在港短暫停留,有幸遇上麗晶酒店餐廳「珍饌盛宴Dining Destination」試業,又見Openrice上還未有麗晶的 listing,忽發其想重新投稿。香港麗晶酒店前身為香港洲際酒店,酒店餐廳於12月26日開始陸續試業,包括一直營業的麗晶軒(前欣圖軒)、The Steak House、港畔餐廳及大堂酒廊。訂到大堂酒廊試業第二日的Lunch / Afternoon Tea時段,到達時才知道原來 12 點前大堂酒廊有早餐時段,12點後開始午餐及下午茶時段,比其他酒店的下午茶時段靈活得多。 餐廳環境大體與之前洲際酒店的環境相似,除咗入口略微向右側移動,取消了 stage floor 設計,加了 pastry counter,並將 colour tone 由米/木/灰色,變成比較時尚的米/綠色tone(令我聯想起某航空公司品牌...) 。雖然現在感覺比較開揚,但個人更喜歡洲際本身的座椅設計(現在的 armchairs 比較硬,無咁 chill)。酒廊提供的菜單是英文菜單(目前為止還沒有看到其他blogger/vlogger見過中文菜單)。 喺印像中, lunch menu 比較似以前洲際菜單(如喇沙,和牛漢堡),但可能因為試業,選擇非常有限。 今天選擇了下午茶菜單,雖然菜單上寫著$888兩位(包括無酒精飲料)/ $1028 或以上兩位(包括wine pairing),但還有 off-menu 既$488一位的選擇(包括無酒精飲料)。由於想飲吓其他野,點了 Golden Victoria Sunrise (mocktail),味道有點像楊枝甘露。一位下午茶是用三層架上桌,如果點兩位下午茶,pastries 會用三層架上,但三文治會分開上。但食物擺放並不是傳統 high tea plating (鹹點在下,甜點在上)。Housemade jam 和 clotted cream 份量非常多,而且顏色 / texture 跟傳統的又很不一樣。上層架包括一件 scone 和一件 Madeleine。中層架有四款三文治,包括蟹肉、黑松露、魚籽玉子和三文魚餡料,其中玉子那款比較特別,玉子比較像布甸質地。下層的三款甜品,分別是朱古力(有點像黑森林)、mont blanc 和奶味比較重的,比較日系的小甜點。…Read More

正忙著「向世界出發」之時,不少世界級食府正忙著「向香港出發」。行入去都唔夠三步,已經預咗會出事…望一望那令人抓狂的 menu,撥一撥進來時沾滿油煙的頭髮(奇就奇在爐旁則一點油煙味都沒有),要了 Yakitori(烤雞串)、Asupura(烤露筍)、Shishito(烤日式甜椒串)及 Onigiri(烤飯糰)。新烤的雞串,雖然不是「乾巴巴」,但絕對「嚡烚烚」:Tare 的 recipe 好像不大對勁,一味得個鹹,鮮都唔鮮。露筍對香醋、甜椒對海鹽,大概錯不了,但請別落得重手,也請別烤得重手。飯糰嘛,好在用薑茸,弊在用爛飯,食咗要離婚。爐端燒的好處,是可以一睹大廚的超凡技藝;爐端燒的壞處?大概也想到吧。沒有相應的技術,用備長炭又怎樣。(何況應該不是用日本進口的備長炭)…Read More

下午在蓮香樓一次過滿足哂n 個願望(叉燒包、(結實的)蓮蓉包、(軟滑的)燒腩卷、珍肝燒賣、陳皮鴨湯飯…)之後,似乎吃點心的意欲未減。這裡能夠賣這些「懷舊小食」,除了「Q 版/迷你」二字之外,便是「創新」二字。瞥見兩串金錢雞串和鴨腳包串「肆無忌憚」的掛在燒味架上,「心知不妙」:「Q 版金錢雞」用上了沙葛墊底,翻熱過後的感覺仍爽;與其說用上了叉燒,不如說口感如蜜汁肥豬肉(但照計佢無理由特登整一味蜜汁肥豬肉…除非串金錢雞同叉燒是同一時間整吧。「迷你鴨腳包」原本應有的鴨腸鵝腸不見了;取而代之的,是去骨(但未去筋的)鴨掌、蜜汁肥豬肉同鴨胸…除了鴨肉口感和豬肝的味道之外,兩者幾乎一樣。唉,「想食」大過天。…Read More

鰣魚與六月黃及其他

先謝過各路人士的穿針引線,促成這次久違而較像話的飯局;亦多謝搞手苦心經營,寫出如此繽紛的菜單。事出倉卒,亦來去無蹤,只好以文字交流,留下小的對是役之愚見。好清淡此道者,理應不喜蘇浙滬杭菜,莫遑「港化」、「潮州化」了的蘇浙滬杭菜。這裡的酒糟鰣魚,說淮揚不淮揚,說蘇浙滬杭也不蘇浙滬杭:淮揚菜裡的清蒸鰣魚(遲魚),以清甜且甘腴的肉質而引人入勝,落醬油、落酒糟,可以說是吊味,亦可以說是辟味…大概只有經手的師傅和買手才可以侃侃而談。恕小的對鰣魚閱歷少,未能確認鰣魚的來源和品種,但離珠江游域、外國種的養魚不遠矣(不可能是游水的錢塘江/ 長江流域的鰣魚吧?!)不去鱗的另外一個原因,是鎖在鱗間的魚油,才是鰣魚的精華所在。(謝謝大家高抬貴口,小的口福不淺!)早陣子大伙兒喜滋滋的談(和吃)六月黃,又破一破例的寫兩句:始終鰣魚和六月黃不是當造(足足遲了三個月,唉!),即或用上最佳的配搭和煮法,也稱不上登峰造極之作。不過…是晚被忽略的年糕倒夠畫龍點睛:(比較)新鮮的(寧波)年糕是先浸後切,再用大油鑊炒軟。「六月黃炒年糕」的六月黃不是主角,不出為奇-- 吃的,是蟹和油吊出來且滲在富口感的年糕之間那奇味。愚認為,用普通毛蟹炒年糕已經足夠-- 原理,同紅酒燴牛尾同出一轍。各路英雄,幾時再開飯喇?…Read More
