想試Doraya其實都有一段時間,終於有機會。平時在出面已經有好多機會食赤身同拖羅,所以今次點了一個中價位有特色的漁師風吞拿魚飯定食,連先付,漬物,味噌湯,蒸蛋與水果(西瓜)。甚麼叫漁師風? 即係漁民的食法,唔會係矜貴的部份但最有風味。在吞拿魚上鋪上切碎的鰹節,加上蔥花與芝麻,配上味道濃厚的醬油漬吞拿魚,超正,留下深刻印象。現今的本鮪賣到咁貴,多數捉上船就放血急凍,都唔知有幾多漁師真係會整醬油漬了。其實有時食鮪魚唔係一定要下下拖羅先好食,前人的料理方法反而帶出另一種獨特風味。…Read More

銅鑼灣聚集左大量中/高級日本料理店同鮨屋,天膳走中價路線,點了一個自選十件壽司午餐,都係一百五十蚊(未計加一),比起同大廈的湖舟同千里之月平一截。剔好紙仔,先食前菜,無咩特別,蒸蛋唔會太老唔錯,味噌湯的味道好清新。是日的人客比較多,師傅面前有一堆自選壽司的order紙,三位師傅大的兩位握壽司,細的一位做小卷軍艦玉子等壽司。見佢地望住d order紙一次過握晒咁多張order再執就有d心知不妙,也是客人多之禍,其實我唔介意慢慢等佢握的。壽司上台,先講賣相,是差的,壽司的賣相不吸引,沒有色澤,軍艦的紫菜潮掉了,成不了形。個人認為盛壽司的器皿的款色亦非常重要,因為一隻靚的碟可以增加整盆壽司的美感與食慾。壽司本身沒有熟食的香味,因此應以精緻的賣相,加上魚材豐富的鮮味與醋飯的滋味為味蕾帶來衝擊。天膳壽司的味道又如何?由較好的壽司講起。三文魚籽的貨色不錯,飽滿,但紫菜是一個敗筆。剝皮魚鮮甜有咬口,加上魚肝會更好。鐵火卷鮮味十足,大拖羅魚油極豐富。玉子同池魚非常普通。中拖羅與海鰻唔新鮮,小肌的味道錯晒,再來海膽,係全餐敗筆,這平價的加拿大海膽真係好臭好唔掂,:(唔明師傅點解可以準許這樣的海膽上台...個人認真如果壽司店來不到好品質的海膽貨時倒不如不要賣了,唔係真係只會自拆招牌。再者,天膳的壽司飯根本上沒有醋味,米粒有少少黏,壽司食落口沒有令人"愉快"的感覺。最後可以揀雪糕或者咖啡。好明白鮨店午市會將貨就價,但如果做得唔好食,我寧願你加價。其實店方的師傅與員工都很友善,服務都好,氣氛平和,沒有太大壓迫感。唯那海膽的陰霾在我腦海實在揮之不去,所以不得不給一個喊面,希望日後加以改善,並多留意一些細節,如改用些更高品質的筷子。…Read More

朋友成日向我大力推薦大喜屋,終於有機會試一試,Friday Night加上時近中秋(無錯篇食評遲左2個多月先打),中環一帶非常熱鬧,部電梯爆到等左幾輪先上到去。以木為主的裝潢討好,不過環境太窄,一行八人坐係度郁都郁唔到。由朋友發板落order,樣樣都叫黎試下。刺身真係唔錯,落幾多比幾多,而且非常厚切,絕不馬虎。特別係甜蝦,鱆紅魚與喜靈魚非常鮮味,吞拿魚就比較差,因為係黃鰭吞拿魚,實為先天不足。之後黎既都係香口野/濃味野,岩晒小朋友,後生一輩。串燒與炸物不錯,芝士年糕,炸蠔都好好味。天婦羅就一般,沒有放相的煮物,如炒雜菜,牛肉火鍋則不叫也罷。本人好鍾意的焗蠔就做得一般,蠔肉勁細隻,味道又唔特出。最後食飽叫左D西瓜,清清甜甜解下濟。其實整體食物質素都唔錯,要求精緻就免了。食物唔會留單,上菜味道亦可以。服務也合格,所以喜愛食放題的朋友不失為一個好選擇。…Read More

究竟在香港食平價的壽司,會唔會食到好野?係尖沙咀新食廈H8新開的德美壽司,午市最貴的壽司定食都係$98,仲要唔收加一,8件壽司,2件卷物,玉子,連漬物,沙律,蒸蛋,味噌湯,甜品。咁既價錢,係香港仲有邊度搵到?坐的是壽司吧,冷凍櫃就在咫尺之間,與師傅的距離亦非常近。一開始師傅用毛巾抹一抹壽司下駄(放壽司的木板),放上薑,山葵與漬物。山葵唔係牙膏貨而係真真正正的山葵,而三件漬物亦是不錯的漬蘿蔔,細細件,非常開胃。同時間侍應遞上蒸蛋,沙律與味噌湯,蒸蛋非常熱,味道可以,沙律新鮮配酸醋汁開胃,而味噌湯係赤だし,真係好有驚喜。侍應有點生手同緊張,進餐其間其他台有出錯食品的情況,但普遍禮貌同態度都唔錯,而且非常主動加茶。無耐師傅開始逐件遞上壽司,睇過之前的食評應該師傳每次選的魚材都會不同,總之就是8+2。先講最上一排的壽司,有赤身,三文魚,油甘魚,凡立貝。其實都係d大路的貨色,可以話無特別。但普遍新鮮度還可以,即握即上,而且細心留意,壽司都事先掃上醬油,做到呢個程度真係值得一讚。跟住4件壽司包括熟蝦,小肌,海膽與三文魚籽,仲有2件卷物(碎蔥拖羅放面,中間包蟹柳與青瓜)同2小件玉子燒。海膽與三文魚籽的水準很好,放得飽滿,而且鮮甜。即做即上唔洗講紫菜當然香脆。熟蝦爽甜,玉子印上logo,但質素一般,比較散同淋。卷物就很港式口味了。小肌是不得不讚的,因為好多時只有高級壽司店先會賣小肌。其實一件好小肌要落好多功夫,是經典的江戶前壽司魚材。呢件小肌賣相已經討好,口感柔軟,酸酸甜甜,正。:)其實食完一個壽司定食已經夠飽,但眼見面前的魚生櫃又想追加兩件壽司,就叫左一件左口魚與鯛魚。壽司在menu上是一客兩件的,不過一個人,又坐壽司吧,當然可以一件一件散叫啦。先來左口魚,魚肉清甜,但要咀嚼較耐先可以吞下。再來鯛魚,依家好多壽司店(特別係迴轉)都會用包裝的いずみ鯛做鯛魚壽司。其實いずみ鯛即係俗稱的非洲鯽(tilapia),同真鯛(マダイred sea bream)完全係2回事。呢件鯛魚壽司用的唔係包裝貨(因為是連魚皮的),沒有腥味,味道清甜有口感,與左口魚係2種感覺。最後上了自家製的甜品,是奶凍+芒果醬,好味,比起雪糕有誠意。其實以咁平的價錢,可以食到如此質素的壽司,已是無可挑釁,當然因為成本問題,看得出米用的貨比較普通。坐壽司吧最好之處是可以與師傅交流,看得出師傅是很有基本功與心機去做壽司的。…Read More

去松戶食完壽司隔左兩個多月,終於有心機打依篇食評。$190的自選13件壽司定食,連蒸蛋,味噌湯,水果,雪糕或茶咖啡。午市的水準一定唔及晚市,但價錢就非常大眾化(但壽司始終都係偏貴)。揀左: 中拖羅x2,赤身,平政,深海池魚,〆鯖魚,醬油漬,熟蝦,玉子,海鰻,三文魚籽,海膽,蟹膏。松戶的間格都幾大,但環境偏暗,椅桌有點殘舊。我坐的位置可以見到壽司吧,同埋都幾近廚房,所以會聽到很多雜音與有點廚房的氣味。壽司吧內沒有日藉的師傅,但也不是那些金髮青年。有日藉與本地的侍應,禮貌都很好但比較匆忙。壽司未上先來蒸蛋,沒有特別。壽司連埋湯,橙一齊上,連醬油都幫我落埋,沒有漬物,有點失望。先食兩件白身魚,壽司溫度適中,魚肉清甜。再來紅肉魚,可以睇到刀法同一般的壽司店不同,色澤還算可以,而且非常厚切,值得一讚。鮪魚向來係我最愛的魚材之一,不用多講,赤身魚味濃郁,不過我覺得壽司廣的比較滋味。中拖羅的水準很好,雖然比起在日本吃過的還差很遠,但以急凍再搭飛機黎香港的情況下,已經算係非常好吃,解凍做得唔錯,唔會入口即溶,反而慢慢咀嚼魚肉,香甜才會散發出來。醬油漬是熟成較耐的鮪魚,但無論賣相與味道同中拖羅都無咩分別。然後是〆鯖魚同熟蝦,依2件要先經"處理"的壽司我就有點失望了。事先聲明不是因為吃完鮪魚令味蕾減弱,但依2件壽司真係差,食材非常平庸,味道唔特出,只係普通迴轉店的水準。:(三件軍艦的水準不錯,紫菜香脆,而調味非常濃郁。松戶浸漬的三文魚籽屬偏甜的一派,真係好甜,岩唔岩口味就見人見智。海膽望落雖然有少少溶,但味道係意想不到的清甜,沒有明礬的苦味,比起數天前湖舟用的貨好多了。蟹膏亦是滋味之作,在此推薦。最後的海鰻與玉子,臨尾又叫我失望多一次了。海鰻一吃落口,錯晒,鰻汁是可以的,但…但…但實在太太太乾同硬了,好似食緊鰻魚乾咁。:(玉子亦做得不夠精緻,好多人認為玉子唔抵食,係Cheap野,那就錯了,一件有水準的玉子燒/玉子壽司是好考功夫的。但依一件玉子壽司實在太普通,而且煎得唔夠緊實,是失敗之作。:(:(最後雪糕與餐茶之間選了雪糕。雪糕非常有誠意,大大球,並混入有咬口的紅豆,超正。頭先批評過數件壽司做得不好,無錯,壽司的質素未算係頂級,而且普遍食唔出壽司入面加左山葵,還有很大進步的空間。但我認為一餐壽司的好壞不在於比較,人比人,比死人,其實壽司亦一樣,如果你將午市的質素同晚市或おまかせ(師傅發板)相比,又或者同日本的高級壽司店相比,你注定失望。諗下其實依個價錢定位,魚材選擇多,可以揀多達6件的鮪魚,海膽/三文魚籽質素又唔錯,已經是值回票價的一餐。:)…Read More

下午二點左右未食飯一個人黎到冷冷清清的赫德道,原本想食見城但又諗住同個荷包慳下,當去到Noren門口睇下個menu既時候,突然門口打開,一位日藉的大叔(相信係老細)用好親切的笑容同我打招呼,:)就係咁入左去食lunch。店內同店外一樣咁冷清,暗暗的小店,坐位都幾狹窄,而且冷氣不夠。點了一個大蔥豚肉丼定食,跟潰物,味噌湯,一款小食(揀左炸蠔)。可以免費跟汽水,但都是喜歡飲茶。說實話真係有少許失望。炸蠔是不錯的,夠juicy。潰物與味噌湯卻是非常行的行貨。:(豚肉丼也是非常普通,飯是珍珠米但唔夠飯香。兩位女服務生的態度都是愛理不理的,明明成間店得我一台客(及後又多左一台),但無幫我加過茶,同埋廚房師傅成日係廚房門的小窗望(莊)出來,係客人既角度其實咁樣好無禮貌。:(單一一次的出品唔可以否定一間店的全部,希望今次只係個別的不幸事件。…Read More

自從數年前在屯門元氣吃過令人搖晒頭既壽司之後,就好耐無幫襯喇。今次夜晚十點後係尖咀又想食幾件壽司,就比多次機會佢。一個人隨心所慾叫了幾款壽司,無耐就last order(10:45)了。好多人以為針魚既時令係春天,不過其實秋天,冬到春都係時令,按產地來源會有不同。不過依兩件所謂"時令"針魚完全食唔出有咩特別,一來無鮮味,二來同d薑蔥都唔夾,三來一夾魚與飯就分離了。:(長鰭吞拿魚唔錯,有魚味,厚切有口感。呢件牛肉壽司menu睇無咁長,出到黎大大片,而且味道唔錯,係驚喜之作。赤海蝦,其實即係甜蝦,雖然得一隻,但口感唔會太黏,味道清甜。不過又係一夾塊蝦好易跌落黎,證明師傅握壽司的功夫未到家(不過已經好過數年前係一夾舊飯散晒)。象拔蚌的味道濃烈,一定要加山葵,唔係人人岩食。玉子唔知係唔係包裝貨,有少少濕,調味比較甜,有極極極輕微酒香(味醂?)。:)軟殼蟹手卷混入左芝士蟹子,壽司吧師傅即卷即遞上所以紫菜夠脆,值得一讚。味噌湯質素非常一般,而且海藻比較碎散,勝在湯還夠熱。埋單連加一約$115,整體來說今餐的水準穩定。一個人食壽司始終唔係太抵。壽司款式都算多了,唯今次想吃的醬油漬賣晒,同埋握壽司的技巧還未達標。整間店的員工都算有禮,唔會有黑面或者態度差既人,不過可以更細心。企壽司吧整手卷同軍艦的師傅都很有禮貌是十分難得的。臨走時迴轉帶上的壽司還有很多,迴轉既意義本來就是快,同埋客人可以憑觀察選擇自己想吃既壽司,不過香港好多迴轉店都有一個共同的弊病,就是迴轉帶太長,壽司太多,而且放得太耐。好多時下午一次過預備所有壽司放落迴轉帶,一擺就會擺成幾個鐘,擺到關門。原因多數係因為怕晚市忙,怕壽司做唔切,而且客人鍾意帶上轉滿壽司。可惜咁樣一來令壽司好唔新鮮,二來會餘下很多浪費食材同食物。:(眼看當晚last order前約不夠5分鐘還放了一對外藉客人入來,只見佢地在迴轉帶上拿了很多壽司,吃者滋味,看者心痛!:(…Read More

朋友生日,夜晚黎左浪豪食西餐。頂層有好多西餐BAR,有食蠔既,有意菜又有西班牙菜,不過好多都係集團式餐廳。最後揀左呢間價錢中等既Mr. Steak Cafe。(其實呢間都係集團式)每人都Order左一份set dinner (Around $200),+$25可以有杯紅/白酒。野食未到先上餐包。普普通通無咩特別。前菜揀左意大利火腿芝士多士。D芝士係塊多士同火腿中間,火腿太薄幾乎食唔出味道,多士係脆既,加埋D芝士個味道好似果D脆脆芝士波咁.....沙律菜加黑醋汁幾醒胃,但完全無驚喜。主菜揀左煮藍貝配深魚魚柳(唔記得左係咩魚),份量唔多,不過魚柳同藍貝味道都唔錯,特別係藍貝煮得真係好滑同埋無腥味。最後上埋甜品同咖啡。呢個甜品算係唔錯,有3件cake,好濃郁朱古力味配咖啡真係一流。整體黎講環境食物同服務都唔錯,但以依個價錢其實有好多更好選擇。…Read More

朋友生日,再黎一次湖舟。事隔差唔多一個月,打開menu,居然加左價。日本食材真係愈黎愈貴,不過除左有壞消息都有好消息,就係有秋刀魚同コシナガマグロ(腰長吞拿魚)食。(應該上次壽司特上入面的拖羅已經係腰長)腰長吞拿魚真係好少見,而且好少人識食。近年食日本菜真係有感藍鰭吞拿魚會絕種的危機。雖然有好多料理選擇,最後都係叫左一份壽司定食($215)。壽司定食同壽司特上都有10件壽司同一條小卷(不能自選)。白身魚有5件之多,除左左下油甘之外其他都唔識分。另外仲有2件秋刀,一件手握一件棒壽司;一件三文魚;一件拖羅同一件海膽。其實我覺得今次白色魚的比例太多了,雖然每件的魚都唔同,但比起上次特上用的料真係差太遠,而且山葵好似有少少不對勁。:(海膽同拖羅用的料同上次都一樣,三文魚係厚切,算係唔錯。秋刀魚有2件,一件係醃過的,味道超濃郁;一件手握,可以食到秋刀本身的魚味,算係最大驚喜。其實今餐真係有少少失望,期望實在太高。可能上次的壽司特上實在太好,今次壽司定食真係比下去。前菜,漬物同味噌湯同上次一樣出色,服務真係值得一讚,因為每個侍者的態度都非常好同十分有禮貌。希望有機會可以再試下其他料理。…Read More

與友人相約,終於有機會一試湖舟。由於一早已經鎖定要食壽司,所以menu頭頁有好吸引的是日限定推介都拋諸腦後。Lunch 壽司Set有2種,壽司特上($275)同壽司定食(Around $200)。2個Set的壽司都無得自選,由師傅發板揀最時令最好食的!Order左特上之後,師傅就開始主理我的壽司Set。師傅握完所有壽司後,連前菜,漬物,茶碗蒸同味噌湯一齊由侍者上台。淨睇外觀已非常吸引,令人急不及待起筷。先吃漬物。天呀,依三件蘿蔔真係醃得非常非常好食,我相信只有食過的人先會明白,真係超好味。雜菜煮菇與茶碗蒸也美味,只是與漬物相比就失色了。到主角了,先吃白色魚,光物和軍艦。由右食起。分唔出佢地係咩魚,好失敗,但又不敢問師傅。素來都鍾意食白身魚,白裡透紅的魚肉很美麗,味道又夠清爽淡白。最有驚喜係左二的一件,魚同醋飯之間釀入一片紫蘇葉,令整件壽司美味程度大大提昇。最左的池魚都好正,好耐未食過咁好既池魚,唔腥有魚味加厚切有口感,正!到軍艦,三文魚子超大粒,鹹但不甜不腥,可以食到三文魚子的真味,食完三文魚子後食塊薑片真係超正。海膽水準只是一般。:( 雖然成個set我都好滿意,唯獨牡丹蝦同松葉蟹真係有點差。唔可以話唔新鮮因為都係急凍貨色,都係衰唔夠鮮甜味道唔夠特出。如果轉做煮的車海老或鰻魚或鯖魚小肌呢類要花功夫又好味的壽司會更好!2件拖羅壽司與拖羅小卷我都留在最後先吃,慢慢品嚐才不至浪費!整餐我最欣賞的是漬物與紫蘇白身魚壽司,令我印象深刻。師傅的心思令人讚嘆,不單壽司,連漬物與味噌湯也做得很好。服務也不錯,加茶殷勤有禮。眼看當日的客人不多,真的希望香港好的壽司/日本料理店可以多D人欣賞。湖舟,有機會一定再到訪。:)…Read More

壽司癮間唔中就會發作,對上一次食壽司已經係3月中,7點左右入座唔洗等位,不過裡面都坐到9成客。食壽司最鍾意坐bar台,可以睇住師傅整壽司,亦可以觀察到壽司店的質素。呢間和花亭有迴轉帶,但帶上壽司並唔吸引,而且好細件,壽司都係即叫即整好。劃紙仔落order,無耐d壽司幾乎同一時間一齊上晒台。晚市星期一至三的優惠壽司,有八件,$79。都幾抵食,有海膽,甜蝦,三文魚,劍魚,蟹腳,拖羅,赤身同帆立貝。不過抵食還抵食,睇賣相已對質素略知一二。因為同朋友share所以淨係試左甜蝦,劍魚,拖羅同赤身。甜蝦唔算太新鮮,劍魚同赤身味道唔夠特出。拖羅一向係本人最愛的魚材之一,呢件拖羅色澤鮮艷,油脂滿佈,進口貨已算新鮮,可惜實在切得太薄,拖羅鮮味有如蕓花一現,真是一分錢一分貨。三文魚子軍艦,索價$32,都算幾貴,不過質素真係唔錯,海苔香脆,魚子每粒都精瑩通透,調味適中。每次食壽司差唔多都會叫玉子壽司,厚厚的玉子燒又香又甜。三文魚石守湯,麵豉湯底,都唔錯。叫左一個熟食吉列蠔,最鍾意食蠔,炸得夠熱,正。埋單2人食左$280,都夠飽,始終覺得係香港食日本野真係比較貴。…Read More

好耐無打食評,都好耐無去Baby Blue。搬新鋪咁耐,第一次去試下個lunch set。位於美孚同荔枝角之間,其實地點唔係好就腳,但就好近曼克頓山的居民。先講環境,地方闊落開揚,近門口有sofa與bar座,入面亦有一字排開的二人台。裝修以木為基本,紅色的座椅,雪白的桌子與深藍的餐巾是非常好的顏色配搭。唯一美中不足的是大聲播放的電視令到感覺好似茶記。講返食物,lunch set有7款選擇,約$60 - $120,叫左最貴的藍貝,跟餐湯,餐包,餐飲同甜品,好抵。落完Order無耐就黎左麵包同湯,揀左周打蜆湯,湯夠熱夠香濃,蜆肉都夠多,合格。所有餐加$1可以去沙律吧拎一次沙律。咁抵當然要埋啦。選擇都幾豐富,而且新鮮。有菜,青瓜,薯仔沙律,紅豆,粟米,等等,加上千島醬好好味。無耐主菜藍貝都上埋,揀左白酒煮,配薯條。日本菜有道叫清酒煮蜆,而呢道白酒煮藍貝有異曲同工之妙。藍貝唔大隻,但勝在份量多,肉質嫩滑。白酒湯底酒味好少,煮出黎反而有種仿海水的味道。最後的餐飲與甜品非常一般,但以湯,沙律與主菜的質素,而服務與環境亦不錯,是值得再去的一間店。…Read More

美孚區內有很多茶餐廳,連鎖式快餐,近年也增加不少日本料理與壽司店,但質素非常參差。而好吃或比較有特色的西餐在美孚真是不多。Mia應該是美孚內唯一一間吃意大利菜的小店,全店得7張2人台,7點先開,唔訂位一定無位,1個鐘要交台。Set dinner有4款,$108 - $128,包餐湯或沙律,餐飲。先黎餐湯侍應介紹過,但唔記得左係咩湯,應該有南瓜,薑;好香濃Creamy,微辣暖胃。:)跟餐+$15的多士,熱辣辣脆卜卜。簡簡單單的一個沙律。檸檬新鮮厚肉,高水準。主菜到,本人非常愛吃risotto/日本珍珠米,貪佢煙韌有口感。飯入面混入左豆苗,芝士,配上個sauce有蕃茄同芝士味,超正。海鮮有2隻蝦,2隻青口,1塊白身魚柳同1件帶子,應全是急凍貨色,但都可以接受。意粉都ok,個sauce都唔錯,火腿唔會太鹹。+$20的甜品,唔錯,只是個人對芒果一般。埋單每人約$160,份量都算可以,食物水準中上,調味好,最重要是即制同夠熱。店員十分有禮,食完岩岩好一個鐘頭走人。…Read More

又到考試季節,希望各位考生能在考試發揮好表現。溫完書與朋友食晚飯,Order全由朋友發板,先黎2碟前菜,原來要收$10。第一碟黎的風沙雞,中規中距,雞的鮮味不夠。夜晚單叫一杯檸水要$13,但質素真係麻麻,檸檬不夠香甜,幸沒有苦味。沙拉骨調味還可以,但唔夠熱。:(蝦好細隻,肉質結實;米飯吸收左蝦香味,但偏鹹,建議不用加太多豉油。炸左的九肚魚外脆內滑非常好食非常一般,班球無骨,肉質幼滑,岩女仔吃;但其實班球魚味很弱,無個性,滿足不到我這類魚痴。讀城大的都應該有食過品香,所以應該很多人對品香都很熟悉。其實佢在晚市的出品已算不俗,口碑亦不錯,有電視睇,食物選擇亦算多。唯菜式細節做得不好,不夠誠意,亦沒有一杯好喝的茶(佢只提供茶餐廳式的茶)。可能我要求高,所以未值一個笑面。…Read More
