Very very disappointing

I saw this cafe for a while and wanted to try it for some time. Finally I had the chance and was delighted to see half the menu covered pasta dishes. My first disappointment came when I ordered a chicken spinach penne pasta dish. I placed my order but after a while the lady came back to tell me it was too early for pasta. It was past noon already at that time, in other words lunch time. I asked her what time pasta will be served and then she was stumbling. After a while she had to admit that they could not save pasta for the whole day without any reason. So then I checked the all day breakfast menu and wanted to order C. Classic omelette. As I do not eat pork I asked if they could put in spinach instead. And to make my omelette well done as I do not like watery eggs. This time a man came to take my order and said it was ok but had to check for the spinach swop. He returned to tell me the swop was ok but they had no mushroom as the fridge was broken ... Bad inventory management and back up plan. So I asked for dried tomatoes as replacement. He had to check again and returned to me to say it was not possible. Well, I just accepted this but stressed again I wanted the omelette to be well done inside. He confirmed me to say it was ok. The omelette came very fast but it was very yellow, no baking signs at all. When I checked the inside it was very watery. Clearly the egg has been only put into the pan for a little whole, just enough to make the outside ready to roll it over. The inside was still raw. It was for sure they did not took my request at heart. So I asked the waiter to bring it back to the kitchen and ask the cook to bake it again. He said ok. But after it was taken away from me I heard the sound of a microwave - that is the opening door and later the ready beep sound. Then my egg came back right after that untouched and still the same way it looked before when I asked to make it well done. The inside was less watery but still watery. I have tried two bites and it was tasteless. In the end I just ate the croissant and did not eat the omelette. With the breakfast coffee is included. But the waiter and waitress did not even come to ask me if I wanted coffee or tea. I had to ask for it. I left the cafe very disappointed and unsatisfied and hungry as it did not eat the omelette. The service was bad as it was very clear that the waiters and cook did not bother to take the request of the customer into consideration. Only the spinach swop was fulfilled. Also the food was bad too as it was tasteless and also the food did not consist of all the ingredients as stated on the menu. For the price I had to pay hk$ 67,00 in the area of To kwa wan you would at least expect a good service but noting was less true. I have never experienced such a bad service cafe as this one. Even if I go to peninsula or a normal local breakfast cafe they would try their best to take up on the customers' request. Maybe I had too high expectations or maybe my request is unreasonable - I only asked forawell done  omelette. Is that so difficult ? Just to keep the omelette longer in the pan and certainly not to heaten it up in a microwave!!! That is not cooking ...I will not try this cafe anymore as you will only get a first impression and they have ruined their chance. My parents had a restaurant for more than 20 years so I know what good service, good food and especially listening to and knowing your customers mean. The Bites. For the Omelette, as a re-cook to well-done, Microwave is our only choice since it's the only method to make the well-done from inside-out. If we use conventional Oven, the Omelette should be all burnt from outside instead.
