坊間傳聞牛池灣村「新龍城茶樓」將於明年一月結業。由清晨營業到中午的舊式茶樓,在目前的消費模式下,生存是非常困難。希望趕及在結業前再感受一下舊式茶樓的氣氛,品嘗老派款式點心。煎腸粉外皮金黃微脆,內裡依然滑嫩,煎得恰到好處,冇焦味,淋上少許甜豉油,香口又不太鹹和油膩。糯米包與一般糯米雞不同,糯米包用黃皮包着糯米、臘腸、香菇等餡料,蒸得剛剛好。鹹香十足,口感層次豐富。蝦餃皮夠薄但不易破穿,蝦肉爽又彈牙,啖啖蝦甜味在口中迴旋。燒賣燒賣個頭大粒,蝦肉鋪面、豬肉結實,頂部撒上蟹子,賣相吸引。味道偏向傳統風,少少油但唔會太膩。牛肉球牛肉球大粒扎實,蒸汁濃郁,底下墊着腐皮,吸收牛肉精華。入口肉香十足,仲有芫茜提味。…Read More

昨晚與友人走進土瓜灣這家不甚起眼的「高山滷水打冷小店」。沒有華麗的裝潢,只有明亮的燈光、幾張簡樸的桌椅,以及空氣中彌漫的令人食指大動的滷水香氣,這正是地道打冷檔的魅力所在。我們點選四款菜式。1. 滷水鵝例牌:作為打冷的靈魂,這道菜絕對是試金石。鵝肉甫上桌,陣陣滷水香氣飄然而至,是輕輕又不霸道的香。當夾起一塊鵝肉,口感淋淋哋而且軟嫩適中。肉質完全不「柴皮」,咬下去時絲絲纖維,卻又輕易化開。滷水完全滲入肉中,恰到好處,滷水味不會奪走鵝肉的鮮味。鵝皮也處理得宜,帶點膠質,甘香不膩。是水準之上的滷水鵝!2. 韭菜鵝紅:這道菜看似簡單,卻非常考驗火候和調味。鵝紅煮得恰到好處,嫩滑如豆腐,用筷子輕輕一夾就斷開,入口即化,完全沒有令人不快的腥味或過硬的口感。韭菜新鮮翠綠,提供了爽脆的口感和獨特的辛香。鵝紅本身的鮮味和韭菜的清香,開心。3. 潮州煎蠔餅:我最怕吃到油膩厚重的蠔餅,但高山這份絕對令我改觀。蠔餅煎得金黃酥脆,邊緣帶點焦香,咬下去哢嚓作響。關鍵是不油膩,入口香脆,內里卻保持濕潤鬆軟。蠔仔雖然不算碩大無比,但份量足,分布均勻,每一口都能吃到鮮甜的海味,配上魚露蘸汁,更提鮮惹味。是近期吃過最清爽不膩口的蠔餅之一。4. 海蜇手撕雞:這道涼菜是夏日恩物之一。最突出的是雞肉的新鮮度,肉質非常新鮮、緊實,絕非雪藏過久的貨色,能吃出雞的鮮甜味。海蜇頭爽脆彈牙,處理得幹凈無異味。兩者拌上微辣帶麻油香的醬汁,絕對是一道優質的開胃菜。如果你在土瓜灣想找一家地道、實在的打冷小店,嘗嘗溫和醇香的滷水和鑊氣小炒,高山滷水絕對值得一試!…Read More

相信大部分香港人都喜歡叉燒,我和太太也不例外。早前與朋友聚會,話題轉到「叉燒」,兩位分別住在大埔和沙田區不約而同的朋友,大讚大壹燒鵝馬鞍山店的叉燒。我和太太曾光顧大壹燒鵝銅鑼灣店,卻沒有留下半點印象。前陣子經過馬鞍山,剛好是下午6點,想起朋友提到大壹馬鞍山店的叉燒,試試無妨。門外有3個客人等候外賣,店內已8成滿座。我們點了叉燒飯和拔絲咕嚕肉。叉燒飯大約有10件叉燒,甜度剛好、淋淋哋邊邊卻有點點脆,少少肉汁感覺不會乾,與香軟白飯一起放入口,正👍🏻。拔絲咕嚕肉上菜時仍感到鑊氣,輕咬一啖,脆香的外層,咬深一點嘗到肉汁。伴菜是鮮菠蘿片及蕎頭,酸酸哋非常惹味。整體來說,叉燒好味,高於一般水平而矣;拔絲咕嚕肉有少少驚喜,但拔絲的份量再減少一點更好,溫度下跌令大量拔絲黏著,影響味道。…Read More

好友問我有沒有嘗過韓國料理?我曾經吃過,但近年已很少接觸,記憶中韓式燒烤、韓式泡菜炒飯、韓式火鍋是非常美味。他說要帶我去一間韓式料理小店,只一對韓國夫婦經營,與韓國人日常光顧的小店無異。我們興致勃勃離開油麻地地鐵站後,轉入窩打老道,再轉入煙廠街。年中會經過這區十數次,一路上所見所聞都熟悉。行至煙廠街中間,好友停下來,指出面前的店舖便是韓國料理小店。即時有點驚訝,未曾想到這店是韓國料理,下意識是港式小店而矣。店面極之簡單,招牌只簡單寫着「GANG NAM」。踏入店內,左邊放置一張二人枱,右邊有五個貼牆的座位。二人枱後面有一個長形玻璃凍櫃,櫃內有多種蔬菜及腌菜。正中間放有及腰凍櫃,櫃內有豬、牛、雞、牛肋條,客人可以購買已醃製的豬牛雞肉,在家中烹煮。右邊是老闆娘預備食物的開放式廚房。老闆負責落單和準備蔬菜,老闆娘根據客人的要求,從及腰凍櫃取出豬、牛、雞,加入洋蔥炒熟,放在蔬菜上。新鮮炒香的豬肉,加上老闆特色的醬汁,切碎的蔬菜讓每一啖都嘗到蔬菜和豬肉,好味又健康。店內的擺設帶有濃厚韓國人生活的色彩,而且每件物件都有歷史的痕跡,仿如置身韓國的橫街窄巷。從客人和老闆和老闆娘的交談中,感受到街坊小店的自然。老闆十分熟知每位客人的需要,有如家人一樣。午餐以$65的價錢可以吃到6、7種蔬菜和即炒的洋蔥豬肉,配以大碗飯,非常抵食。若當天想吃素食,蔬菜伴飯只需$50,抵食又健康。…Read More

今天以香港仔作為行山完程的地點。隨後在香港仔海濱乘坐街渡到鴨脷洲,登岸後步行數分鐘經過悅海街便可直達港鐵利東站,快捷又方便。在悅海街尋找地方午飯,熾熱的陽光令街上的街人非常少。視線上出現一間店舖,門面簡單寫上「偉諾煮意」,吸引我走進店舖,開放式廚房佔據三分之一的鋪面。用餐的地方有限,只有二張6人枱和一張2人枱。供應的食物與一般小本經營的茶餐廳無異。唯獨中式午餐中,其中之一項時令蒸魚飯引起我的注意。原來每日早上艇家會將部分捕獲的鮮魚交給老闆,當然老闆不會預先知道當天早上會收到甚麼品種的鮮魚。每日早上11點已有街坊光顧蒸魚,售完即止。老闆話有「三蘇」和「芝麻班」,對蒸魚情有獨鍾的我,當然有興趣。兩條魚都是即叫即蒸,師傅控制蒸魚的時間非常到家。少少甜味的豉油不會搶走魚的鮮味,更能提升魚味。配以少許薑絲和三數條蔥條,滿足😌用街坊價嘗到此水準的蒸魚,驚喜😄。…Read More

泰國菜是普遍港人最喜歡的菜式之一,九龍城更是表表者。每區都有不同特色的泰國餐廳,不分南北,必有一間適合你。朋友提到最近太子花園街有一間泰式餐廳開業,隨即在OpenRice搜尋,餐廳「泰聚」位於花園街239號,前身是徐記廚房點心,開業不足一年。OpenRice的食評全部都讚不絕口,抵食、鋪面設計寬敞、款式富有特色等。今晚與家人親自試試😄店舖面積不算特別大,老闆卻利用特高樓底、無柱位的先決條件,營造出極之寬敞的環境。兩張半圓直背梳化特別搶眼,最適合6人邊談邊享用美食。可惜已被其他食客搶先一步😂。先來一客柚子沙律和小食拼盤(小)熱一熱身,酸酸甜甜的柚子沙律是我最愛的泰式前菜。主食選了串燒拼盤(半打),豬牛羊各兩條,雖然口感各有不同,每串都肉香四溢,加少少沙嗲醬,帶出風味。泰式香燒雞(半隻)的肉質嫩滑,但雞皮有點過火,有少少燶味。酸辣青檸鮮魷魚的味道對我來說是辣一點,加上青檸的酸味,蓋過魷魚的味道,只能感受口感。泰式燒豬頸肉是必食,夾起每片都見到外表脆,鮮嫩的肉仍帶少少肉汁,好味😋再點選原個椰青焗飯,每啖飯都帶著少許椰子的甜味,比菠蘿炒飯多點變化。甜品有三色香芒糯米飯和椰汁千層糕(4件)。香芒糯米飯包括有蝶豆花、原味和班蘭三種糯米飯。顏色非常搶眼,味道濃淡控制得好。大眾推介的原個菠蘿沙冰、清潤熱香葉龍眼冰和傳統飲品珍多冰亦是必選的。菠蘿沙冰採用新鮮菠蘿汁製造出來,菠蘿味停留持久一點👍🏻整體來說,「泰聚」性價比很高,值得一試再試。…Read More

在80至90年代,一想到雞粥,大家都會聯想到沙田強記。新鮮嫩滑的雞件,配以軟綿綿的粥底,無論晚飯或消夜,都是不錯的選擇。經歷數十年的歲月,沙田區的變遷很大,強記雞粥變成新強記燒鵝海鮮酒家。今天午餐到新強記吃雞粥,店內有8成枱滿,想必食物質素有一定水準。我們二人食量有限,只能輕食。先點一窩雞粥,再來午市優惠孖寶;煎饟茄子和荳沙煎堆仔,加一隻燒乳鴿,最好不過👍🏻軟綿綿的粥底,每粒米都煲至有如花開,並不是米漿能做到的效果,而且滲入少少雞味。雞件選用10多件雞髀部分,肉質不太嫩滑,但可以接受,雞味濃卻挽回不少印象分數。整體來說,好味😋。燒乳鴿選用中等大小的乳鴿,肉身不會太厚太薄,口感不錯,可惜皮做不到應的脆。溫度方面,咬一啖感受到鴿肉烹製後的餘溫,水準一般。煎饟茄子和荳沙煎堆仔都能做到少鹽少油,味道與一般茶樓無異。…Read More

今晚與太太在沙田新城市廣場第三期,見到一間陌生的店舖「四季芬芳 - 蛇王芬」。在網上看到這間店舖大有來頭,它是屹立於中環超過半世紀的百年老店,蛇羹固然有名,臘味生炒糯米飯也是令人追捧。雖然沙田分店是以全新概念營運,仍保留一些傳統菜式,例如蛇羹和糯米飯。餐牌上的菜式琳琅滿目,非常難於取捨。與其由自己作出選擇,何不試試店舖的2人餐;冬季進補蛇羹糯米飯套餐。套餐包括花膠太史蛇羹2碗、蘿蔔絲酥餅兩個、鹹柑桔生煎包兩個、蛇王芬子薑紅石榴香酥鴨一份、大澳蝦乾家鄉粉絲什菜煲和蛇王芬臘味生炒糯米飯2碗,價錢$499。花膠太史蛇羹,淡淡的蛇肉味、清新的花香,不錯。蘿蔔絲酥餅,蘿蔔絲太濕,酥餅偏淋,油膩感重,失望😌鹹柑桔生煎包,包皮太厚,薄一半會更理想,餡料少了一截😭蛇王芬子薑紅石榴香酥鴨,味道太鹹,鴨肉太乾,紅石榴酸酸甜甜的味道配鴨肉確是不錯,可惜紅石榴內有一粒細核,一不留神會弄痛牙肉。大澳蝦乾家鄉粉絲什菜煲,菇類與菜的比例差不多1比9,蝦乾只有一隻😂,小量粉絲點綴一下。蛇王芬臘味生炒糯米飯,糯米飯一點不覺油膩,啖啖都有臘味,粒粒糯米清晰可見👍🏻…Read More
