到底同牛氣有冇關係呢??

元朗各店清湯腩回憶(冇興趣可以直接睇食評,不過元朗人睇完應該會有共鳴)元朗朋友仔應該對元朗清湯腩嘅歷史有d印象。元朗清湯腩始祖,亦都係我最中意,最難忘嘅彪記,細細個放學同老母去食個陣,格離嘅麻甩佬一定係一個人叫兩碗,一係邊/肥腩米+腩河,一係腩河+淨丸,個個都一定係連湯清哂,同埋就算幾爆場都好,食客同伙記(太子女)都好有默契,嚟到快快手食完交翻張枱,太子女亦會留意有冇客差唔多食完,就幫排緊隊嘅客落定單,預時間交比廚房,所以就算好多人幫襯都唔會等好奈,而呢種食店同食客嘅關係亦都好奈冇遇過。 其後彪記結業,重新裝修後竟然開咗間叫“標記”,傳聞係太子想攞嚟做,但老闆唔想搞壞招牌唔同意重開,所以就用新名開舖。當然真相就無從稽考,一段短時間就永久結業了。但我印象標記同彪記味道相似,而呢種味道同牛氣,賢記我形容係同一派。時間線唔太記得,當時傳麵世家殺出,又係主打新鮮清湯腩,所以我基本上冇住家飯食嘅話就係輪流幫襯佢地,想食炸野就去傳麵食腩米+炸雞翼,想食清d就翻老家標記。其後,元朗得翻傳麵做新鮮清湯腩嘅時候,情況就好似tvb冇咗亞視咁,基本上可以話係越做越x屎。為求公平,我會盡快食多次傳麵再寫食評,希望佢有做翻好啦,不過都9成唔會,因為我後期都隔年挑戰一次,每次都失望而回。元朗清湯腩末落幾年,直到牛氣衝天出現。記得第一次幫襯,入到舖頭立即聞到好濃郁嘅牛清湯香味,帶輕微嘅魚露味。碗爽腩河上到嚟,一定就先飲淡湯㗎啦,係彪記嘅味道。形容一下到底有乜咁特別。湯底第一啖入口會先係好濃嘅“肉香”,而唔係單單“骨香”,或者蘿白味。而因為肉味濃過骨味,令到淡湯飲落,唔會好肥膩同滯口,飲完淡湯鼻腔會回翻一陣淡淡魚露味,整體感覺就係“鮮”。同越南牛骨湯比,輕型清新一啲,冇藥材同蘿白嘅味道干擾,好純粹嘅牛香。腩就睇食咩位置,個人喜好爽>邊>肥>普通腩,未食過嘅朋友可以想像下,爽腩係帶膠質嘅,有一片類似牛筋嘅東西,薄膜咁包裹住牛腩肉,食落表面就啫喱狀,帶點彈性嘅筋膜,咬入去就係軟霖嘅肉。雖然一碗麵60幾蚊有人會覺得貴,但我就覺得老闆好有誠意,湯頭質素高,牛腩份量亦比得好大方,作為一個食譚仔過橋米線都唔飽嘅人,牛氣係餵得飽我嘅。而有幫襯開牛氣嘅人都知,老闆係十分有原則嘅,當日唔夠新鮮腩就唔開門,廚房亦都係佢一人打理,所以外賣基本係1個半鐘等起跳,依家香港又有幾多咁有誠意嘅小店呢?不過雞蛋入面挑骨頭嘅話,我認為有一段時間,牛氣湯頭偏油,明顯見到好多油脂係表面,同埋由送生菜轉蘿白,我覺得令到整體感覺off foc 同heavy, 蘿白味濃會趕走口腔嘅牛肉味,相反生菜係吸盡湯汁,同時輕盈一啲。一般我食清湯腩都會成碗湯飲哂,但因為咁我就唔得啦。後尾雜誌嘅訪問,老闆都澄清係同彪記冇關係嘅。我亦都經歷咗佢由鳳琴街地舖,搬到橫洲工業村專做外賣,再到水車館街(牛氣擎天)重開,再結業,再到賢記出現,真係百感交集。食評第一次食賢記係響舊舖,上手1523西餐嘅位置,入到去有啲驚訝,因為無論餐牌,定價,餐具設計都同牛氣非常相似,而味道亦都係同我上面描述嘅差唔多。唔同嘅係,牛氣辣椒油同彪記相似,蝦乾味道做膽,而賢記辣椒油係好重蒜頭味嘅。前者海味香會提鮮,後者好容易蓋過牛香味。第一次食可能都帶住啲偏見,有比較有傷害,同樣叫邊腩,食落會起渣嘅。 今次係第二次再食,想睇下佢會唔會好似傳麵咁轉用雪貨,都欣賞目前仲堅持緊用新鮮腩。當晚比較夜幫襯,同埋伙記話依家冇得揀部位,咁廚師發辦就更好啦,可以睇清楚餐廳出品水準如何。嚟到靚女話係牛面珠燈嚟,質地偏嫰,都唔錯㗎。如果答到一啲筋膜位嘅話,整碗麵嘅口感就會豐富啲。再讚多點就係賢記同牛氣用嘅河粉質素都相當唔錯,食落唔會碎濕濕,仲帶輕微咬口。…Read More
