  今日要寫嘅哩間餐廳,佢地都唔係做生意嘅~!點解我咁講呢?因為今時今日嘅香港無幾多間會咁不計成本、花時間、花手工去做食物、又好味、三個人先三百蚊左右。佢地用嘅食材係不單只新鮮咁簡單,而且仲好講究,甚至令我覺得挑剔~!《燒南非鮑魚》燒得剛剛好,外面唔會乾,肉爽有汁,但我感覺蒜蓉有一點濃味影響左品嘗,佢地每日都會去街市買當日最揀手海鮮~!《泰式扇貝》香茅、辣椒、蒜蓉等料頭促成左泰國風味,而且哩啲扇貝仔又鮮甜又唔韌,好食《清酒煮日本沙白》哩個煮法有啲「油鹽水浸大花甲」嘅影子,非常喜歡哩個味道,因為本人都好鍾意煮哩個餸~!《鎮店鹽燒多寶魚》店裏面有個牌寫住每日有咩魚,本來想食馬𩵼,但係多寶魚比較多魚皮,燒出來脆咯咯,正《香燒鮮農場頂鴿》好野!首先佢堅係「乳鴿」,唔係搵啲「老鴿」嚟扮「乳鴿」。正如菜名,佢地有專人喺中山鴿場揀鴿,所以用料講究、挑剔~!左1《厚燒牛舌心》牛,咁大條脷,佢淨係用個心,如果食開牛舌嘅人就知道,牛舌最外面喺比較「鞋」、肉質鬆散,牛舌心則比較爽、滑、牛味濃郁~!左2《香燒西班牙黑豚六花腩》口感柔潤、豬皮脆口中《首創鮮雞皮手打蝦膠卷》每隻新鮮雞有一對雞腿,而佢地只用雞腿皮,先去油再包裹手打蝦膠,燒至外脆內爽,真係好鐘意燒雞皮右《自家浸製花醉香燒雞翼》六年陳嘅花雕酒-香醇,而廚師用嚟腌製雞翼,可能你會問:「嘥唔嘥啲呀?」我話比你聽如果煮得唔好食嘅話就嘥。陳年花雕香味深入到雞骨,但又唔會奪走本身雞翼嘅油香《法式先蟹肉虎蝦烤多士》新鮮虎蝦爽口再配合外脆內軟嘅法式多士,加上秘製醬汁,食落唔會覺得膩《秘製烤焗牛骨髓配法包》榮登今日最邪惡之選嘅菜式,佢真係唔係流嘅!哩道菜嘅醬汁係用雞肝調配而成,而牛骨髓經過燒烤之後,釋放出骨髓中嘅精華油,同食鵝肝要用麵包吸埋剩低嘅油一樣,而配合埋雞肝醬互補不足,可以話係有過之而無不及~!《嗜清酒人士》最後,哩間桻之燒仲有好多清酒,仲有好多喺日本無出口嘅限量靚酒~!*提提你,識酒之人去到想知道有咩正野,記得睇牆壁上嘅清酒招紙,或者直接請教老闆,因為佢對清酒嘅熱愛已經令佢變成精~!…Read More

做野經過銅記,突然有個姐姐塞左張野過嚟,我都反應唔嚟!跟住佢話:「食壽司ga!」丫!又好!夜晚七點鐘到,唔算多人!好快坐低,睇下有咩食先!見到太刀同花鮫都好想試下,但對秋刀情有獨鍾,就叫秋刀兩食(+$20可刺身加壽司)第一食嚟到之後,我覺得我嘅選擇係無錯嘅!刺身選用秋刀嘅魚腩部分,看上有光澤、脂肪比例剛好,入口鮮甜、肉質鮮嫩、幼細,好味!第二食係壽司今次選用秋刀魚較近後嘅部分,肉質比較有彈性、爽口,跟壽司飯送入口中混和後,青蔥伴隨著甘甜味成為餘韻!當我享受緊嘅時候,有位侍應過嚟問我,要唔要+$10將魚頭同魚骨脆炸?我心諗又好,咁就變成三食!講真下次我都唔會慳果$10,因為真係炸得好乾身好好食,仲已經有調味!($10多一道菜,又好味又環保~^_^)近來真係深受居酒屋文化熏陶,去親食日本野都要叫返幾串雞皮乜乜乜~!哩道嘅串燒雞皮,酥脆、煙韌嘅比例係3:1,酥脆佔比較多~!仲有佢嘅兄弟-雞皮花竹蝦~!花竹蝦被雞皮包住,既可以令蝦肉保持水分、鮮嫩,又可以吸收雞油嘅香味,咬落仲外脆內軟,好味!但可惜,螢壽司現在仲未有令酒牌,所以未能盡興,希望下次再嚟嘅時候可以飲個痛快!而天婦羅同軟殼蟹嘅炸漿比較硬,芝麻雞翼肉汁已經被炸乾,三文魚飯團調味不足,可以話接近冇咸、甜味,有好大嘅空間可以進步!…Read More

日本菜,喺好多人心目中已經加左唔少分數,但係大部份嘅菜式都比較傳統而我要介紹嘅哩一間日本居酒屋,佢所做嘅菜式Fusion得嚟又保留左傳統嘅味道位於尖沙咀漆咸道南嘅YAYAKIYA,從門口睇落,真係唔覺得係日本菜、居酒居成36、7度熱到呢!即刻叫返杯Frozen Kirin (冰沙麒麟啤)嚟消下暑先最中壽司-雲丹佢外層嘅威化嘅味道好似醬油燒米果,中間有壽司飯、海膽及蟹子,新派得嚟又好有傳統味道,口感豐富、有質感,好味博多明太子涼拌烏冬嘩!哩個涼拌烏冬真夏天必點菜式「鐵膽」,明太子有少少辣味,加上紫菜及新鮮嘅紫蘇葉幫助提鮮,令平凡嘅烏冬變得更有活力,而佢嘅份量亦唔可以睇少串燒嚟到居酒屋點可以唔點串燒佐酒,牛舌、鹿兒島(A4)和牛、燒雞皮、雞翼(波尾雞)、雞腎(波尾雞)、煙肉蘆筍卷通通都點,我覺得哩到嘅食物質素都好高、夠新鮮,而且環境好舒服,以工業風打造本店格調令外想同大家分享一個食雞翼嘅方法先將雞翼去骨再一啖放入口波尾雞嘅味道真係好好味~!…Read More
