嚟到銅鑼灣,試一下一間比較新嘅Omakase - 花貝. 一入到嚟餐廳環境好寬闊,我哋揀咗坐吧枱, 睇著師傅整食物都係一種享受.<Omakase> 1,488刺身 - 帶子, 劍魚腩, 拖羅師傅將每件刺身都切得好厚,帶子鮮甜軟糯,劍魚腩肥美但不油膩,拖羅厚身冇根下酒菜 - 鮟鱇魚肝雖然鮟鱇魚樣子好醜, 但鮟鱇魚肝係一種好好嘅食材, 煮過嘅鮟鱇魚乾口感棉密嫩滑, 味道有d似鵝肝一品料理 - 蟹肉甲羅燒平時甲羅燒只會有少量蟹肉, 今次師傅用左大量蟹肉製作, 配上濃濃嘅蟹膏再加上少少海膽同魚子醬調味, 口感香濃. 而師傅亦都推介我哋將甲羅燒搽左自製米餅上面, 淡淡蟹肉配上香脆米餅口感十分豐富酢物 -雪燕桃膠酸汁伴蠔呢道菜十分清新, 蠔肉十分爽口, 配上酸汁啫喱, 可以為之後嘅壽司先清一清味蕾壽司 - 赤鯥, 鮫鰈, 金線鯛, 金目鯛, 喜之次, 赤身, 中拖食材方面師傅落咗血本, 平時見到比較高級嘅魚種, 喺呢餐都食得到. 而令我最驚喜嘅係今次可以試到被譽為係日本三大魚王之一嘅喜之次. 師傅用咗灸燒嘅方法, 將魚皮中間嘅魚油逼出嚟, 簡直就係視覺嗅覺味覺嘅享受湯 - 魚湯奶白色嘅魚湯配上豆腐同少少冬菇絲, 比較重胡椒味亦都令到整碗湯飲落去唔覺得膩甜品 - 抹茶奶凍&赤肉蜜瓜抹茶奶凍都俾到我一個驚喜, 奶凍分開兩層, 分別係一層牛奶同一層濃濃嘅抹茶, 佢哋mix埋一齊食, 口感細滑. 來自日本嘅赤肉蜜瓜, 味道甜而不膩, 十分清爽. 食完呢兩個甜品之後, 簡直連我第二個胃都填滿埋<花 Hana>1,688刺身 - 帶子, 赤貝, 劍魚腩, 白蝦, 右口魚, 鰤魚, 牡丹蝦, 拖羅刺身新鮮冇腥味而份量好多, 鍾意食刺身嘅人嚟講一定滿足到你.燒物 - 燒大蝦開邊大蝦肉質爽甜配上沙律醬同海膽味道十分濃郁. 而伴碟嘅茄子同菇燒完仍然能夠保持水份十分高質炸物 - 天婦羅食過咁多次日本嘢第一次見師傅會用海膽嚟製作天婦羅, 師傅將紫菜紫蘇葉包住海膽為輕輕沾上天婦羅粉嚟炸, 外脆內軟十分特別. 煮物 - 清酒煮蜆大大粒蜆肉十分飽滿冇沙, 再加上粉絲墊底, 粉絲吸滿咗蜆肉嘅甜味超級好食主食 - 海膽丼海膽份量好足, 作為一個結尾十分滿足湯 - 魚湯甜品 - 抹茶奶凍&赤肉蜜瓜…Read More
