刺身更勝於蒸籠料理

首次踏足季和,已被周遭一瓶瓶的sake吸引,細問了才得知他們除了經營餐廳外,更進口各式各樣的日本燒酒供客人選購,而餐廳食用的各項食材均是專人定期特地從日本選購及運抵店鋪,亦維持菜色的質量水平。這些已令我隱隱地對季和的料理和膳食水平頗有期待。 前菜是螢光魷魚和鮮魚意式薄切,十分新鮮,肉質滑口。再來的季和特上刺身盛合更是精彩,用了由日本直送的吞拿魚腩、金目鲷、竹簽魚、藍天使蝦和針魚組合而成,服務生特別提示要順序從淡到濃味品嚐,個人特別對金目鲷和竹簽魚最為鍾愛,肉味鮮美,可見他們用料選材十分著重新鮮。 下一道高野豆腐亦是驚喜之作,以小蜆和生紫菜配製湯料,高野豆腐質感比普通豆腐更具韌性,咬下去的時候完全吃到豆腐完全吸收了湯料的鮮甜味,無得輸。 廣東蠔昆布蒸相對之下不大出色,不過不失。接下來是早已在我們面前烹蒸多時的鹿兒島黑豚肉及和牛蒸籠料理,介紹時得知蒸籠這款烹飪方式標榜健康養生,將黑豚肉及和牛中的油膩除去,配搭菜蔬享受肉的味道。如此架勢的陣象本來令我滿心期待,但放進口中品嚐時卻有感蒸籠效果反令上乘的食材的鮮味也除去,相對之下較平平無奇,有點失望。 幸好後來的梅子燒飯團和秋田稻田冷烏冬有加分,梅子或甜或酸的味道十分特別,夾在已先微煎至香脆可口的飯團之中,正。個人十分喜歡吃偏硬的冷烏冬,這裡正合我口味,烏冬十分滑身,不錯。 最後甜點是冧酒雪糕,頗特別的選擇。吃罷最令我回味的還是頭幾道的鮮甜刺身和高麗豆腐,主打的蒸籠料理反顯平凡。對選用食材有特定的食客記得於訂枱時註明,讓餐廳能預先為你預留,以免到場時失望呢。…Read More

有心鑽研菜色的fusion餐館

Naked 給我的感覺是一家勇於嘗試、渴望突破瓶頸、願意鑽研創新菜色的fusion餐館,今晚共嘗試了七道菜色,有幾道是頗有驚喜的,最值得欣賞的是他們每一道菜的收費實在相當相宜,在中環或蘇豪地段的餐館比較來說實屬難得。 首先是櫻花木花雕熏蛋 (Sakura Smoked Huadiao Egg w/Caviar),雖然味蕾上不大品嚐到櫻花木,但鴨蛋的處理和煮法相當不錯,值得一嚐。 再來是Caviar Cornet Duet (Black Sesame & basil) ,有Citrus Uni和Spicy Toro Orange,我嚐的是前者,very fresh and rich,不錯。 接著是我最喜歡的Big Eye Tuna Ouinoa Salad,他們用新鮮吞拿魚刺身配搭著各款新鮮蔬菜拼湊出這道漂亮的Salad,聽說他們是直接從香港農場取當時最新鮮收割的蔬菜送抵餐館,即時發揮,因此每次來品嚐的蔬菜配搭都不一樣。我略顯吞拿魚不夠新鮮,相對之下各式各樣平常較少吃到蔬菜配搭更勝一籌。 Crunchy Lobster Iberico Ham Steamed Bun也十分有驚喜,他們意想不到地用龍蝦及48 Months 風乾火腿配搭炸枝竹,味道和口感是出奇的相配!可惜的是因食用火腿和Bun有點難嚼開以致有點狼狽,若能加以改善,絕對是值得推介。 Crispy Stuffed Taiwanese Sausage 採用了大腸夾小腸的概念,用台式的辣肉腸配搭混合芝麻醬的Garlic Risotto,雖然嚐起來是可預料的台式味道,但用如此烹調的Risotto襯底確實特別。 這份Sakura Wood Smoked 40oz Boned in Rib Eye對於我們三人來說份量實在too much,他用加入了紅菜頭的薯蓉作配菜,個人對紅菜頭沒太大喜好,而這份Rib Eye的肉質稍嫌硬身,推薦程度一般。 最後登場的是辣茅台巧克力冰淇淋配油條(Spicy Chocolate Mao Tai),意念頗特別,用切片油條浸在Spicy Chocolate Gelato中,但我對把Gelato吞嚥後灼喉的感覺有點保留,相對之下還是比較喜歡Chocolate Gelato。 雖然末段幾道菜色頗有點失望,但勇於挑戰及改良菜色的餐廳仍然值得支持,加上合理定價,下次可以再嘗試他的新菜色。…Read More

可以encore的意式小店

在友人極力推薦下初嚐這家,初踏進店門已頗有好感,高樓底設計加分不少,加上頗具氣派的廚房,和滿店的外國人,讓我心情也放鬆不少。 先上場的小食一點也不欺場,炸芝士十分值得推薦,外面可口但內裡卻是流心芝士,很有驚喜。 本人雖並非薄餅酷愛者,但這裡的薄餅也真相當不錯,薄身披底十分鬆脆,唯一美中不足的是略嫌太鹹,越吃越口渴。愛吃Carbonara的我當然忍不住點一客試試,sauce不太liquid,煙肉味夠出,是我喜歡的質感。 甜品選擇不多,只有Tiramisu及Panna Cotta,最後兩款都點了。個人較偏好Tiramisu。與友人叫了白酒和啤酒解渴,整體感覺和氣氛也不錯,可以encore。 聽說他們的雞翼做得十分出色,可惜只在西環有售,下次再去造訪!…Read More
