近年聖誕月都會計劃一次澳門遊,除了清年假外,更是圖個自在的美食假期臨行之際,發現僅開業數天的PANPAN,主打鹹甜酥點,二話不說就將其列入行程了並非以經典作招徠,出品大多融入變奏細節,各有特色,思考良久才揀好心水店內設數個座位連茶几,正好可以即場享用美味,兼透過半開放式廚房一睹製作過程(唯當日適逢Media Event又未封場,窄小店面要容納不少澳門Blogger及街客,場面一度混亂)未能盡試薑汁豆花可頌、粟米方可頌及馬斯卡芝麻醬可頌等特別款式,是次只精挑三款有如日式飯糰的明太子可頌 Mentaiko Wasabi Croissant MOP25造型趣緻外層偏硬脆,但內裏油潤不乾,明太子餡鹹香有致,伴上一片紫菜及脆米,再添層次急不及待打開甜品胃,只為一嘗開心果朱古力包 Pistachio Pain Suisse MOP45密裹香脆纖條,所謂的「包」不是麵包,而是灌入開心果醬的酥皮餡批邊沾開心果碎添香,一咬即嘗到濃郁開心果醬及微苦朱古力酥皮的雙重香味,甜度亦適中最後是貨真價實的焦糖流心芝士撻 Caramel Cheese Tart MOP28單看大小已覺抵玩,雖沒有想像中的灼烤脆面,但澎湃流心效果教人滿意頂層抹上焦糖,一絲苦味讓甜意不致膩;而芝士餡奶感十足,忌麻芝士香氣亦甚明顯撻皮看來有點燶,不過勝在酥脆而不過硬,滿載濕潤流心餡也未被浸軟,表現不俗話說友人試了幾口就忍不住去點了外賣,回港後續下場,可想而之這次嘗鮮無伏!…Read More

彈丸之地不乏珍饈佳餚,由酒店食府的精緻華美到街坊小店的簡樸親民,各適其適在超長覓食清單中選定收藏已久的倫記軟滑腸粉,趁著偕友同行,可以多試幾款了腸粉固然為店家王牌;除此之外,由粥粉麵到小食,乃至糖水,在此均有供應本想點份三色腸,一次過嘗到多重層次,可惜經已售罄;幸好餐牌上道道吸引,不缺選擇即場手製的布拉腸粉一如店名,相當嫩滑又帶點煙韌嚼感,卷裹後不會鬆散蔥花雞蛋腸 MOP33並非坊間作夾心或拌炒煮法,倒以蛋皮裹著腸粉,營造出雙重嚼感至於蟹子鮮蝦腸 MOP45也沒有諸多花巧,蝦肉略彈,並有蟹子添脆,用料份量還好話說餐牌上見桂花蜜龜苓膏腸粉,看相片似芝麻卷,好奇但未敢嘗試,當甜點可能都正路?唯一讓人卻步的是餐廳環境,若然對空間及衛生較講究,或者外賣會比堂食為佳…Read More

百聞不如一見,終於得嘗來自日本北海道十勝的過江龍Tokachi Milky繼上年年尾落戶中環,現在更進駐K11 Musea;既然就近,不如來份晚餐前的小茶點!一睹店家現場烤灼焦糖脆面,焦糖生乳酪 Melty Cheese $52金黃帶焦,惹人垂涎芝士慕絲細緻軟滑,芝潤十足,有著如其名般「Melty」的質感,不似外表那樣硬實下層薄墊軟綿蛋糕及微鹹餅底,多添層次,並傳來焦香,吃起來也不怎覺膩了聽聞是每日限量的招牌之一,但夏日炎炎,比起奶感重的芝士蛋糕,還是雪糕和泡芙更受歡迎加上件頭頗細,雖其香味濃郁討喜,但值得與否就視乎個人看法了唔執輸,打算點件泡芙分享,可惜同場食客大力推薦的開心果口味經已售罄唯有臨時轉駄,選擇直覺似是清新派的抹茶泡芙 Matcha Puff $36灑上抹茶粉的泡芙皮香脆鬆化,儘管灌滿甘甜奶滑的抹茶吉士,也不至過份濕軟,恰如其分正如今期的開心果泡芙,店家不時推出限定款式,如早前的荔枝玫瑰,有緣或可一試呢…Read More

讀書時有天地堂,旅行時有天地Schedule,想不到行程看似緊湊,還是空出了兩三小時間場期間,憶起在覓食清單上長期待完成的一項——無二湯包小籠包當然是店家的拿手好戲,年前再因其用料十足的蟹黃撈麵跑出可惜晚上早有安排,須顧及胃納,還是只點輕盈些少的小籠包過過口癮算了話雖如此,看著五款各有特色的小籠包,我們還是忍不了手點了其二標榜即叫即蒸,其實不至久等,聊著聊著就見蟹黃小籠湯包 MOP58熱氣騰騰地上桌薄皮煙韌不糊,湯汁不少且略帶黃油,滲香而不腥,肉餡不感肥膩,調味帶甜但恰到好處至於海苔鮮肉小籠湯包 MOP40都不遑多讓,本以為會明顯地給比下去,但憑紫菜香挽回地理位置不是平日常去的遊客區,若然有緣再會,會想試試撈麵和其他口味的小籠包呢!…Read More

難得假日蒲頭,即使是去慣去熟的地區,我們亦做足功課才出發覓食開業不久的Halff便是其一目標,專賣貝果;起行前,在網上可搜尋到的資料還不多到場見人頭湧湧就有點卻步(其實大概十人已覺滿場了),但想著既來之,還是照樣排隊入店即見各式口味的貝果牆,可配凍櫃內芒果百香果、開心果及莓果等多款忌廉芝士醬要不是未用午膳,想來份豐盛些少的鹹食三文治,或許就會在眾多選擇中昏頭轉向了話說店面頗為狹窄,想慢慢挑選口味似乎不太容易,如果可在社交平台等先看餐單更方便點餐後店員會加熱預先包裹好的貝果三文治,據聞揀抹醬貝果則會即場製作迫不及待一嘗坊間罕見的韓式醬烤豬肉貝果 Roasted Pork Belly Ssamjang Bagel $65以韓式菜包肉常伴的쌈장(超級市場綠色膠盒那種)拌入忌廉芝士抹醬,鹹辣之餘添上芝潤烤豬腩肉肥瘦得宜,且夾有清甜大蔥;雖然偏重口味,但是不至於太膩滯至於芝麻貝果香口又煙韌,不會過於乾硬,亦未受夾餡與厚塗抹醬影響,甚是討喜友人相中的是珍寶烤菇卡邦尼貝果 Portobello Mushroom Carbonara Bagel $55並非宣傳照上的抹綠貝果,而是南瓜籽貝果,似乎是隨機供應或會每日轉換?厚肉大啡菇依然腍爽多汁,然而正因著其水分充盈,令包身亦浸得濕爛,影響質感配搭卡邦尼忌廉芝士醬及洋蔥,相對地不算驚艷,加上未盡加熱,只及室溫,有點可惜了尚有韓式部隊鍋及雞肉凱撒沙律等三文治可選,但若有機會再訪,會較想試試其抹醬貝果呢…Read More

晨早起床即趕往文記咖啡,見滿座本想打退堂鼓,幸好隔離舖位尚有雙人位正如我們熟悉的茶記,常餐碟頭飯不在話下,可是既然遠道一遊,嘗盡名物才不枉此行澳門的地道美食豬扒包在此進化成花生豬扒菠蘿包 MOP30,更可謂每桌必點豬扒醃得入味,肉腍不膻不老韌,而菠蘿包脆皮達標,包身亦不會太乾涸唯薄塗花生醬過於輕淡,以及側切後上薄下厚,導致味道只集中上層,吃著有感不平衡乾炒通粉也是此店必試菜式,明明餐牌上有正路的叉燒、煙肉和煙鴨胸炒通粉我們卻選擇了聽起來讓人不禁質疑,但又好奇的鮮茄雞蛋炒通粉 MOP42精簡後感,就是均勻上色不失彈牙的炒通粉,覆上略似勾芡的蕃茄炒蛋,暫未理解過人之處最後,還有奶感偏重的樽仔奶茶 MOP24,甜又未至膩,中規中矩飲飽食足,離座才見門外已大排長龍,不過店家出餐算快,相信不用等候太久吧?…Read More

上回澳門Cafe遊後,總感覺意猶未盡;適逢上半年未能抽身出遠門,不如就過大海逛逛雖未有周詳行程,但也專誠搜尋了藏身於手肘里的逸日 iat iat由手工雪糕、甜點,到咖哩飯及全日早餐,鹹甜餐點一應俱全,固然也不乏咖啡調飲咖啡店以木系裝潢配搭懷舊紙皮石地板,連同開放式廚房,倍添舒適居家感不設訂座,到場又無人龍,還以為來客不多,誰知原來大家早就留名等電話,暫不在場而已  悶熱無風的盛夏午後,一路上走得汗流浹背,入座後第一時間想解解渴為免十飲再飲咖啡因Overdose,還是轉投糖漬檸檬薑汁氣泡 MOP45的懷抱糖漬檸檬果酸依然充足,入口清爽開胃,甜度不高,唯薑味較預期輕淡除此之外,餐牌上的青森蘋果咖啡、宇治抹茶湯力、紅甜椒海鹽可可也甚具特色 然後事不宜遲,一嘗店家推出不久的人氣新品——特濃抹茶凍派配檸檬奶酪雪葩 MOP65抹茶凍派就如重量級的生朱古力,苦甘味濃郁不澀,質感稠厚細滑,略帶奶潤黏感儘管加入了白朱古力及雞蛋低溫烘烤而成,但不至於甜膩難當而自家製檸檬奶酪雪葩則意外地實身,好在果味酸甜突出,伴杏仁脆酥更減膩獨食無憂,與友分享更是輕鬆清碟;若非已用正餐又要留肚,或會乘勝追擊再試其他甜點呢…Read More

在近年流心芝士批撻花樣百出,成行成市之際,Céleste Artisan倒要回顧經典店家主打手工雪糕,以荔枝玫瑰雪葩、里斯本櫻桃酒雪糕等特色口味令人眼前一亮上年趁夏日將傳統美食葡撻及其拿手好戲融為一體,推出每日限量50個的法式冰火葡撻自此漸漸為人知曉,可謂嶄露頭角;店面細小,而且當日客似雲來,幸好及早搵到靚位法式冰火葡撻 Crème Brûlée Portuguese Icecream Tart MOP46的「法」從何來?即場灼燒的金黃焦糖脆面,配搭香味自然又不重冰感的手工雲尼拿雪糕作撻餡而撻皮比平常的葡撻硬脆,更加乾爽又不滲油,即使雪糕到半融程度都不至於浸濕外皮與法式焦糖燉蛋有幾分相似,也頗甜,不過質感更富層次,稍減膩意;但看價位還是想斟酌下年末之行,依然帶點寒意,縱想一試其他手工雪糕都覺得力有不逮剛好瞄到風靡哈利波特世界的魔法奶油啤酒 Butter Beer MOP48,坊間算少見焦糖忌廉梳打奶潤甜香又不失清爽,老實說,比起脆撻更叫我們滿足呢………Read More

漫遊湖畔至夜幕低垂,才為了流心蝸牛牛角包悠悠地踱步到Le Pic比起咖啡廳格局,感覺更是一家溫馨的法式小餐館;由鹹到甜,選擇琳瑯滿目一直只聚焦甜品,事前沒有研究店家的鹹食出品,驟看餐牌,似乎款款都對胃口趕在Last Order前入座,雖有近半小時點餐,但從中揀出心頭好實非易事就連飲品都花款多多,包括菠蘿青桔乾薑梳打、白桃烏龍燕麥奶茶等多款特飲我選的蝶豆花生椰拿鐵 Butterfly Pea Thick Coconut Caffe Latte MOP46捎來一抹淡藍看著很治癒,可是整天都大吃大喝,偏奶潤的生椰拿鐵喝起來的確有點負擔而友人的玫瑰荔枝冷萃茉莉 Rose Lychee Cold Brew Jasmine Tea MOP44就清爽得多那就由具代表性的蕎麥煎餅開始,只需三揀一,大大降低了難度當中的煙三文魚蕎麥煎餅 Smoked Salmon Galette de Sarrasin MOP98較合我們心意邊角薄脆重麥香,略為煙韌的餅皮伴上鹹香煙三文魚,再有康堤芝士加成然而味道稍為鹹重了點,幸得蘆筍添份清甜作平衡,蘸上蛋汁,為餅皮添點潤感更易入口至於勃根第式燉牛肉配珍珠米 Beef Bourguignon MOP118肉量滿滿幾足料趁熱享用燉牛肉,算是腍綿且並不多肥脂,加上帶酸醬汁去膩,飯底有咬口,整體恰到好處兩款主食都附送沙律菜可以開開胃,可惜胃納太有限,餐牌上的油封鴨腿、牛臉頰也無緣了壓軸少不了名物開心果蝸牛牛角包 Pistachio Escargot Croissant MOP56以開心果醬及果仁碎點題,圓滾滾的蝸牛牛角包實物和想像中相若牛角包脆身乾爽不油膩,唯外圈偏硬,灌滿濃郁開心果醬毫無花假,味道份外突出由於醬餡頗為稠厚,加上略甜,所以如有打算享用主菜及小食等,還是分享比獨食為佳話說荔枝紅茶、咖啡及芝麻口味也很吸引,不過本為開心果一款而來,就不作他選了…Read More

與友久別重逢,想當然要隆重其事食好啲,相約於遐邇聞名的六福菜館也不為過位處西貢,佔盡地利,精選每日捕獲的海鮮入饌,更連續十多年穩居米芝蓮一星門面沒有華麗裝潢,但若稱之為低調,以米記貼紙及獎項作裝飾,倒在無聲地彰顯實力  似乎款款合味道,集數道特色出品的二人套餐 $1488至夠簡單直接開場即被實而不華的西貢地道魚湯虜獲歡心,不起眼的家常湯品,卻是滿載鮮味啖啖濃香潤口,毫不腥膩,又帶蕃茄酸意,開胃暖胃,喝罷教人意猶未盡 其後插播友人力讚的椒鹽焗鮑魚,如掌心般大件頭,時價單點,叫價約百二三鮮鮑魚略顯金黃,只輕蘸粉漿炸起,表層酥脆纖細,沒有滿口炸皮油淋淋的問題聚手而厚肉彈牙,咀嚼間滲出淡淡鮮甜,不會盡是椒鹽的鹹濃,恰到好處  回到套餐,豉椒炒蟶子皇如約而至,蟶子肉鮮甜爽彈,不見破綻趁熱食無疑最冶味,醬汁不會太杰身,配上彩椒洋蔥更香口,此時太想有碗白飯相伴天婦羅桶蠔生菜包亦是矚目之選,肥美蠔肉表層略酥,以爽脆生菜包裹即可中和炸物油感 直到主食依然不會濫竽充數,上湯焗開邊西澳龍蝦伊麵藉經典風味帶來口腹滿足龍蝦肉絲柳分明偏爽,本味出眾,且甜美中帶微鹹,橙油加成更留香上湯汁濃,入口卻溫和,拌伊麵夠味,不搶主角鋒芒,配上腍麵底亦無糊感 後有加點的椒鹽奇趣豆腐 $60,平時多為一口骰子,在此則是件件飽滿金條炸至表顯薄脆沒泛油,不會一夾脫皮或斷裂,內裏仍嫩滑得很毫不華貴,以表現取勝,調味得宜,即使放在豐盛海鮮後現身都沒失分我們並未放棄是日甜點,椰青大菜糕來得正好,清爽微甜,飽餐一頓後也能輕鬆駕馭…Read More

白日 Alba - 實在回味抹茶卷蛋

(比預期中拖得久的後感,一間在網上無意搜尋到的瑰寶,當然也要感謝友人訂座)假日時間消逝如流水,輾轉之下如期到達車水馬龍的板樟堂,沿斜巷上行,越走人煙越稀直至踏進白日 Alba,幾乎座無虛席卻得一室靜謐,頓時撫平因趕行程而生的急躁餐點選擇多樣,即使早有打算都不禁猶豫,幸好所揀的均是Nice Pick,可說出不枉此行一句滿載櫻花蝦的和洋魚蝦卡邦尼烏冬 Carbonara Udon in Japanese Style MOP88香氣四溢烏冬扁幼又不失嚼勁,雖滑溜但算易掛汁;再輕輕戳破溫泉蛋,拌入蛋汁賦其潤感以煎得脆口的白飯魚乾圍邊,加上帶點芝味的醬汁,襯托出海味獨特鹹香比平常的Carbonara更為輕盈少膩,更附送涼拌菠菜,很是討喜,唯獨要謹記趁熱享用而友人點的蝦濃湯豚肉烏冬 Pork Udon in Creamy Shrimp Broth MOP88也毫不遜色湯底確實稠厚,冶味更飄香,烏冬則偏軟身,不過對我而言還是太重口味了邊食邊配搭清爽醒胃的海鹽柚子喫茶梳打 Yuzu Sea Salt Ice-cream Soda MOP58果酸及鹹味都恰到好處,舀上一球也屬清新派的綠茶雪糕,組合不怪異,但更想吃雪葩呢重點來了!相較於口味多變的招牌梳乎厘班戟,更期待清水卷 Matcha Roll Cake MOP45店家沒有著墨太多,可謂憑實力屢獲好評;果然,紥實足料的抹茶凍卷蛋讓我們讚不絕口一片抹綠帶來微苦而不至澀的陣陣茶香,抹茶忌廉質感滑順,重奶潤感又不會油滋滋嵌有彈牙抹茶凍,在厚層忌廉環繞下顯得味清;軟綿但略乾身的蛋糕層倒起了中和作用蓋上抹茶粉點綴,實物目測都有三厘米厚度,又食主菜又食甜點的話,適合兩份分!此後,還有賣相精緻的烤香蕉季節百匯 Roasted Banana Parfait MOP62焦脆糖面的烤香蕉這回不落俗套,改伴花香雪糕及荔枝紅茶凍,以其芬芳清香消除膩感不至驚艷,但心思搭救;有機會希望嘗嘗店家主打的咖啡啫喱及班戟,想必表現也不俗…Read More

再次踏足南區,不僅為初訪新商場,更要順勢偕友一試Chef’s Cuts平日晚上,行經略冷清的商場走廊,甫進餐廳意外發現客流不算少,氣氛漸顯熱鬧不似創始店般兼營食材零售,黃竹坑分店專注餐飲,地方夠闊落,自然而然成為聚餐熱點看到門外熟成櫃,更是期待接下來的扒房美味,亦叫做在近月稍為忙碌後補償自己  開場即點Rosé Sangria $75,用Rosé作基底,加入桃味力嬌加雪碧,果真清爽輕盈另有經典的紅白酒底Sangria及各款含酒無酒調飲,綜觀而言,似乎還是面前這杯較驅暑氣  由油脂豐腴的烤牛骨髓 Roasted Bone and Marrow $188打頭陣,可置於脆多士上享用烤牛骨髓鋪上紅酒燴牛肋以酸甜解膩,及後有牛肝菌綴上幽香,讓層次更顯豐富綿腍牛肋肉輕滲肉味,唯切成碎粒後存在感偏低,幾乎被滿滿的焦糖洋蔥蓋過鋒芒,有點可惜其後卻畫風突變,南美式酸辣醃海鮮 Chef’s Cuts Ceviche $158藉酸辣刺激將悶熱一掃而空八爪魚彈牙不韌,帶子肉嫩味甜,海蝦肉偏紥實,而清甜帶焦的烤粟米也略有為菜式加分醬汁不稠仍夠味,以秘魯黃辣椒醬、芒果、檸檬汁及薑蒜調製,伴大量椒粒及洋蔥更見清新 新張月限定的牛脂熟成黑安格斯肉眼扒 House Fat-aged Black Angus Ribeye $628(600克)標榜經過「牛脂熟成」,即繼十二日乾式熟成後,再以牛脂浸泡並風乾十二日以增添風味精選美國黑毛安格斯牛肉眼扒,肉味濃郁,油花均勻,脂肪馥厚甘香,不帶膻膩帶焦邊位尤其香口,唯中心帶筋微韌,但抹有香草牛油等調料,冶味得很,讓人暫忘不足重頭戲當然有配角輔助,原個烤蒜、脆薯條及菇菌表現恰如其分,令餐盤更多彩而除牛羊外,餐牌上不乏海鮮菜式,並有黑豚斧頭扒,甚至西班牙烤乳豬等以供選擇 選用四重芝士入饌的焗龍蝦芝士通心粉 Lobster Mac and Cheese $198果然香氣四溢巴馬臣、車打、忌廉芝士及布利芝士四合一,鹹香又富圓潤奶感,醬裹粒粒帶咬口的通心粉波士頓龍蝦肉烤焗後不至乾韌,仍然彈牙保有本味,只是與芝味未及融合 滿足重口味,選以熱呼呼的拖肥布甸 Sticky Toffee Pudding $85為晚餐作結蛋糕布甸本已相當甜香濕綿,澆上稠身拖肥醬後更甚,所幸未算太黏牙漿口加上有雲呢拿雪糕及蜂巢薄脆營造溫度與質感對比,取點平衡,但還是分享比獨食為佳…Read More
