黃色暴雨下去石塘咀食日本拉麵,非常值得。這間品牌是 Tori Mama 的拉麵店,位置隱身於小巷之中,出品卻是頂級。舊日的拉麵店大多主打濃厚的豬骨湯或味噌湯,但近年拉麵風潮回歸精緻與純粹,特別是在東京,清湯底已成為主流。而這間店正是走在這股潮流尖端,一心一意專注於雞湯底的極致演繹。#湯這裡只提供兩款湯底:雞白湯與鹽味雞清湯,兩者皆以雞為基礎,卻呈現出截然不同的風格。兩碗湯都被我們喝清光。雞白湯經過長時間熬煮,再用攪拌棒高速乳化,湯色變成奶白,表層浮現細膩泡沫,濃郁而不膩。碗邊點上一撮柚子鹽醬,吃麵時輕輕拌入,柚子的清香與鹽味提升整體層次,為濃湯注入一絲清新。 相對之下,鹽味雞清湯則輕盈澄澈,加入貝汁,把海鮮的鮮味融入雞湯之中。湯中只以少量鹽調味,口感清爽,餘韻悠長。#麵麵條選用「彩」品牌的中太麵,質感彈牙,最重要的是毫無鹼水味,這點在香港極為難得。主因是廚師會以清水反覆沖洗麵條。客人可選麵條的硬度,包括有硬、適中、和軟三種,還可挑選原味或柚子味版本。原味帶有淡淡小麥香,柚子味則加入日本柚子皮,入口時清香撲鼻,與雞湯相得益彰,為整碗拉麵增添獨特個性。#餸配料方面也毫不馬虎,以唐揚雞胸、低溫慢煮雞腿、豬叉燒和海鮮為主角。唐揚雞胸外酥內嫩,保留肉汁;慢煮雞腿嫩滑,雞皮經炙燒增添香氣;豬叉燒則厚薄適中,油花均勻,入口即化;海鮮則有蜆或蠔。每碗湯麵還配有糖心蛋與紫菜。…Read More

今日天氣實在炎熱,想搵個地方避暑兼醫肚,於是決定去一間最近好多人推介的九州過江龍日式 café。這間餐廳一入去就感覺非常舒服,裝潢走日系簡約風,光線柔和,坐位寬敞,氣氛靜謐,令人一坐低便放鬆心情,特別適合慢慢嘆一頓午餐。午市套餐選擇豐富,有六款主菜,每款 $98 起,已包沙律、餐湯同飲品。當日的餐湯是日式粟米湯,味道清甜順喉,感覺輕盈;普通沙律是新鮮野菜,想升級可以加 $15 換成芒果蝦沙律,配搭鮮甜得黎又夠清新。我點了豚肉生薑燒丼,豚肉煎得香口,生薑醬汁鹹香中帶點微甜,每一口飯都充滿惹味醬汁。先生則選了天婦羅炸蝦蜆烏冬,三隻炸蝦香脆不油膩,蜆肉份量十足,配上清甜的鰹魚湯底,整體感覺清爽又有層次。飲品方面可選咖啡,或加 $15 換成特色梳打。我揀咗長崎琵琶梳打,色彩繽紛,味道酸酸甜甜,清新醒神。真正的亮點,其實是餐後甜品。這間 café 的招牌芭菲系列實在令人驚艷,一共有九款選擇,每款都是 $88,無論賣相或味道都非常出色。先生點了吉士忌廉芒果芭菲,第一眼已經被吸引住了:上層以新鮮芒果片拼成玫瑰花形狀,閃閃發亮的金箔點綴其間,極具視覺享受。芭菲內層有幼滑忌廉、香脆粟米脆片、芒果醬、新鮮芒果肉以及橙肉,層層分明,每一口都有不同口感。我選的是朱古力森林芭菲,感覺就像在食一杯黑森林蛋糕。濃郁朱古力慕絲、軟滑忌廉、鬆軟朱古力蛋糕層層堆疊,夾雜著車厘子醬和糖漬車厘子,甜度控制得剛剛好。…Read More

約了兩個朋友在炮台山一間韓國餐廳吃午飯。店裏乾淨雅潔,溫暖舒服,店員們全都是韓國人,男的女的都是靚仔靚女,笑容親切。前菜先送上來,五小碟:泡菜、辣蘿蔔、魚片、年糕和甜番薯,每一款都做得細緻,味道自然,開胃得很。我們點了燉排骨湯($388),加了一份炒飯($50)。排骨湯一上桌就香氣撲鼻,湯底濃厚,帶點醇甜,完全不辣。店員細心地在桌邊剪碎梅菜乾,再把大塊排骨剪成小件,方便夾起來吃。我們一邊聊天,一邊用手拿著排骨啃,連骨髓也不放過,吃得乾乾淨淨。排骨食完之後,精彩嘅炒飯時間到。店員用剩下湯汁炒飯,加微辣泡菜,炒到香氣四溢,每啖都吸曬湯底精華,超級好味,呢個加炒飯選項,真心不可以錯過。還點了海鮮煎餅($140),一上桌就讓人眼前一亮。不同於平時厚厚一層粉的韓式煎餅,這裏的煎餅以大量韭菜、通菜、大蝦、蝦仁和魷魚為主,麵糰只是薄薄一層,咬下去滿是蔬菜和海鮮的鮮甜,既香又脆。黑芝麻炸雞($98)是另一個驚喜。成碟炸雞黑黑的,賣相平平,但咬進口,芝麻香氣爆發出來,像在吃熱騰騰的芝麻糊,雞肉又嫩滑又多汁。飲品方面,午餐時段只需加$10就可以選汽水、凍檸茶或韓式甜凍咖啡等飲品,我們各自點了不同的飲料,冰涼解渴。…Read More

最近試了間川渝米線店,短短一餐之間,讓我對「米線」的世界有了全新的認識。相比我平時常吃的雲南米線,這間川渝米線不論在味道、配搭、甚至餐廳格局上,都與別不同。一走入餐廳,那種大陸風格濃厚的裝潢會讓人以為自己身處成都街頭。紅色標語、簡體字、甚至牆上的宣傳語都非常「大陸」,不過食物出品相當有驚喜。餐廳還設有自助配菜區,有醃蘿蔔、芫荽、蔥花等,當中的醃蘿蔔清甜爽口無澀味,記得試下。川渝米線來自四川、重慶一帶,顧名思義,它主打的就是那份地道的「麻辣風味」,更強調麻辣、酸香等味覺衝擊。不過,這間店的湯底選擇多達八款——蕃茄、滋補、雞汁、酸湯、藤椒、泡椒、酸菜、火鍋,無論你是否愛吃辣,都可以找到合適的湯底。配菜選擇多到眼花繚亂,如果不知選什麼配菜好的話,這裡的「三仙」配搭更值得一讚,包括鵪鶉蛋、豬膶、豬肉絲等,再加上木耳、蕃茄、韭菜、竹笙、蟲草花,營養豐富又滿足。其中我們試了:- 🏅滋補三仙米線($56):湯底濃郁香甜有輕微當歸味,配料超豐富,半碗都是餸,性價比極高。- 🏅藤椒鮮魚米線($56):麻香十足,魚片滑溜,勁有層次。除了主食,這間小食和飲品選擇也非常有誠意:- 🏅涼拌木棉豆腐($22):超惹味,豆腐索曬味。- 🏅芝士雞扒($30):店員推介,餐牌未上,外脆內爆汁,芝士流心,小心燙嘴!- 🏅炸腐竹片(+$11):脆卜卜,可以乾食,也可以放進米線湯中吸汁。- 🏅冰糖山楂凍(+$10):偏甜,但解膩。- 🏅小吊梨湯(+$10):清甜潤喉,有雪耳,口感豐富。…Read More

今天天氣好得不得了,陽光明媚,我和先生到元朗走走,順便來看看這間新開不夠一年的商場——元點。逛到下午三點才開始找東西吃,看到這間西餐廳還有午市套餐,而且看起來很吸引,記得這是一間連鎖漢堡店,在希慎、啟德、將軍澳等地方都有分店。午市套餐 $98,有五款選擇,主要是漢堡、意粉和全日早餐,還包了餐湯、飲品和甜品。今天的餐湯是甘筍湯,甜品則是紅豆奶凍。我點了全日早餐,內容相當豐富,除了常見的煎蛋、香腸、煙肉、沙律、牛油果和茄汁豆,還有兩塊pancake和一杯乳酪。那杯乳酪特別搶眼,料多到幾乎看不到乳酪本體,上面鋪了滿滿的燕麥、杏仁、紅莓、藍莓和士多啤梨,酸酸甜甜的,味道很好。另一款叫「漁夫之寶」,主角是一塊厚厚的大魚柳,配上紫洋蔥、芝士和生菜,麵包鬆軟,整體味道也很出色。飲品方面,我們加錢轉了100%蘋果汁(+$18)和黑松露蘑菇湯(+$15)。蘋果汁清甜又爽口,蘑菇湯則香濃有層次,兩款都很值得升級。…Read More
