幫襯潮樂園已一段時間,眼見這店食物不斷進步並開設了分店,上星期收到老闆whatsapp告知小菜部已開始運作便到來一試。小菜部供應的是正宗潮州菜式,看出潮樂園堅持宗旨,全心走潮州菜路線,這點我十分欣賞。看完menu二話不說便點了羊腩煲,胡椒豬肚湯和糖醋麵。潮樂園賣的是正宗潮州羊腩煲,跟坊間一般的雙冬羊腩煲味道上有點不同,吃得出是較少南乳和多了很多配料的分別。吃了一口羊肉,出奇地入味及鬆化,加上特製湯底,我們三個人不甪10分鐘便幹掉半煲,好吃與否不用多說吧。胡椒豬肚湯我喝過不下數十次,很多食店都是預先煮好一大煱,食客落單時拿出來弄熱便算。潮樂園這豬肚湯是即叫即做,加上魚骨豬骨湯底,喝下去鮮美十足,喉嚨微燙的感覺十分過癮,可以說是我喝過最好之一。糖醋麵用的是正宗潮州伊麵,需時15分鐘製作,不要少看這道功夫菜,吃下去完全食得出是用心製作。麵用上湯燴過,再甪慢火煎至表面香脆,上碟看起來要有少少起膠,夠”令”身才合格。這糖醋麵的質素跟我以前在金島食過的不分上下,必試之選。最後來了反沙芋,一道越來越少食店肯做和只有老師傅才懂得做的甜品。這甜品和糖醋麵一樣,需時15分鐘製作。上碟時熱辣辣,芋頭夠粉,白糖厚薄剛好,我一口氣吃了4件,為這滿足的一餐劃上句號。…Read More

誤信食評,失望的一餐

本人一向不寫食評,也不太相信繕稿,但今次真的不吐不快。家住天后的我,久不久會和家人到北角用膳。身為潮州人,打冷是我們首選。近來我們常到北角和富道的XXX,因為味道正宗,開業才幾個月已打出名堂,經常要排隊。昨晚我們如常七點多到達但也要等位,於是家人提議到新開的太平飯店試試,據聞是前阿鴻小吃的廚師主理,看Openrice的食評也很好,決定一試。到達太平已八時,其門如市,差不多九成滿座,心想一定好吃吧。看看menu,價錢也不便宜,看到有幾款 gimmick的菜式,如糖心蛋,冰鎮鮑魚,火焰醉蝦等等,但我們還是鍾情潮州菜,於是點了凍烏頭魚,鵝片墨魚大腸三拼,蠔仔粥和糖醋麵。首先來凍烏頭,咦? 點解唔見舊大魚油? 雖知大魚油係凍烏頭靈魂,條魚滑唔滑就係靠舊魚油,試了一口已發覺唔妥,條魚蒸得太熟,魚肉唔滑仲有d鞋,最失敗係有泥味,這是不是潮州菜?點食?鵝片墨魚大腸三拼,擺碟跟阿鴻有八成相似,看看味道有沒有阿鴻的水準吧。首先試試滷水,好甜,係加咗好多糖嗰種甜,仲甜過阿鴻,唔係潮州滷水味道,香料味好重,似港式燒味滷水多啲。試一口鵝片,好淋,得個淋字,鵝香不夠,點埋甜嘅滷水根本食唔出鵝味。試大腸,太平用多層大腸,即係街邊炸大腸嗰種。老實說,潮州打冷係唔會用呢款大腸,試了一口,好韌又唔入味。再試墨魚,唔明白點解墨魚要切到跟鵝片一樣大,食落唔夠爽口,太著重賣相而忽略了食物的味道,跟阿鴻小吃相差實在太遠,到此心已不悅。蠔仔粥,好杰,好咸,仲帶少許腥味,不能接受的是粥底係廣東style而不是潮州style。蠔仔粥並不是一道簡單的菜式,工夫不夠會好難食,獻醜不如藏拙,算吧。糖醋麵,不過不失,這是一道自己也可以做的菜,也是全晚最好的。總括來說,太平的味道並不太差。但就我個人來說,絕對不像食評般好吃,尤其對潮州人來說,甜滷水 + 廣東style蠔仔粥,味道一點也不正宗。食店賣廣告無可厚非,但誇張失實誤導客人就不能接受。這樣怎會有回頭客呢?我便是其中一個。…Read More
