三年几没有去过澳门,中秋节前夕碰巧澳门有国际烟花汇演比赛,决定请一天假,一家三口去澳门过中秋。上一次在澳门 Galaxy Resort 的 《米芝莲》星星餐厅「8 1/2 Otto e Mezzo」食晏,今日就稍为平民一点,拣了另一间同样在 Galaxy Resort 的「Ritz Carlton cafe」。其实,如果讲价钱,虽然较「8 1/2 Otto e Mezzo」便宜,但始终都是酒店餐厅,而且以 cafe 的定位来説,并不算便宜了。作为名牌高档次酒店的附属 cafe,装修当然不会马夫。以纯白色作为主要颜色,采用白色衬灰色纹理的云石枱面餐枱,再加上黑白色的仿古细细块地磗、及白色灯光照明;整体感觉光洁明亮、高级优雅,虽然不是什麽宫庭式设计,但仍然成功营造了一种雍容华贵的气派,不愧为 Ritz Carlton。酒店 cafe 当然不能缺少甜品柜,件件精美,定价同样不便宜($78~$88),不过,如果能够等到晚上八点後才来品嚐甜品的话,就全部半价⋯⋯ 只是,到时候还有没有尚未沽清的蛋糕,就不得而知了!精美甜品之外,估唔到还有少量生蚝供应,品种都有五、六款,果然系五星级酒店气派。除了午餐之外,单点餐牌亦有不少选择,前菜、沙律、三文治、鱼类海鲜、肉类、牛扒、素食、甜品样样有齐,就是缺少了意大利面。Lobster Bisque ($108) 味道合格,但唔够浓稠;虽然有海鲜及虾殻的甜香,但味道未够浓郁。其实已经相当好味,但与之前在其他高级扒房品嚐过的龙虾汤比较,仍然稍为有所不及。Salmon ($198) 配香橙牛油酱、炒杂菜及炒饭。Salmon 鱼皮煎得够香脆,切得超厚身的三文鱼又煎焗至刚刚熟透,表层鱼肉仍然嫰滑、并没有过火而变得粗嚡。意料之外炒饭很好食,只简单加入调味炒香,并没有其他配料;饭粒分明、乾身但又不是太硬,很多中式酒楼都未必做得到这种高水准。Duck Breast ($248) 配蔬菜、薯蓉及樱桃酱汁,虽然侍应建议 medium rare,但担心太生,拣了五成熟。上碟时已切开两块,顔色淡血红,正好是五成熟左右。切下去竟然有点偏硬,原来五成熟已经过火;虽然鸭皮有鸭油香、鸭胸肉又冇鸭臊味,但肉汁唔多,鸭胸肉唔软身、有点难以咀嚼 ⋯⋯ 下次再食会要求 medium rare。用樱桃煮成的酱汁原来很衬鸭胸肉,道理有点似广东烧鹅配酸梅酱;都是用带酸甜的生果酱汁配搭味道重的家禽。由於今次拣错生熟程度,对餐厅唔公平,所以唔评分;但味道其实几好。Two course lunch set ($258) 拣了 Steak (加 $50),头盘就拣了是日餐汤椰菜花忌廉汤。有椰菜花的淡淡清甜,如果饮惯味道浓郁的野菌忌廉汤,就可能会嫌味道太淡。牛扒通常配搭新鲜热辣炸薯条,当然今次也没有例外。食炸薯条,茄汁及蛋黄酱是最佳配搭;除了薯条之外,还有一小砵新鲜野菜沙律。以午餐份量来说,牛扒很大件。六、七成熟的火喉控制得相当好,牛扒质素亦很好,有肉味、够 juicy、肉质松软冇渣;只是作为一间高级酒店 cafe,肉眼扒边缘位置的筋膜及脂肪条竟然没有彻底切除,就显得美中不足,做唔到酒店级扒房(餐厅)应有的水准。Lunch set 虽然冇拣 three course(包甜品),但带了小女儿同去,可能实在太可爱了,餐厅经理主动送上一个免费甜品 Chocolate Raspberry Earl Gray Cake!原价要 $88 大元!酒店级甜品当然卖相行先,非常完整的半球体,表面洒上点点金箔、顶端吱了一小抹朱古力 mousse。朱古力浓浆外层包裹下的内层,炮制方法同样复杂。底层是朱古力软曲奇、中层是 Earl Gray 海绵蛋糕、顶层就是微酸的 Raspberry chocolate 浓稠 mousse。Earl Gray 及 Raspberry 的味道皆相对清淡,差不多完全被浓郁的朱古力味所掩盖,做唔到三者平衡,与名称有点出入。整体仍然是一件非常好吃的甜品,尤其是嗜朱古力的人就会爱煞了;但如果是因为 Raspberry 及 Earl Gray 而选择的话,就会有点失望了。本来拣这里午餐的原因,就是一台仿古音乐车。只要有客人生日,侍应就会推出音乐车,手动上链播放《生日快乐》⋯⋯ 点知道这台音乐车坏掉了,正在维修中!虽然有点失望,但仍然有一件奉送的小蛋糕,还要是非卖品,餐厅的甜品柜内并没有这一款蛋糕!这件迷你生日蛋糕是彻头彻尾的朱古力蛋糕,底层是朱古力蛋糕、中层是浓稠纯朱古力 mousse、顶层是特浓朱古力浆,配搭鲜红色的士多啤梨及 cranberries,非常吸引。每一啖都是浓郁朱古力香味及甘甜,估唔到竟然较炮制方法更为复杂的 Chocolate Raspberry Earl Gray Cake 更加好吃 ⋯⋯ 可能因为我们一家三口太爱吃朱古力蛋糕了?!作为五星级酒店的直属餐厅,装修、服务态度及甜品实在冇得输,不过,各款主菜出品未算有惊喜;当然较坊间一般餐厅好吃,但用同样的价钱,在香港应该可以找到更加好吃的(非酒店)餐厅,「Ritz Carlton cafe」须要再加把劲。 继续阅读

1st of all, there is not many restaurants in Macau that I can make on line booking. And this is one of them. 21 Oct is my wife's birthday. I made a reservation via openrice. It is nice to see the stand of "Happy Birthday" when arrived. The environment is nice. The staff and the service are excellent. The food is good. The rib eye steak is juicy. It's a little bit salty for me but my wife like it. We both think that the steak should not serve with French fries but the waiter said it is a kind of traditional. I would suggest them to serve with the thicker one if that is the case. When we finished the main course, the waiter played the birthday song with a traditional music box and send us a small birthday cake. 继续阅读

This was a top quality brunch. Although I didn't go for the champagne option, there were still a range of juices I could drink and you could order other beverages such as tea, coffee (they did a very nice mocha for me) and soft drinks.The appetisers were amazing - very good parma ham, thinly sliced chorizo and salami, with a range of cheeses and other condiments. Good mixed salads that were on offer included lyonnaise salad, octopus salad (very tasty and not rubbery at all) and beetroot salad. The cold seafood was excellent, with very large prawns you could dig yourself into. I was a bit disappointed they didn't do eggs benedict but the sicilian eggs were very good. I love the hot dishes as well, which include grilled lobster and wagyu beef sliders with french fries.If you still have room, there were a range of desserts, including American-style doughnuts, creme caramel, lemon meringue pie and three different flavours of Haagen-Daaz ice cream.The service was excellent as well, as all the staff were very attentive. 继续阅读

今日拣咗系Ritz-Carlton Cafe食晚餐,今晚嘅主题Surf n Turf衬晒由港珠澳大桥过去澳门,正正就系喺水上行车⋯呢一餐饭可以称得上搭埋车过澳门都值得食一餐饭,喺香港用咁嘅价钱我真系搵唔到咁样嘅质素同埋环境!头盘我试咗三文鱼他他,做得非常之好;三文鱼说里面夹杂左啲青瓜同埋酸忌廉,口感非常清新开胃,加上迷你炸薯格格俾咗一个爽脆嘅口感。主菜我就拣咗加拿大牛肋肉配波士顿龙虾,龙虾不过不失,只钳开咗一半好方便咁攞出黎食,虾身用蒜蓉牛油轻轻带出鲜味;加牛出名鲜嫩肉味重,呢两件牛肋肉煮得恰到好处,鲜嫩多汁松化唔油腻,配以黑椒汁又或者泰式辣汁非常好食!House Red亦系Dry同Body比较厚身嘅一个配搭,非常有能力并配咁Heavy嘅加拿大牛肋肉,至於Side嘅鸭肝就可以话系正常合格收货,个人认为如果剪得脆啲会吸引啲。甜品方面就系朱古力蛋糕,朱古力味香浓但系比较甜;反而自家制嘅云呢拿雪糕就真系食唔出云呢拿味道,呢个实在有改进嘅空间,因为最简单嘅连云呢拿子都见唔到,又真系讲唔过佢系Ritz-Carlton自己整嘅⋯ 继续阅读
