港人對拉麵的熱潮似乎並未減退,雖然暫時沒有新開的拉麵店,或者有但我不知道。但偶然經過甚麼王,甚麼麵,還是會排長隊的。說來羞愧,我一次都未吃過在和安里的拉麵,雖然很近公司,但每次經過都是人龍,實在沒有閒情逸緻慢慢的排,看看那天與她有緣便試試吧。今天,則去別的拉麵館做白老鼠吧。一直都知道有"秀"的存在,亦知道這裡是車胎人美食,但,看其食評和相片,我完全不覺得這裡會與好吃扯得上任何關係。其實已經拒絕過幾次,加上我不是那種未試過便會死心不息的人,當心感不妙時,我第一個反應是逃離現場,不會有一試的心態,不想賠了夫人又折兵。但同事覺得應該一試,於是,這天便違反了我的規則,戰戰兢兢的來到戰場,看個究竟。
十二時多來到,沒人排隊的,已略猜一二吧,如果好吃,這個鐘數,應該開始現人龍的。但可惜,想找個藉口都不行,因為由十二時多至一時多,店內也有很多空位。我想知道,那些食客,是不是也和我一樣第一次來?
坐下來,店員便遞上了拉麵紙。說實話,款式是頗多的,不像某些拉麵店,味道只有辣和不辣,但味道多,又如何? 好吃的,只有一個味道都能令人回頭。有時太fancy,反而不是好事。
吃過數間拉麵店,除了大型連鎖的,很少會有套餐提供;有些甚至是沒有小食的,只專心做麵。
因為想試試餃子,所以點了一份沾麵餐,沾麵餐價格為$108,有一碗沾麵和10隻餃子。而單點一份沾麵則是$82,單買一份餃子價格為$48,即係一隻要$4.8,我覺得很貴,跟餐算下來則是$2.6一隻。價錢都不是問題,問題是餃子實在很一般,而且是現成貨,沒甚麼特別,吃完也不會令人有深刻的印象。不過,煎得頗香脆的,吃皮沾豉油也不錯。
枱上有數款醬汁提供,有豉油,酸汁和辣汁,而我們選了用酸汁,總覺得用酸汁沾煎炸食物沒那樣的肥膩。

偷了一口湯喝,感覺是味精加辣醬,不算很辣,可接受的辣度。

嚐了一口湯汁,真的很咸。
另外老闆點了元祖拉麵,看樣子也是一般貨色。

而我,則點了沾麵。不知道為什麼,我不特別愛吃拉麵,但對沾麵情有獨鍾,或者是因為上次吃過沾麵後,覺得味道很好,湯底比一般拉麵咸,但那是可入口的程度,所以今次也想試試這沾麵與那沾麵的分別,其實心裡已經知道不用試都知道那間好,不過實在不知道吃甚麼,所以還是一嘗吧。
相信經過年月的洗禮,大家都對沾麵不陌生吧? 簡單的一句就是濃湯,麵另上。濃湯有多濃? 其實正宗的沾麵那湯底並不是很鹹的,對於我這重口味的人來說,不用加湯都可以把湯喝清的。而吃法,不就是每次吃時,先把麵夾到湯中沾兩沾,然後才吃。而這黑秀,則是湯底中混了些黑醬油,顏色頗深的,看上去有點混濁。味道方面,比黑秀拉麵的咸,而黑醬油的味道則像燒焦了的黑蒜一樣,頗油膩的;除了很油外,還很鹹,可能你會說我不懂吃,因為吃完沾麵後,會加入高湯享用的,但說了正宗的沾麵並不是真的很鹹,而現在則是只有咸,而沒有鮮,也沒有濃郁的豬骨香,有必要把一碗好好的湯做成這樣嗎?
而麵質,與大型連鎖的有分別嗎?在超市也買到的普通貨色。
不過,煮的時間剛剛好,所以也不會很爛,加上這是沾麵,沒有浸在湯中,所以由吃至吃完都算爽口的。
這隻蛋的賣相真的很差勁,只有半隻,所以蛋黃全都流到湯中。蛋是頗香的,也算滑溜,還有點醬油味,不過如果給我一隻蛋會比較好。
黑秀沾麵中的叉燒與其他拉麵的不同,其他拉麵都是一片片的,而這個是一粒粒的。叉燒味道不錯,很軟腍,亦不嚡口,因為切了粒,所以比較有口感,每粒叉燒也有點肥,不算差。
我食量不細的,吃清麵後,便麻煩侍應幫我加點高湯,其實我都知道自己不會喝的,但還是想試試加湯後的味道如何。上次吃沾麵,把整碗湯都吃清,這次,嚐了一口,不敢再嚐,真的超咸,咸得不能入口,看見其色都已怕怕。
當拉麵店越開越多開,比從前更易吃到好吃到,顧客的要求高了,競爭也相對地提升了,想生存,只有乖乖滿足客人的口味。而這裡,似乎不合我的口味,味道不好,超鹹,我期望是濃郁而不是鹹;麵質也很超市貨;而價錢方面,連加一後大約$90一碗,有些好的麵店,也差不多八九十元一碗,但那些是手打麵和經過數十小時餚製的湯底,完全嚐不到味精,而這碗,吃完真的有點口乾。那個比較值得? 服務也沒有很特別,都是落單收碟而已。在中環,這樣質素,這樣的租金,這店應該租約滿後就byebye了。
順帶一提,秀拉麵是車胎人美食,再一次證明,法國人對亞洲食物與亞洲人對亞洲食物的品味是相反的。

就是沒覺得有何特色.
早前看到有說,
團購以$39 買中環【秀拉麵】$80現金券.
“湯底熬製超過20小時,
正宗九州口味,
入選《香港及澳門米芝蓮指南2012》「必比登評審團推介榜」入選米芝蓮指南” , 為人氣主打.
一宜希望吃得到真正美味拉麵神韻的我當然不走寶,
買下兩張劵,
擇個吉日吉時,
去吃一轉滿心歡喜的.
心裡在吶喊:對版了,
就是這樣的一個拉麵了.
第一次幫襯,
選的是鎮店的:「博多元祖拉麵」
大大片而又均勻薄切,
肉質彈牙而味鮮,
令人回味.
一碗麵下了肚便滿意了.
爽得很.
味道濃郁,
是讓人看得到的骨膠原!
未試過的一定得試一試,
很不一樣的美味,
不一樣的感受.
不過可惜的的是“豬毑除”很重,
若能用上“豬公”會好得多.
吃的是沾麵.
主打湯底可選自:
(1)包括完全不含味精的純味豬骨湯底「白秀」、
(2)配以香蒜精製黑醬油的「黑秀」,
(3)及配以秘製辣油的「赤秀」.
哈哈,
吃得超滿足的.
很特色吃一個吃法.
麵 和 餸+汁 是分開上的,
麵是室溫的,
除非你要求熱上,
但那便不正宗了.
店中餐牌也有指導的,
而店員也好樂意教受和指點哩.
把麵一點點拉到汁碗裡吃,
吃完麵後是最漂亮是時刻:
店員會把美味的湯倒進你的餸碗裡,
那湯跟碗中所有剩餘的全混為一體,
成了上好的美味,
最愛的湯,
是個濃味的湯耶~
是個很好的小店,
有特色有家味道的店子.

星期六血拼完難得有人話想食拉麵, 突然記起呢度有間拉麵, 就黎左食. 黎到大慨9點, 完全唔洗等. 入門口前見到原來係米芝蓮推介, 比米芝蓮昆左幾次後, 見到反而有d 擔心. 原來舖頭入面都幾大, 侍應見我地一袋二袋, 就自動卑左個角位我地坐擺野. 座位本身唔係舒服, 係冇靠背的圓櫈, 好在位與位的距離都OK, 檯亦唔會好窄, 所以都OK.
拉麵得3款揀, 沾麵都係, 都係睇你想要辣, 蒜定普通湯底. 兩種麵都有餐, 拉麵餐有小食同野飲. 沾麵就係有10隻餃子. 睇價錢其實都幾抵食, 但由於我地兩個都唔係好餓, 所以淨係拉麵叫左餐. 我掙扎左輪都係決定食沾麵.
一口餃子: 幾好. 皮夠晒薄, 邊脆脆地, 涵份量再多d會更好, 因為而家肉味唔係好夠.
黑蒜沾麵: 先講餸, 半隻蛋的蛋白質感冇博多拉麵龍亭咁好, 但蛋黃夠晒流心, 可能對有d人黎講太生, 但對我黎講啱啱好. 肉係粒狀, 但唔鞋, 因為都頗肥,. 湯就有好香的黑蒜味, 唔算好油, 好鍾意裏面有好多荵, 荵香加蒜香特別正. 麵係我鍾意的幼麵, 麵都幾彈牙. 之前食隱家覺得唔夠熱唔好食, 呢度的麵直情係凍的, 但我反而覺得好食好多 (唔知係咪因為當日天氣唔係好凍). 食完麵後斟湯, 湯係木魚湯, 飲落都好香, 飲過咁多間的湯, 呢間最drinkable. 其他唔係太咸就偏咸, 飲到一半就頂唔順.
總結: 以現時食過的沾麵, 呢間最啱我口味. 卑個笑先.

事緣早輪一位開飯網的會員梵高將軍,也曾為為此店撰評過,因為內容情理兼備,個人最後也報以推介,倒是對方還提出一個問題,關於對於沾麵的看法?! 一來本身不是拉麵癡,更遑論是在港初成熱潮的沾麵,與其堆砌無謂的文字,倒不如親身吃一次,才再作評價好過。
當嚐完餃子,再清光麵條之後,最後亦依照了指引,叫侍者加入了木魚上湯於濃汁之內,這次嚐出來的味道,於濃香之餘,終於出現了一點鮮味的層次.......如果這碗沾麵的味道,是店內的平均標準,甚至是本土及當地的基本水平的話,恕本人不太懂得欣賞,或者,還是需要一點時間消化也說不定。
最後套用電影一代宗師的其中一段對白:有些成了臉子,有些則成了裡子,也是時勢使然。

餃子不俗,沾麵質素不過不失.
裝修時尚,環境舒適,服務不錯
重點是地點方便,不用大排長龍

HIDE & Seek:
I maybe wrong but I always thought that this shop was the first shop that sold tsukemen in Hong Kong. I tried this almost a year ago. I decided to try Hide-chan again after having "Fujiyama 55" just to have a more accurate comparison.
I got a seat immediately without waiting even during lunchtime in Central!
The place was pretty quiet.
Other than the two tables near the entrance, the rest of the seats were arranged in a U-shape so everyone was either facing the wall or the open kitchen.
Very clean, modern decor with jazz music as the background. The seats were reasonably spaced apart.
A jug of water and the normal condiments were placed in front of each customer.
I was greeted by the very friendly and polite manageress. In fact, she was very, very keen - keen to the extent that she switched chairs for me because a previous customer just left that seat and it's a bit... warm. Excellent attention to detail.

Tsukemen and Ramen:
I had a look at the menu, Little changed since my first visit.
Ramen in soup was divided into :
-Original Hakata (extra rich); 博多(濃味)
-White Hide (less rich); 白秀(正常味)
-Black Hide (garlic); 黑秀(蒜) and
-Red Hide (with chili oil). 赤秀(辣油)
Tsukemen was divided into Original Hakata and Red Hide only.
Red Hide It's basically original tsukemen and tsukemen with a bit of chili oil.

I ordered a set. It's HK$108 for a tsukemen set with 10 pieces of gyoza.
HK$88 for tsukemen only.

I ordered "Red Hide" Tsukemen set, which came with 10 pieces of gyoza.
Noodles:
Noodles here were not as chewy as Fujiyama and Kakurega but better than Yachio (they do tsukemen too - it was quite horrible the time I tried it as the noodles were all soggy and stuck together like glue made of... noodle paste).
Those I tried at Shugetsu and Menya Musashi were thick so probably not directly comparable. I prefer the noodles here over those at Shugetsu (which was too hard the last time I went) and at Menya Musashi (too thick - affecting the texture).
Kakurega at Sham Shui Po still have the best noodles so far.
I tried "Ore no Tsukemen" (my tsukemen) recently and noticed that the thin noodles served there looked a bit similar to those served here.

Chili oil in HIDING!
I remember the first time I came here, there was a lot of bonito slice and extra bonito powder provided.
I was expecting something with IMPACT to "power-up" the rest of the working day; however, this time I could see neither the bonito chunks nor bonito powder.
I could barely sense the presence of the homemade chili-sauce
, which is supposed to be the key feature of the "Red Hide". 
Still, the taste - essentally of the Original Hakata - was not bad. Pretty strong bonito taste, garlicky and oily.
Please heat up the sauce properly though.

The chopped char siu chunks were fat and tasty (but not grilled enogh!)
The egg didn't leave a strong impression but was OK. Nori was pretty good.
The sping onions were fresh.
My first visit here was definitely much much better. They definitely need better quality control. Still, overall it's acceptable.
After adding the soup, I almost finished the whol bowl of soup/sauce. I think this mixture was a bit better than Shugetsu. It's less salty.

Don't Hide the Gyozas:
Gyozas here were good on both occasions.
Pan fried properly. Crunchy on the outside and with meat sauce inside. The minced pork was well marinated.
They provide a special gyoza sauce and a normal shoyu. The special gyoza sauce had a bit more vinegar and thus more sour (& appetizing).
Gyozas are worth trying.

With Hide-sight:
My first visit here was better than the second. However, the quality is still decent.
Fans of strong, rich, bonito based tsukemen may like the soup here.
However, better quality control is definitely required, especially for the char siu and the noodles (it's a bit soggy).
If you just want to find a little hide-out in central, away from the maddening crowd, this may be an option worthy of attention.

麥味不錯.中上.覺得比武藏或周月好.但麵條暫時還是〔隱家〕最好.
表面上好像Ore no Tsukemen的幼麵.再乾身一點更好.

上星期才試了一風堂, 今次心思思又想再戰另一間未去過的麵店. 同兩個好姊妹商量過, 有人提議來秀拉麵.
店子在中環鏞記斜對面, 非常好找. 大約等了十分鐘左右就有位. 身為一個OL, weekday lunch實在afford 唔到去光顧那些打蛇餅的食肆.
店裡格局比較cozy, 和門外熙來嚷往的街道仿似兩個角度. 相比起市面一般大型連鎖式經營的麵店, 這種地道的風格較合我意, 令我不期然回想起日本那種親切的拉麵店.
服務員頗細心地向我們講解點餐紙上某些可選擇的項目 (e.g. 叉燒部位, 麵的軟硬度 etc..). 見天氣有點熱, 我叫了黑秀沾麵和麻醬凍蕃茄降降温. 同行姊妹們則點了白秀拉麵和黑秀拉麵.
凍蕃茄開胃新鮮, 麻醬的份量恰到好處, 沒有搶去蕃茄本身的鮮味.
食沾麵有點似食蕎麥麵. 將夾起的麵先浸入另上的湯裡才進食. 由於麵是乾身另上而非浸在湯裡, 對於食得慢的我也不怕麵會越食越諗. 湯底很濃沃, 食得出是比較正宗的九洲風格呢. 那半隻溏心蛋也絕無欺場.
另外叫了一支波子汽水, 為我們這餐地道的日本拉麵畫上愉快的句號.
店子在中環鏞記斜對面, 非常好找. 大約等了十分鐘左右就有位. 身為一個OL, weekday lunch實在afford 唔到去光顧那些打蛇餅的食肆.
店裡格局比較cozy, 和門外熙來嚷往的街道仿似兩個角度. 相比起市面一般大型連鎖式經營的麵店, 這種地道的風格較合我意, 令我不期然回想起日本那種親切的拉麵店.

侍應見我們滿頭大汗,就向我們推薦日式沾麵。 沾麵的理念和廣式撈麵相似,醬汁另上,將麵條浸入醬汁內,撈起即食,這樣麵條不會因為泡於醬汁中而搞到過咸過軟。聽說是博多地區夏天的食法, 這樣過一過拉麵癮卻又不會吃到滿頭大汗。
這個食法也啓發了我改良自己吃撈麵的方法,以後要試試。
秀拉麵的沾面配以半個溏心蛋,但由於我和朋友想Share一碗面而叫多兩款沙律,就加多一只蛋。

here are the menus, apologise for being a bad photographer.
Pretty special, I ordered the spicy Tsukemen, it was OK but the taste is not something that I like.
and it recommended u adding some soup to drink the soup after you finishing the ramen.
But the soup taste very terrible once you did it......
Dumplings, you have two sauce for dumplings, pick one you like.. one is just sweeter.
personally like the sweeter one.
the dumpling, I feel like there were a lot of AIR inside it. . like .. very empty
The original ramen, was good but not best. the pork neck was burned and it taste good

都有一排無嚟秀拉麵, 好似上次嚟佢都未榮登Michelin嘅…勁喎! 好似都無乜邊間日本拉麵比車胎人收納 …
不過我呢D人就梗係要信自己條脷多D!
上幾次試過哂佢嘅招牌正宗九州乜秀物秀同超班餃子, 今次就決定試佢D新menu裹面嘅款式!
有少少龍, 好在有冷氣, 排咗一陣, 好快就有位!
可能D年青伙記夠快手, 食客又快手!

其實我見佢個牌有appetisers原個蔴醬tomato同埋冷豆腐, 已經喺未食呢客主菜前歎咗先~~正! 降温醒神之選!
我見隔離有人食緊沾麵, 聽到佢哋讚個汁夠特別唔死鹹, 都好想試, 個肚公道, 惟有下一次! Tsukeman, I’ll be back!!!
