先來一道前菜 - 涼拌海蜇頭。海蜇頭的口感爽脆得來有種厚實感。調味是微辣帶酸,還有麻油香。來到潮式打冷,招牌鵝三寶 會是必點菜式之一吧。以鎮店傳統滷水炮製的鵝肝、鵝腸和鵝肉。鵝肝很細膩滑嫩,鵝腸入口爽脆和帶有少許的脂肪。鵝肉則是愈嚼愈甘香。底下還有非常入味的滷水豆腐。熱辣辣的湯喝起來才最鮮 - 二十年老菜脯燉鮮豬肚湯。燉湯有來自二十年老菜脯的獨特香味,會是非常濃,另外還有胡椒香。也能吃到口感Q彈的鮮味豬肚,都幾大舊的喔。如果想吃菜的可以點這個 - 潮式魚丸肉碎煮汕頭白。 能吃到彈牙的潮州白魚蛋,而且是有吃到魚味。汕頭白夠腍身入味,清甜的湯底加了肉碎帶少許鹹香,不自覺會想多喝幾口。…Read More

窩夫與蝦子餅光顧過多次的將軍澳陳儀興飯店,最近以「陳儀興尚潮樓」的品牌進駐鰂魚涌,一於去試試高級潮州菜。窩夫很多年沒有喝過功夫茶了。招牌鵝三寶($298)即鵝肉、鵝肝和鵝腸,底部還有豆腐,十分豐富。滷水汁不會太鹹,味道有層次,窩夫最愛甘香的鵝肝,鵝腸處理得非常妥當,一點肥膏也沒有。頭抽煎英䱽($488)的䱽魚十分新鮮,表面煎得金黃香脆,裡面的魚肉更顯雪白嫩滑。方魚炒芥蘭($118)上桌時排得整整齊齊,芥蘭粗幼適中,口感爽脆。鹹菜胡椒豬肚湯喝得多,點了少見的二十年老菜脯燉鮮豬肚湯($78),燉湯很鮮甜,有胡椒香,也有來自二十年老菜脯的獨特香味,非常好喝。用上新鮮豬肚,比急凍的好吃得多。…Read More

潮州打冷對香港人絕不陌生,潮州粥、鹵味、蠔餅、大眼雞等等,都是香港人喜愛的打冷菜式。一般打冷鋪都是比較平民貼地,而今次去了一間別樹一格的潮州菜館「陳儀興尚潮樓」。陳儀興這個名字為人熟悉,其老鋪在新蒲崗已有超過60年,而這間尚潮樓則走高級路線,鰂魚涌這間分店佔地4千呎,以中國古雅風格古樓為設計,用刺繡及壁畫作裝飾,利用薄紗屏風為座位間隔,環境舒適。大眼雞魚飯打冷又點可以少了大眼雞。這條大眼雞非常大條,肉厚且鮮甜,經過油鹽水腌製帶少許咸香,再沾上秘製普寧豆醬,絕對是完美配搭!汕頭煎蠔烙煎蠔餅都是打冷必點菜式之一,上枱時非常熱辣辣,香氣撲鼻。使用了大量鮮甜且厚肉的蠔,加上鴨蛋和紅薯做的蛋漿,口感和味道都是一絕,是食過最好食嘅蠔餅,沒有之一。方魚炒芥蘭芥蘭非常翠綠,方魚即大地魚乾,帶點咸香和芥蘭一起食恰到好處。二十年老菜脯燉鮮豬肚湯使用了20年的老菜脯來燉湯,蘊含豐富益生菌。豬肚亦選擇了新鮮食材,味道和急凍的無與倫比,這個老火湯既有益又好味,非常推薦。小總結:打冷看似平民菜式,但一樣可以坐得舒適食得招積。雖然今次只是淺嘗了一些家常小菜,但已經感受到廚師功架和食材質素。而且服務亦非常講究,如果想食潮州菜,「陳儀興尚潮樓」絕對是首屈一指的菜館。…Read More
