上星期朋友生日,要搵個地方坐到8個人,又可以包到場,每次去到仲好似開盲盒咁,係創意,視覺,味蕾上有不同驚喜。第一時間就諗起二十道源師傅的Omakase。———呢度的驚喜之處,就係每次黎到都會由不同原產地的食材(包括本地),配搭不同的調味,組合岀創新而不同的日式佳餚。愛酒之人再配搭合適的白酒或Sake,會打破你係本地食omakase 的體驗。———冰菜配吞拿魚酒盗忌廉芝士 - 用上由日本吞拿魚內臟醃製的酒盜,鹹鮮味配搭香濃芝士口感,再用冰菜拉返個平衡,開胃送酒一流。我地pair 左清爽,微花香的白酒,更能平衡其鹹香芝士味。———汁煮關東刺參 - 本來見到海參無乜期待,因為大部分海參煮法都係掛汁上去,內部無乜味。但呢條刺參,改變左我對海參的睇法,高湯煨晒入成條參,襯返白蔥,鮮香甜,味濃不膩。———薰衣草慢煮蠔 - 一口咬落隻蠔到,蠔的鮮甜,creamy,再融入少少蜜甜,餘韻帶有淡淡的薰衣草花香,驚喜!如果有支 Chablis 係到一定好夾,可惜當晚無帶。———响螺刺身 - 響螺: 時令貝類,清爽鮮美———生淹瀬尿蝦紫蘇gin酒,配绣球菌 - 中式生淹就食得多,用紫蘇Gin酒浸的都第一次。生淹完的瀬尿蝦帶有淡淡紫蘇香,一啜入口,鮮甜帶點酒香味,自動幫你做埋wine pairing的效果。———熟成秋刀刺身,壽司 (配櫻葉) - 熟成秋刀魚: 秋刀剛入季,刺身油香鮮甜,2件壽司分別加入櫻葉及其他配料,令魚的濃郁鮮味提升,餘韻仲帶有櫻花香。配返支生原酒Sake,微碳酸中和返少少魚油感,更能帶岀秋刀的濃鮮魚味! ———燒鰻魚肝,雞頸肉 - 兩款都係我必點嘅串燒,雞頸肉嫩而不膩,肉味濃香。用鰻魚汁燒的鰻魚肝,既有粉嫩的內臟口感,加上味道鮮甜回甘,配返適合濃厚魚味的Pouilly fuisse ,絕對係我最愛菜式之一。———红酒漬物,3款,紫洋蔥,白苦瓜,蕎頭 - 好食到想叫師傅整定一樽比我擺係屋企。酸甜清新帶點紅酒香,3種蔬菜漬完後質感層次,食左咁多濃味菜式後refresh你的味蕾,為主食做準備。———日本刺身级鮫魚拉麵 - 源師傅的拉麵岀名好食,唔駛多介紹。重點係個晚加埋罕有的厚身燒鮫魚,其濃厚鮫魚油香,細密嫩滑的魚肉,燒到香脆的魚皮,好食程度爆曬燈。可惜得一件,唔夠喉!———最後有件千層蛋糕,飲埋啲酒,朋友們風花雪月,開心滿足的一晚。人頭唔駛1k(唔計酒),係香港地無乜地方搵到。不過每一次去食都要當最後一次去品嘗,因為下次再去就會開新的盲盒,未必食得返同樣的菜式。對本地日式omakase 有偏愛的朋友絕對要去試吓。…Read More
