週末中午打算去銀座鮨久撐佐籐師傅場,上到去才發現他和吉野師傅兩個都已離開,十分可惜!只能轉去福助。位於澳門逸園中心的日本料理餐廳有10家之多,但真正是日本料理還是港式日本餐的有多少家?大家心中有數!福助沒有因為福島事件改變用其他國家的食材,依然堅持自己的風格造下去,十分有誠意,令人尊重!今天點了福助壽司10件套餐,$200十件壽司有鯛魚、自身、中卜口、葱かつお、芝麻マ夕口、帶子、甜蝦、明太子、海膽、穴子,全部沒有將貨就價,新鮮美味,温度處理尤其上盛,入口溶化,鮮甜味留在口腔久久不散,醋飯握得鬆緊也恰到好處,筷子夾起不散,入口即化開。師傅說米來自千葉,不夠新,不是晶瑩也不夠彈性,是唯一自己不喜歡的!太太點的刺身定食$230,已經有兩塊大卜口厚切,是絕佳的貨色,差不多已值回票價。每個套餐也包括薯仔沙拉、茶碗蒸蛋、蝦頭紅味噌汁和甜品,連沙拉的選材也一絲不苟,清新可口,茶碗蒸蛋加入冬菇、鷄肉、百合、白果和蟹肉,調味做得一流。甜點的什果啫厘也同樣十分有誠意,令人滿足!只要有堅持有信念,災難也打不倒福助!…Read More

[福島核洩漏令人對香港高級日本料理店失去了興趣和信心,當初更有報導說,香港將有40%日本餐廳會面臨結業,結果絕大部份的壽司店仍然是營業著,走進鮨辰問師傅食材來源,他們強調食材魚生仍然是從日本空運來,其實高級店很多魚類也取自北海道和日本海,遠離福島,暫時還是可以放心吃的。週日中午鮨辰的入座率達三分之二,証明港人既理性又善忘,來了一份chirashi套餐,各款魚生也有少份量,加上大大隻的竹節蝦,砌成一個顏色豐富的飯盒,令人食慾大振,醋飯和漬物做得不錯,魚生切得很薄,尾指一節大的瀨尿蝦特別鮮甜,$230不算便宜。另外,點了一客自選三色飯,有北海道海膽、三文魚子和葱蓉Toro,$200,由另一位年輕的香港師傅做,明顯水準較差,現在仍有人會說魚生只要食材好,師傅功力不重要。哈哈!那些人根本不懂吃壽司,回應也罷!套餐都配有味噌湯和茶碗蒸,整體不錯,只要最怕貨比貨!同區中的福助、Sushi廣和順壽司,不是同質素而比它實惠,就是同價錢而比它更好吃。日本壽司店的競爭巨大才是令部份餐廳結業的真正原因也說不定!…Read More

新葡京裝修俗不可耐,品味全面靠攏大陸二線暴發風格,偏偏酒店內的餐廳卻十分國際接軌!其中三樓Don Alfonso意大利餐廳就請來米芝蓮星级大厨坐鎮,裝璜是西西里式的華麗,每桌都有水晶吊燈,牆上掛有大型油畫,看似風景畫牆紙的原來都是油畫來的。中午2 courses套餐可從頭盤、湯和意大利粉三項中選擇一道,加上主菜,甜品及咖啡是附送的,才280元一位。頭盤選了魷魚配玉米蓉,芝麻菜及25年陳年意大利黑醋。魷魚是小幼兒魷魚,嫩軟鲜甜配合芝麻菜的強烈香味又有陳年黑醋的酸,各種味道一層又一層在口腔內打轉,醒胃之餘,令人想起意大利南部地中海的微風。特色海鮮扁意粉。汁醬是用海蝦頭和殼熬制,是這道意粉的靈魂,配合海鲜有蝦、帶子、小鱿魚,令人沐浴於地中海懷裡!唯一美中不足是扁意粉不夠Al Dente!主菜之一是香煎龍脷魚配薰衣草及蔬菜。用的龍脷不是急凍過肉實硬硬的,而是入口溶化,薰衣草獨突的香味提昇魚的鮮味,我幾乎可肯定大廚是來自意大利南部的。另一主菜是牛仔柳釀水牛芝士伴豬面頰配香草,意大利西蘭花及紅酒汁,當我意識到大廚是南部人就知道我不應點這道菜,所謂” 靠海食海” ,這份牛仔肉煮得太老了,失去了牛仔肉的幼嫩,侍應主動上來問我們可滿意食物,只能如實相告,他立即提出為我們更換另一份,這種貼心的服務,實在值得嘉許!甜品包括杏仁慕士配西西里橙片及甘荀雪芭和意大利芝士蛋糕。杏仁慕士配合炸糖漿薄脆一起吃,味道一流,橙片浸過紅酒,甘中帶甜,加上雪芭的清新,像一場意大利三重奏,迷倒不少少女吧!另一道女仕們至愛甜品~Tiramisu~不用多說,沒想到兩支匙羹原本是曲奇脆餅,又可用來作餐具又好吃!一家令人不想再進的酒店內有一家令人一再回味的餐廳,世事往往就是充滿矛盾的!…Read More

澳門朋友介紹文員網球會這家餐廳的焗豬扒飯已經有一年之多,上兩次來澳門也擦身而過,這回來澳門不打算進賭場,不打算觀光,不打算看Show,只為了吃吃吃!第一站專程來到文員網球會。本來被安排了一個靠窗的位置,十分舒適,又適合拍照,可惜之後來了一對男女坐在隔鄰,男的說話聲大如飛機引擎,耳朶受罪,只能避開到較差的位置。豬耳沙律,比較一般!用白醋、橄欖油、蒜、香菜伴豬耳,有點江蘇風味,以想嚐葡國菜特色計,真沒特色。葡式迫牛脷,牛脷夠厚燉得很嫩很軟,紅酒汁和什菜的甜都迫進牛脷去,自己很喜歡,老婆就嫌不夠熱。主角焗豬扒飯來了,是用一個小瓦煲焗的,面層有稠稠的茄汁,豬扒沾上麵包糠炸過,令豬扒更脆,飯也焗得夠香不會太乾,但覺得港式那種用蛋炒飯的會更有味道層次感,另外,豬扒有點薄,口感不足。葡汁焗蔬菜,葡汁椰香足但咖哩不夠,汁不夠濃!澳門有多家葡國餐廳也做得更好的。賣單才MOP240元,以這個價錢,整體計是十分不錯。…Read More

很喜歡看韜韜在TV介紹大陸和東南亞美食,很多菜式也新奇有趣,但他自己開的大榮華...試過元朗也試過九龍灣這間,也不覺得有什麼特式出色的!朋友卻是熟客,在大榮華為我慶祝生日,卻之不恭,今晚他們特意點了特式菜。先來是蒸米鴨,好像韜哥在節目也介紹過,很韌肉"鞋"!豆角炒豬心錠+豬脷+豬天梯,還不錯,但論食材,覺得"信得過"的豬內臟更正,韜哥自己也說食材是No.1重要。菜心穿鷄翼,當中有一條火腿,有點像鳳城的懷舊菜,鷄翼必須半煎香鷄皮才上汁,廚師卻只走油少少就燴,不香不好吃。再來是藥材花雕鷄,花雕夠香,又用了走地鷄,很不錯。但連續兩味鷄,有點怪...禾蟲鱷魚尾湯,用上大量材料集成,據說禾蟲補腎,鱷魚善氣管和肺,味道比預期美味很多,大喝了三碗,是全晚最精彩的一道。大榮華當然會吃本地大烏魚,韜哥已介紹很多次,不用檸檬或什麼配料,就清蒸之。腩的魚油,令醬油面泛起一層黃光,魚脂味濃,正呀!朋友們點了豬油撈飯,但今晚的豬油不是燒豬油,叫人失望!我沒quota吃,不評論!甜品有紫心壽包,餡是紫蕃薯加桂花糖,包皮做得很差,餡太甜,難吃!馬拉糕沒有豬油也沒欖仁,不會好吃!總結下來,這餐比平日的大榮華好吃很多,多謝各位好友。…Read More
